1 lb ground beef
2 carrots, grated
1 yellow onion, grated
2 eggs
¼ cup ketchup
1 cup breadcrumb
1 cup grated parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 teaspoon salt
½ teaspoon pepper
2 russet potatoes, peeled and cubed
1 teaspoon salt
1 tablespoon butter
½ cup milk
fresh parsley, for topping

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, mix together the meatloaf ingredients.
  • Line a muffin tin with cupcake liners.
  • Fill the muffin liners with the meatloaf mixture and pat down to form a dome.
  • Bake meatloaf cupcakes for 25-30 minutes or until cooked through.
  • In a saucepan over medium heat, add the potatoes, water to cover the potatoes, and salt.
  • Bring potatoes to a boil, then reduce the heat and cover.
  • Simmer for 15-20 minutes or until potatoes are fork-tender.
  • Drain the water and add in the butter and milk.
  • Mash the potatoes with a fork until smooth.
  • Fill a ziplock bag with the mashed potatoes.
  • Pipe the potatoes onto each meatloaf cupcake to resemble frosting.
  • Sprinkle with parsley.
  • Enjoy!

1 cup crushed saltine crackers
½ cup chopped onion
½ cup chopped green bell pepper
⅓ cup milk
1 egg
1 tablespoon Worcestershire sauce
2 cloves garlic, chopped
1 teaspoon ground black pepper
1 teaspoon seasoned salt
½ cup ketchup
½ cup brown sugar
4 cups mashed potatoes
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, saltine crackers, onion, green bell pepper, milk, egg, Worcestershire sauce, garlic, black pepper, and seasoned salt together in a bowl.
  • Stir ketchup and brown sugar together in a bowl. Spoon ketchup mixture into the bottom of each muffin cup of a 6-cup muffin tin.
  • Fill muffin cups with beef mixture, leaving 1/2-inch space on the top.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain fat from muffin cups.
  • Top each 'cupcake' with mashed potatoes and Cheddar cheese.
  • Continue baking until cheese is melted, about 10 minutes.

2 cups milk, divided
3 tablespoons olive oil, divided
1/2 onion, diced
2 lbs ground beef
1 egg
1 tablespoon fresh thyme, stems removed
1 1/2 cups cups Italian parsley, diced, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon freshly grated nutmeg
1/4 cup ketchup
4 russet potatoes, peeled and cut into 1-inch pieces
1/4 lb butter
1 cup half-and-half
1 beet, roasted (optional)
1 bunch fresh parsley, stemmed and finely minced (optional)
1 cup indian fennel candy (optional)
cooking spray

Steps:

  • Place bread in a bowl.
  • Add 2 cups milk and toss with bread. Reserve.
  • In a sauté pan over medium high heat, add 2 tablespoons oil and sauté onions for approximately 4 minutes, or until they become translucent. Reserve.
  • In a large bowl, use your hands to mix hamburger, eggs, thyme, parsley, salt, pepper, nutmeg, soaked bread, onions and ketchup.
  • Set cupcake liners in a muffin tin, spray, and fill with meatloaf mixture.
  • Smooth tops so that they are flat.
  • Bake for 3/4 hours, or until fully cooked.
  • Boil potatoes in a large pot of water until tender to the touch of a fork.
  • Drain water and mash with butter and half and half. Mash until smooth.
  • If coloring potatoes, divide mashed potatoes into 2 separate bowls. Add 1 tablespoon grated beet to one batch and all the parsley to the other.
  • Blend until you have a batch of pink and a batch of green potatoes.
  • When meatloaf is done, "ice" half with pink and half with green mashed potatoes.
  • Sprinkle with Indian fennel candies and serve immediately.

1 pouch Betty Crocker® roasted garlic mashed potatoes (from 6.6-oz box)
Water, butter and milk called for on potato box for 1 pouch
½ cup shredded Cheddar cheese (2 oz)
Meat Loaf Mixture:
1 lb extra-lean (at least 90%) ground beef
¼ cup Progresso® Italian style bread crumbs
2 tablespoons chopped onion
2 tablespoons milk
¼ teaspoon pepper
1 egg
Sauce:
½ cup ketchup
1 tablespoon packed brown sugar
2 teaspoons ground mustard
½ teaspoon ground nutmeg
Chopped fresh parsley, if desired

Steps:

  • 1.) Heat oven to 375°F. Place foil baking cup in each of 12 regular-size muffin cups.
  • 2). In 2-quart saucepan, make 1 pouch potatoes as directed on box. Stir in cheese. Set aside.
  • 3.) In large bowl, mix meat loaf mixture ingredients. Press about 3 tablespoons meat mixture in each muffin cup.
  • 4.) In small bowl, mix all sauce ingredients except parsley. Spread about 2 teaspoons sauce over meat loaf mixture in each muffin cup. Place potato mixture in decorating bag fitted with #847 or desired tip. Pipe potatoes on cupcakes.
  • 5.) Bake 14 to 16 minutes or until meat thermometer inserted in center of cupcake reads 160°F. Sprinkle with parsley; serve immediately.
  • * Skip the homemade sauce and just use, ketchup or barbecue sauce.
  • * Skip the potato piping. Just spoon the potatoes over the sauce.
  • * Make sure to use extra-lean ground beef so there is less fat in foil baking cups after baking.

