2 tablespoons unsalted butter
1 leek, white and pale-green parts only, halved lengthwise, thinly sliced, and rinsed well
1 red onion, quartered and thinly sliced
Coarse salt and freshly ground white pepper
3 small Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
2 carrots, halved lengthwise and thinly sliced
6 cups store-bought low-sodium fish stock or Lucinda Scala Quinn's Homemade Fish Stock
12 ounces skinless salmon, cut into 3/4-inch cubes
1/2 cup heavy cream
1 tablespoon chopped fresh dill

Steps:

  • Heat butter in a medium stockpot over medium-low heat. Cook leek and red onion until soft, 6 to 8 minutes. Season with 1 teaspoon salt. Stir in potatoes and carrots. Add stock and bring to a boil. Reduce heat to low and simmer until potatoes are almost tender, 6 to 8 minutes.
  • Add salmon and simmer until opaque, about 3 minutes. Stir in cream to heat through. Stir in dill, 1/2 teaspoon salt, and 1/4 teaspoon white pepper. Chowder can be refrigerated for up to 2 days. Reheat before serving.

  • Stir in salmon, evaporated milk, corn, and cheese. Cook until heated through.

1 garlic clove, minced
3 tablespoons butter

1/4 to 3/4 teaspoon dill weed

  • Drain and Flake the salmon, Remove bones and skin. Reserve liquid

1 cup water
2 cups whole milk
1 pound skinless salmon fillet, trimmed of dark flesh, then cut into 1-inch pieces
2 tablespoons chopped fresh dill
1 tablespoon unsalted butter

Steps:

  • Cook bacon in a 3-quart heavy saucepan over moderate heat, stirring frequently, until crisp, then transfer to paper towels to drain. Pour off all but 2 tablespoons fat from saucepan, then add onion, celery, potatoes, salt, and pepper and cook, stirring occasionally, until onion is softened, 5 to 7 minutes. Stir in water and bring to a boil, then reduce heat and simmer, covered, until potatoes are almost tender, about 10 minutes.
  • Add milk and simmer, uncovered, until potatoes are tender, 4 to 5 minutes. Stir in salmon, dill, and butter and simmer gently until salmon is just cooked through, 3 to 4 minutes. Serve sprinkled with bacon.

This is a recipe I got from my Mother-in-Law. I was at first put off by the fennel, I don't particularly like the taste of anise, but it adds such a pleasant, unique flavor that I'd have really done myself a disservice had I not expanded my palate's horizons. This is now one of my all time favorite soups.

2 tablespoons butter
1 onion, finely chopped
1 leek, finely chopped
1 small fennel bulb, finely chopped
1/4 cup flour
7 cups chicken stock or 7 cups vegetable stock
2 medium potatoes, cut into 1/2 in. cubes
1 lb salmon fillet, skinned and cut into cubes
3/4 cup milk
3/4 cup cream
1 ounce fresh dill, chopped
sea salt
cracked pepper

Steps:

  • Melt the butter in a soup pot. Add the fennel, onion and leek and cook until softened, about 6 minutes.
  • Stir in the flour. Reduce the heat and cook for about 3 minutes.
  • Add the stock and potatoes. Season to taste with salt and pepper.
  • Bring to a boil, reduce heat and cover simmering gently for about 20 minutes or until potatoes are tender
  • Add cubed salmon fillet and simmer gently for 3-5 minutes until salmon is just cooked.
  • Stir the milk, cream and chopped dill into the contents in the pan.
  • Cook until just warmed through, stirring occasionally, but do not allow to boil.
  • Adjust seasoning to taste and ladle into warmed soup bowls to serve.
  • Cook's Note: I usually purchase one of those plastic clamshell containers of dill in the grocery store and use the entire thing.
  • Also, this soup is fantastic the next day too if you don't eat it all the day you prepare -- though I can't imagine too many leftovers!

3 cups fish or vegetable stock
1 cup half-and-half, plus 1 tablespoon for garnish

1 pound wild salmon, cut into about 2-inch pieces

Steps:

1 Turkish or 1/2 California bay leaf
1/8 teaspoon dried hot red-pepper flakes
3 cups whole milk
2/3 cup heavy cream
1 (1 1/2-pound) piece salmon fillet (preferably wild), skin discarded and fish cut into 1-inch pieces
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons fresh lemon juice
Garnish: chopped fresh chives

Steps:

