CHRISTMAS PUDDING BLISS BALLS
Delicious Christmas inspired bliss balls. All the flavours of Christmas and so easy.

- Soak dates in cup of hot water In a food processor add the fruit mix, almonds, orange juice, orange zest, cocoa and coconut and blitz until resembles coarse crumbs. Spoon out the dates from the hot water and add to the food processor and blitz until the mixture begins to come together. Add the almond essence and mix well, taste and see if you wish to add more essence, if not binding enough you can use more orange juice until it is sticky & firm enough to be rolled into balls Roll into teaspoon sized balls and refrigerate for 30 minutes Melt the white chocolate in the microwave in 20 second bursts until completely melted. Drizzle a little over each bliss ball, add sprinkles, chopped cranberries, choc chips or freeze dried raspberries over the top before the chocolate sets. Refrigerate or freeze until needed.
TRADITIONAL CHRISTMAS CHEESE BALL
I look forward to this simple, traditional cheese ball every year. It has been served during family Christmas Eve parties since before my time. The ingredients are few and inexpensive, and might be made year-round, but I reserve this one special appetizer for the holidays only to maintain its specialness. I love to serve Ritz crackers with the cheese ball to bring out its savory flavor.

- Mix the cream cheese, beef, olives, onion, and Worcestershire sauce together in a bowl until evenly blended. Keeping the mixture in the bowl, scrape it into a semi-ball shape. Cover, and refrigerate until firm, at least 2 hours.
- Place a large sheet of waxed paper on a flat surface. Sprinkle with walnuts. Roll the cheese ball in the walnuts until completely covered. Transfer the cheese ball to a serving plate, or rewrap with waxed paper and refrigerate until needed.

- In a large bowl, combine first five ingredients. Add beef; mix lightly but thoroughly. Shape into 1-in. balls., Place a third of the meatballs on a microwave-safe plate. Cover with waxed paper; microwave on high until cooked through, 2-3 minutes. Drain on paper towels. Repeat twice with remaining meatballs., In a 2-qt. microwave-safe dish, mix sauce ingredients. Microwave, covered, on high until heated through, 3-4 minutes, stirring halfway. Gently stir in meatballs. Microwave, covered, on high until heated through, 1-2 minutes.

CHRISTMAS RUM BALLS(OR BOURBON BALLS)
These balls are so quick and easy to make. They make a nice addition to the baked goodies that you give as gifts. Make these about a week before you want to serve them as they mellow and the sharp strong alcohol taste blends in more with the other ingredients. Store in a tin with a tight lid. This year I couldn't find the Vanilla wafers so I used chocolate and I like them even more. To form the balls I use two teaspoons as the dough is quite moist. I store them in the freezer - they don't go hard and they are so good ice cold

- The cheese ball coatings may be prepared ahead of time or just before assembling the cheese balls. Toast the pecans by spreading them out on a sheet pan and baking in a preheated 350°F oven until lightly toasted and fragrant, for 8 to 10 minutes. Allow pecans to cool and finely chop them. Seed the pomegranate (see Tips & Tricks below) and set aside. Finely mince 1/4 cup fresh dill (make sure it's washed and very well dried) and refrigerate in a baggie until ready to use.