1 pound lean ground beef
1 1/4 pounds ground pork
1 (5.29-ounce) box Garlic Herb Shake and Bake (recommended: Kraft)
1 (1.1-ounce) envelope Beefy Onion Soup Mix (recommended: Lipton)
1 (4.5-ounce) jar Sliced Mushrooms, drained (recommended: Green Giant)
1 egg
1 (12-ounce) can condensed Cheddar soup, divided
1/2 cup evaporated milk
1 (10-ounce) can condensed cream of mushroom soup
1 onion, sliced thin
1 (8-ounce) package sliced fresh mushrooms

Steps:

  • Place potatoes in the bottom of a 5-quart slow cooker.
  • In a large bowl, combine ground beef, ground pork, shake and bake, onion soup mix, sliced jarred mushrooms, and egg. Set aside.
  • In a small bowl, stir together 1/2 cup Cheddar soup and evaporated milk. Add to meat mixture. Using a wooden spoon or clean hands mix thoroughly and form into a loaf. Place in slow cooker on top of the potatoes. Make sure meatloaf does not touch the sides of the slow cooker.
  • Stir together remaining cheddar soup with cream of mushroom soup. Pour over meatloaf. Top with onions and sliced fresh mushrooms.
  • Cover and cook on HIGH setting for 1 hour. Reduce the temperature to LOW setting and cook for an additional 5 to 6 hours.

1 cup Progresso™ panko crispy bread crumbs
1 small red onion, finely chopped

2/3 cup ketchup
2 teaspoons Worcestershire sauce
Salt and pepper
6 large potatoes, peeled, cubed
1/4 cup herb butter
1/4 to 1/2 cup milk
Salt and pepper

Steps:

  • Heat oven to 350°F. Spray 18 regular-size muffin cups with cooking spray.
  • In large bowl, mix Meatloaf ingredients until well combined. Divide mixture evenly among muffin cups, pressing mixture down firmly.
  • Bake 35 to 40 minutes or until meat thermometer inserted in center of loaves reads 160°F. Cool slightly in muffin cups.
  • While loaves are baking, in 3-quart saucepan, place potatoes in generously salted cold water. Heat to boiling. Reduce heat; cook potatoes until fork-tender. Drain; return to saucepan.   • Place potatoes in 10-inch decorating bag without tip. Starting at outside of loaf and in circular motion, pipe potatoes onto each meatloaf. If desired, garnish with additional parsley. Remove from muffin cups.

¼ cup mustard

2 tablespoons malt vinegar
1 (1.25 ounce) packet meatloaf seasoning mix
1 tablespoon salt
1 tablespoon garlic powder

5 pounds ground beef, broken into small chunks
2 pounds sausage, broken into small chunks
1 cup bread crumbs, or more as needed
2 tablespoons barbeque glaze (such as Jack Daniel's®)
2 tablespoons barbeque sauce
2 tablespoons mustard
2 tablespoons ketchup
1 teaspoon Worcestershire sauce

Steps:

  • Mix salsa, eggs, onion, 1/4 cup barbeque sauce, 1/4 cup mustard, 1/4 cup ketchup, Parmesan cheese, sriracha sauce, soy sauce, malt vinegar, meatloaf seasoning mix, salt, garlic powder, and black pepper together in a large bowl. Stir beef and sausage into salsa mixture until thoroughly mixed. Add enough bread crumbs to bring meatloaf mixture together.
  • Line a container with plastic wrap. Pack meatloaf mixture into the container. Chill until set, 3 to 4 hours.
  • Preheat smoker to 250 degrees F (121 degrees C) according to manufacturer's directions.
  • Line a wire rack with aluminum foil. Position in a cake pan lined with aluminum foil. Use plastic wrap to lift meatloaf onto the prepared wire rack.
  • Smoke meatloaf until no longer pink in the center, about 3 hours.
  • Combine barbeque glaze, 2 tablespoons barbeque sauce, 2 tablespoons mustard, 2 tablespoons ketchup, and Worcestershire sauce in a small bowl. Baste meatloaf with topping.
  • Continue smoking until an instant-read thermometer inserted into the center reads 185 degrees F (85 degrees C), 1 to 2 hours more.

3 large marshmallows, cut in half
2 tablespoons milk chocolate chips
1/2 teaspoon cinnamon sugar, mixture

Steps:

  • Generously coat a medium skillet with vegetable spray and heat it over medium heat.
  • Place a tortilla in the skillet, then sprinkle the marshmallow halves and the chocolate chips evenly over it.
  • Top with the second tortilla and spray it with vegetable spray as well.
  • Cook the tortilla stack for 1-2 minutes or until lightly browned, then carefully flip it and cook on the other side for an additional 1-2 minutes.
  • Remove the tortillas to a cutting board, sprinkle the cinnamon sugar over the top, then cut the s-more into quarters.
  • Makes 4 S'Mores.
