SALMON STEAKS WITH RED-WINE BUTTER
Steps:
- Combine wine, shallots, juice, vinegar, tomato paste, and bay leaf in a 1- to 2-quart heavy saucepan and boil over moderately high heat until mixture is thick and jamlike and reduced to about 1/3 cup, about 20 minutes. Discard bay leaf. Transfer mixture to a small bowl set in a bowl of ice and cold water and stir until cold to the touch, about 5 minutes. Remove from ice water and stir in zest, butter, 1/4 teaspoon salt, and 1/8 teaspoon pepper with a rubber spatula until incorporated.
- Preheat broiler. Line rack of a broiler pan with foil.
- Pat fish dry, then brush both sides with oil (2 tablespoons total) and sprinkle with remaining 3/4 teaspoon salt and 1/8 teaspoon pepper. Broil fish about 5 inches from heat, turning over once, until just cooked through, 8 to 10 minutes total.
- Top each steak with 1 to 2 tablespoons red-wine butter.
GRILLED SALMON WITH HERBED BUTTER SAUCE

Steps:
- Preheat oven to 375 degrees F. Preheat a grill to high heat.
- To make the fish: fillet the fish and remove all bones (You can ask your fishmonger to do this). Season the fish with the olive oil, and salt and pepper. Grill on both sides until the fish has clear grill marks, about 6 minutes per side. Remove from the grill, place on a sheet pan, and finish in the oven.
- Transfer to a warmed platter and brush with Herbed Butter Sauce.
- To make the sauce: in a small pan, sweat the shallots in butter. Add the wine, stock, vinegar, and lemon juice and simmer until reduced by half.
- Stir in 3 tablespoons cream. Add half of the tarragon. Whisk in the cold butter, 1 tablespoon at a time, strain and add remaining tarragon and chopped parsley. Season with salt and pepper to taste.
- Reserve warm.
SALMON WELLINGTON WITH RED PEPPER SAUCE
Steps:
- Preheat oven to 350 degrees F. Clean and stem the spinach. Heat the olive oil in a skillet. Saute the garlic for a few minutes before adding the spinach, salt and pepper. Cook the spinach only until wilted. Set aside.
- Take 5 by 5-inch sheet of puff pastry. Place spinach in the center of the pastry. Place a salmon fillet, better side down on the spinach. Wrap the pastry by bringing the opposite corners of pastry into the center, until salmon and spinach are covered. Brush lightly with egg wash.
- Turn the Wellingtons over, so that the flat, smooth side is the top. Brush top with egg wash. Place on a baking tray lined with the parchment paper and bake 15 to 18 minutes or until pastry has turned golden brown. Serve with Red Pepper Sauce, recipe follows
- Red Pepper Sauce: To roast peppers, place whole, uncut peppers over an open flame until the skin begins to blister and turn black, turning to get all sides. Take roasted peppers off flame, and put immediately into a brown paper bag to steam them. Let them remain in bag for approximately 10 minutes, then remove from bag. The blackened skin should peel right off the peppers.
- Saute the first 5 ingredients until peppers are soft. Take off the heat and add the heavy cream, then stir gently to warm. Put mixture into blender or food processor and puree. Strain through a china cap and set aside.
- Roux: Combine 1 stick of butter with 1 cup of flour in a saucepan, and cook over heat until mixture combines and turns a golden brown. Add roux to red pepper mixture a teaspoon at a time to thicken, being careful not to add too much.

This is a light baked salmon dish that serves two quickly and easily for a perfect weeknight meal. Serve with salad or potatoes.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place butter in a microwave-safe bowl and melt in the microwave, about 30 seconds. Add crushed garlic to butter and stir. Season sauce with salt, pepper, and oregano.
- Place salmon fillets on a large sheet of aluminum foil and pour sauce on top. Wrap tightly to enclose; place on a baking sheet.

- Wipe the salmon fillets dry with paper towels. Combine the olive oil, thyme and sugar and spread over the salmon. Leave for an hour at room temperature or overnight, refrigerated.
- Melt one tablespoon butter in a small saucepan and saute the shallots and ginger for one minute without browning. Place in the jar of a blender with the wine, water and vinegar. Reduce to a puree.
- Return the mixture to the saucepan and simmer until reduced to one-third of its volume. Keep warm.
- Meanwhile, broil the salmon fillets until cooked (about five minutes on each side), taking care not to dry them out.
- Off-heat, stir the remaining butter into the sauce. Season to taste with salt and pepper. Pour the sauce over the fish fillets and serve.