  • Cut potatoes into 1/2-inch cubes, then cook in a 1- to 1 1/2-quart heavy saucepan of boiling salted water until just tender, 8 to 10 minutes. Drain in a colander and set aside.
  • Cook bacon in a 5-quart heavy pot over moderate heat, stirring occasionally, until crisp, about 8 minutes. Transfer with a slotted spoon to paper towels to drain. Pour off all but 2 tablespoons fat from pot, then cook scallions, corn, garlic, thyme, bay leaf, and red-pepper flakes in fat in pot over moderately low heat, stirring occasionally, until scallions are tender, about 5 minutes. Add milk and cream and bring just to a boil. 1 tablespoon vegetable oil
1 cup chopped onion
1 cup diced celery
1 (16 ounce) can salmon, drained and flaked, juice reserved
2 cups chicken broth
1 cup diced potatoes
1 cup sliced carrots
1 ½ teaspoons seasoned salt
1 (14 ounce) can cream-style corn
1 (13 ounce) can evaporated milk
½ cup diced zucchini

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion and celery; cook and stir until onion is translucent, about 5 minutes.
  • Stir salmon, reserved juice, chicken broth, potatoes, carrots, and salt into the saucepan. Bring to a simmer, stirring frequently, about 10 minutes. Cover and simmer, about 10 minutes more.
  • Stir zucchini into the saucepan; simmer for 5 minutes. Pour in cream-style corn and milk; cook until heated through, 5 to 10 minutes.

2 tablespoons butter or margarine
2 medium leeks, sliced (2 1/2 cups)
2 cups frozen southern-style hash-brown potatoes (from 32-oz bag)
2 cups frozen corn
1 cup water
3 cups fat-free (skim) milk
1/4 cup all-purpose flour
1 can (14 1/2 oz) salmon, drained, bones and skin removed and flaked
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
Chopped fresh parsley, if desired

Steps:

  • In 3-quart saucepan, melt butter over medium heat. Add leeks; cook and stir 5 to 7 minutes or until crisp-tender. Add frozen potatoes, corn and water; mix well. Heat to boiling. Reduce heat to low; cover and simmer 5 to 7 minutes, stirring occasionally, until vegetables are tender.
  • In small bowl, stir together milk and flour until smooth. Add to vegetable mixture; cook and stir until mixture boils and thickens.
  • Stir in salmon, Worcestershire sauce, salt and pepper. Cook until hot. Sprinkle each serving with parsley.

1 lb fresh salmon fillet, skin removed, bones removed
1 tablespoon cooking oil
2 cups chopped carrots
1 cup chopped onion
1/2 cup chopped red pepper
1/2 cup chopped celery
1 1/2 cups water
4 cups low sodium chicken broth
2 1/2 cups cubed red potatoes
1 cup corn kernel
2 cups milk
2 tablespoons cornstarch
2 teaspoons dill
1 pinch salt, to taste

Steps:

  • Rinse fresh salmon; pat dry. Set aside. In a large saucepan heat oil over medium-high heat. Cook carrots, onion, pepper, and celery in hot oil about 10 minutes or until the vegetables are tender.
  • To poach salmon, bring water to a boil in a large skillet. Add salmon. Return to boil, reduce heat. Simmer, covered, for 6 to 8 minutes or until salmon flakes easily with a fork. Remove salmon from skillet, discarding liquid. Flake salmon into 1/2-inch pieces; set aside.
  • Stir the broth, potatoes, corn, dill, and salt into vegetables in saucepan. Bring to boiling; reduce heat. Cook, covered, over medium-low heat about 15 minutes or until the potatoes are tender, stirring occasionally.
  • Stir together 1/2 cup of the milk and cornstarch. Add milk mixture to saucepan. Stir in remaining milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Gently stir in poached salmon or canned salmon. Heat through.

1 (7 1/2 ounce) can salmon, reserve half of the liquid
2 teaspoons soft margarine
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped sweet green pepper (optional)
1 clove garlic, minced
3 cups diced potatoes
1 cup diced carrot
1 cup chicken stock
1 cup water
1/2 teaspoon pepper
1 cup zucchini (optional)
1 cup 2% evaporated milk
1 cup cream-style corn

Steps:

  • Drain& flake salmon, reserving liquid.
  • In a large nonstick sauce pan, melt margarine over medium heat.
  • Cook onion, celery, green pepper& garlic, stirring often for 5 minutes or until vegetables are tender.
  • Add potatoes, carrots, chicken stock, water and pepper.
  • Bring to a boil.
  • Reduce heat, cover& simmer 20 minutes or until vegetables are tender.
  • Add salmon, reserved liquid, evaporated milk and corn.
  • May add more pepper to taste.
  • Heat through and serve.
