Quick Poached Salmon with Dill Mustard Sauce image

This is an easy, elegant, wonderful salmon dish with a no-cook sauce. It really doesn't get much easier. I love it best on swelteringly hot summer days. Fresh steamed asparagus goes very well with this, and the sauce tastes good on it as well.

½ cup plain yogurt
¼ cup Dijon mustard
1 tablespoon honey
¼ cup fresh lemon juice
3 tablespoons chopped fresh dill
1 pound salmon
1 cup white wine
½ cup water
¼ cup chopped shallots

Steps:

  • In a small bowl, blend the plain yogurt, Dijon mustard, honey, lemon juice, and dill. Cover, and refrigerate until serving.
  • In a medium saucepan over medium heat, place the salmon in the white wine and water. Adjust the amount of water as necessary to just cover the fish. Sprinkle with shallots. Cover the saucepan, and cook 10 to 12 minutes, until salmon is easily flaked with a fork. Drain, and serve with the yogurt sauce.

Cold Poached Salmon With Dill Mustard Sauce image

The centerpiece of a summer solstice menu created in 2005 for The Times, this dish alludes to gravlax - the Scandinavian dish of cured salmon - with the spices used to poach the salmon and the sweet mustard sauce. The cooking technique here yields the most tender flesh you may ever encounter with salmon.

1 small bunch fresh dill
1 whole salmon (wild, if possible), about 6 pounds, cleaned and scaled (or substitute a center-cut section of a larger salmon)
1 tablespoon salt
2 tablespoons sugar
2 teaspoons yellow mustard seeds
1 teaspoon black peppercorns
1 onion, peeled and quartered
3 tablespoons Dijon mustard
2 tablespoons light brown sugar
1 cup sour cream
3 tablespoons white wine vinegar
3 tablespoons chopped dill
1/2 teaspoon salt, or as needed
1 generous bunch dill
2 lemons, cut into wedges

Steps:

  • To poach salmon, begin by placing the small bunch of dill inside cavity of the salmon, and put salmon in a fish poacher or a large roasting pan. (If necessary remove head to fit salmon in pan.) Cover with water, and add salt, sugar, mustard seeds, peppercorns and onion. Place over high heat, and bring to a boil. Turn salmon over, and cook 10 minutes. Turn off heat, and let salmon cool in water for about an hour.
  • To make sauce, whisk together the mustard and brown sugar in a small pitcher. Add sour cream and vinegar, and whisk until smooth. Mix in the chopped dill, and season with salt. Cover, and refrigerate until serving.
  • To serve, remove salmon from poaching liquid and lay on large sheet of parchment or waxed paper. Remove skin from top, gently peeling it away, along with fins. Carefully lift top layer of salmon in one long fillet, removing it from backbone and transferring it to a large platter.
  • Lift backbone off fish in one piece, and pick out any other visible bones. Turn fish over, and remove skin as before. Then place second fillet alongside the first on platter. Arrange leafy sprigs of dill between fillets, and drizzle sauce on top. Scatter lemon wedges around edges of plate. Pass pitcher of sauce separately.

1 1/2 cups mayonnaise (I like Hellmans)
3/4 cup sour cream
1/2 cup Dijon mustard (use honey mustard if you like a touch of sweetness) or 1/2 cup honey mustard (use honey mustard if you like a touch of sweetness)
1/3 cup chopped fresh dill, plus
whole dill sprigs (to garnish)
2 tablespoons lemon juice (to taste)
1/2 teaspoon finely grated lemon zest
1/2 teaspoon coarse salt (to taste)
1/2 teaspoon black pepper (to taste)

Steps:

  • Place all the ingredients in a nonreactive mixing bowl and whisk to mix. Taste for seasoning, adding lemon juice, salt, and pepper as necessary. Serve the sauce in a bowl or in individual ramekins, garnished with dill sprigs.

4 (4 ounce) fillets salmon
salt and freshly ground black pepper to taste
1 ½ tablespoons lemon juice, divided
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon Dijon mustard
1 tablespoon chopped fresh dill
¾ cup heavy whipping cream, or to taste

Steps:

  • Season salmon with salt and pepper and sprinkle with some of the lemon juice.
  • Heat a large skillet over medium-high heat. Melt butter and oil together in the hot skillet. Add salmon; pan-fry for 3 minutes. Flip and cook until salmon is almost cooked through, 3 to 5 minutes.

2 lbs salmon fillets, from the middle of the fish
3 tablespoons sea salt
1 tablespoon fine salt
3 tablespoons caster sugar
1/3 cup dried fennel
1/3 cup dried dill
10 whole white peppercorns, coarsely ground
2 tablespoons Dijon mustard
2 tablespoons ordinary mustard
2 tablespoons white wine vinegar
6 1/2 ounces oil
salt
white pepper

Steps:

  • Remove all the bones from the salmon fillet. Mix the salts and the sugar in one bowl and the fennel and dill in a separate bowl. Place the fish in a salting dish, skin side down. Rub the fish all over with the sugar salt mixture. Add the coarsely ground white peppercorns and cover the whole fillet with the fennel-dill mixture. Marinate in the refrigerator for 24 hours.
  • Put the mustards and the sugar in a bowl and mix well. Add the white wine vinegar and whisk in the oil, a few drops at a time. Season to taste with salt and white pepper.
  • Remove the fillet from the cold just before serving. Leave the herbs on the surface of the fish. Cut the seasoned fillet diagonally into narrow strips.
  • Serve with the mustard sauce.

We love the San Sebastian Winery in St. Augustine, Florida and try to attend tastings at least once or twice a year. This is a recipe they sent in an email that they have for their Reserva white wine. *NOTE* I made this using 12 drumsticks and they took about 15 minutes to brown in a jumbo frying pan. I used a Chardonnay wine and substituted one tablespoon dried, chopped dill for the fresh dill which resulted in a flavorful but not overwhelming sauce. It was delicious!

1/4 cup flour
1/2 teaspoon salt, divided
1/2 teaspoon black pepper, divided
4 whole chicken legs
3 tablespoons vegetable oil
3/4 cup shallot, chopped (2 large)
1 cup dry white wine
1 cup chicken broth
2 teaspoons coarse grain mustard
1/4 cup fresh dill, chopped

Steps:

  • Whisk together flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a shallow bowl.
  • Pat chicken dry, then dredge legs, one at a time, in flour, shaking off excess. Transfer to a sheet of wax paper, arranging chicken in 1 layer.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, skin sides down first, turning over once, 6 to 8 minutes total.
  • Transfer chicken to a plate, then pour off all but 1 tablespoon fat from skillet.
  • Add shallots to skillet and sauté, stirring occasionally, until golden brown, 2 to 3 minutes.
  • Add wine and deglaze skillet by boiling, stirring and scraping up brown bits.
  • Add broth, mustard, and remaining 1/4 teaspoon salt and pepper.
  • Bring to a simmer, then return chicken to skillet, skin sides up, along with any juices from plate, and cook over moderate heat, covered, until chicken is cooked through, about 25 minutes.
  • Transfer chicken to a platter and boil sauce until reduced to about 1 cup and slightly thickened, 3 to 5 minutes.
  • Remove from heat and stir in dill, then pour sauce over chicken.
  • Serve with seasonal vegetables and a glass of San Sebastian Reserva or your favorite dry white wine.