Steps:
- Prepare a fire in a charcoal grill or preheat a gas grill.
- To make the rice, preheat the oven to 350 degrees.
- Wash the rice in a colander under cold running water for 1 minute, then drain well and set aside for 10 minutes.
- In a small ovenproof saucepan, combine the rice, butter, and water.
- Cover with a tight-fitting lid and cook over high heat until strong steam comes out from under the lid.
- Remove from the heat, put the pan in the oven, and bake for 12 to 14 minutes, or until the rice is tender and all the water is absorbed.
- Set aside and keep warm.
- To start the salad, combine the cabbage, cucumber, cilantro, and mint in a medium bowl, and toss well.
- Cover and refrigerate.
- To make the sauce, in a medium saucepan over a medium heat, heat the peanut oil and saute the garlic and ginger until the garlic is lightly browned.
- Remove the pan from the heat and add the coriander seeds, curry powder, curry paste, paprika, and cumin.
- Decrease the heat to low and saute for abou t 2 minutes to release the oils and flavors; be careful not to burn the mixture.
- Stir in the coconut milk, tomato puree, soy sauce, and brown sugar.
- Increase the heat, bring the sauce almost to a boil, and remove from heat. (Don't let the sauce boil, or the sauce will separate.).
- Keep warm or reheat gently before serving.
- Meanwhile, to cook the salmon, brush the fillets with the olive oil and season with salt and pepper.
- Grill the fillets for about 2 1/2 minutes per side for medium rare, or until browned on the outside but still slightly translucent in the center.
- Or, heat a grill pan or skillet over high heat until very hot and cook the fillets for about 2 1/2 minutes per side for medium rare, or until browned on the outside but still slightly translucent in the center.
- To finish the salad, toss the cabbage mixture with the soy sauce and rice vinegar in a large bowl.
- To serve, place about 1/2 cup rice in the center of each of 4 warmed plates.
- Ladle 1/2 cup sauce around the rice, then place a fillet on top of the rice.
- Top each fillet with a tall mound of the cabbage salad.
- Sprinkle the sauce with peanuts.

Recipe works well with either pink or red salmon fillets. Recipe developed by myself while experimenting with combinations of liquid flavours and herbs. My preference is fillets rather than salmon steaks; however, both cuts of salmon work well in this recipe. Preparation time does not include marinating time. - Wash salmon fillets well.
- Pat dry and place in a shallow bowl.
- In a separate bowl, whisk together, white wine, maple syrup, lemon juice and dijon mustard.
- Add oregano, thyme, dill, garlic and mix well with the liquid ingredients.
- Pour mixture over fillets; cover and let it marinate in the refigerator for about one hour.
- In your covered pan, combine butter and olive oil and heat well.
- Do not allow to get too hot, you don't want to burn the salmon during the browning process.
- Place salmon fillets, flesh side down in the pan; RESERVE THE LIQUID and set aside.
- Cover pan and let fillets brown for about 5 minutes.
- Turn salmon fillets over to skin side down.
- Cover pan and let brown, again for about 5 minutes.
- Pour reserved marinade into the pan over salmon.
- Cover pan and allow to continue cooking until the liquid starts to bubble.
- Place slices of lemon on the salmon; leave fish skin side down in the pan.
- Turn heat down to medium; cover pan and continue cooking until salmon flakes easily.
- Depending on thickness of fillets, this final stage will take approximately 10 minutes; more time for thicker fillets.
- Remove fillets from pan with a wide spatula and transfer to plates; cover to keep warm.
- (NOTE: The skin can be easily removed prior to serving by inserting the wide spatula between the flesh and skin).
- Turn up heat under pan.
- Allow liquid to reduce until almost caramel.
- Remove from heat and spoon juices over the salmon fillets.
- Serve with crusty, multi-grain rolls, salad and/or your favourite vegetables.
- (NOTE: Heat varies between stoves. Judge and adjust settings according to your own equipment).
SALMON FILLETS WITH SWEET RED PEPPER SAUCE

- Core and remove the seeds from the red peppers. Cut them into 1/4-inch cubes or strips.
- Heat the butter in a nonstick skillet large enough to hold the salmon steaks in one layer.
- Season both sides of the fillets with salt and pepper to taste. Place the steaks in the pan and cook over high heat until they are lightly browned, about a minute and a half on each side. The time will vary, depending on the thickness of the fish and the doneness desired.
- Transfer the steaks to a warm platter. Leave the cooking butter in the skillet. Add the shallots and the red peppers. Cook, stirring, until wilted.
- Add the wine, reduce by half, add the cream and cook, stirring over medium high heat until reduced again by half. Check the seasoning.
- Add the salmon steaks, the chopped dill and any juices that have accumulated around the steaks, and bring to a simmer. Cook one minute. Do not overcook. Serve immediately with the dill for decoration.
