CINNAMON ROLLS

Number Of Ingredients 13

1/4 cup warm water
One 1 1/4-ounce package instant yeast (2 1/4 teaspoons)
1 cup plus 1 teaspoon sugar
1 large egg, lightly beaten
1/4 cup canola oil
2 teaspoons kosher salt
1/2 cup cold water
1/2 cup boiling water
4 cups all-purpose flour, plus 1/2 cup or more as needed
2 tablespoons ground cinnamon
6 tablespoons unsalted butter, melted
1 cup confectioners' sugar
2 tablespoons milk or orange juice

Steps:

  • For the cinnamon rolls: In the bowl of a stand mixer fitted with a dough hook, mix the warm water with the yeast and 1 teaspoon sugar. Set aside for about 5 minutes, until the mixture starts to thicken and bubble slightly. (If the mixture does not start to thicken and bubble slightly, the yeast is not working. Check the expiration date on the yeast and start over.)
  • In a large bowl, stir together 1/2 cup sugar, the egg, oil and salt. Mix in the cold water and then the boiling water. Add this to the yeast mixture and stir until well blended. With the machine on low speed, slowly add in 4 cups of flour until incorporated.
  • Knead in the mixer on low speed for about 5 minutes until smooth, adding in the extra 1/2 cup flour or more as needed so the dough isn't too sticky. Put the dough into a clean large bowl. Cover with plastic wrap and refrigerate until doubled in size, about 3 hours.
  • Meanwhile, combine the remaining 1/2 cup sugar with the cinnamon in a small bowl. Grease a 9-by-13-inch baking dish with about 1 tablespoon of the melted butter using a pastry brush.
  • Punch down the dough and place it on a lightly floured surface. Using a rolling pin, roll it into a rectangle about 20 by 10 inches, with the long edge facing you. Using the pastry brush, spread 1/4 cup of the melted butter over the top of the dough. Sprinkle the cinnamon-sugar mixture evenly over the dough. Roll up the dough, starting with the long edge facing you, into a tight cylinder. Gently squeeze the cylinder to seal it. Use a sharp knife to cut the dough into 12 even rounds. Place the rounds, cut-side down, into the prepared baking dish. There will be some space in between the rounds. Brush the tops of the rolls with the remaining 1 tablespoon melted butter. Cover the dish tightly with plastic wrap and allow the dough to rise in a warm place for 1 1/2 to 2 hours.
  • Preheat the oven to 350 degrees F. Bake the rolls until golden, 40 to 45 minutes.
  • For the icing: Meanwhile, mix the confectioners' sugar with the milk in a small bowl. When the rolls come out of the oven, drizzle the icing over the hot rolls. Serve while warm.

2/3 stick (6 tablespoons) unsalted butter, softened, plus more for greasing
All-purpose flour, for dusting surface
1 loaf frozen white bread dough, thawed overnight in refrigerator
1 cup packed light brown sugar
1 tablespoon ground cinnamon
1 stick (1/2 cup) unsalted butter, softened
1 cup powdered sugar
1/3 cup cream cheese, softened
1 teaspoon vanilla extract

Steps:

  • For the dough and filling: Lightly butter two 8-inch round baking pans.
  • On a lightly floured surface, roll out the dough to a 15- by 7-inch rectangle. In a small bowl, combine the brown sugar and cinnamon; set aside. Spread the softened butter over the dough. Sprinkle the dough evenly with the cinnamon-sugar mixture. Starting at the long edge, roll up the dough as for a jelly roll. Pinch the seam to seal. Cut the rolled dough into 16 slices and divide the slices between the prepared baking pans. Set aside in a warm place and allow the dough to rise until doubled in size, about 1 hour.
  • Preheat the oven to 400 degrees F. Bake until golden on top, about 15 minutes. Promptly invert the baking pan over a wire rack and lift the pan from the buns. Scoop any filling that has remained in the pans over the buns. Allow the buns to cool slightly, about 10 minutes.
  • Meanwhile, for the icing: In a medium bowl, beat the butter, sugar, cream cheese and vanilla with an electric mixer until fluffy. Spread the icing over the rolls. Serve warm.

1 loaf frozen white bread dough, thawed in refrigerator
Flour, for dusting surface
1 cup packed brown sugar
1 tablespoon ground cinnamon
2/3 stick butter, softened
1 stick unsalted butter, softened
1 cup powdered sugar
1/3 cup cream cheese
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F.
  • Roll out dough on a lightly floured surface to form a 15 by 7-inch rectangle. In a small bowl, combine brown sugar and cinnamon. Set aside. Spread 2/3 cup softened butter over dough and then evenly sprinkle with cinnamon-sugar mixture. Starting at the long edge, roll up dough as for a jelly roll. Cut roll into 16 slices and then set aside in a warm place and allow dough to rise until doubled in size, about 1 hour.
  • Divide rolls among 2 lightly buttered round baking pans. Bake for 15 minutes or until golden on top. While the rolls are baking, combine the icing ingredients with an electric mixer until fluffy. Frost the warm rolls with the icing. Serve warm.

CINNAMON ROLL COCKTAIL

6 cups boiling water
1/2 cup instant cinnamon-flavored cappuccino or coffee mix
2 shots caramel liqueur
2 shots vanilla rum
2 shots cinnamon schnapps
2 shots dark rum
Non-dairy whipped topping, for garnish
Cinnamon sticks, for garnish

Steps:

  • In a measuring cup, add boiling water to instant coffee. Stir until completely dissolved.
  • Combine remaining ingredients into a large pitcher, stirring thoroughly as you add each ingredient. Stir in hot coffee mixture. Pour into individual mugs and top each with a dollop of non-dairy whipped topping, piped through a decorative tip. Garnish each mug with a whole cinnamon stick and a generous sprinkle of cinnamon sugar. Serve warm.

2 packages crusty loaf French bread dough
1/4 cup butter, softened
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
2 teaspoons instant coffee
1 stick butter, softened
3 cups sifted powdered sugar
1 teaspoon vanilla extract
1/4 cup milk
4 teaspoons instant cappuccino-flavored coffee mix

Steps:

  • Remove dough from canisters, fold each roll of dough in half and wrap together loosely with plastic wrap. Place wrapped dough in the refrigerator and let rest at least 2 hours.
  • Preheat oven to 350 degrees F. Lightly grease 2 (8-inch) cake pans.
  • In a small bowl, combine brown sugar, cinnamon, and instant coffee. Set aside. On a lightly floured surface, place 1 piece of the folded dough on top of the other piece of dough and flatten. Roll dough into an 8 by 14-inch rectangle. Spread softened butter over surface of dough and sprinkle with the sugar-cinnamon-coffee mixture. Starting with the long edge, roll dough like a jelly roll. Cut into 12 pieces and divide between the 2 prepared cake pans. Bake 25 to 30 minutes until golden brown. Allow to cool 10 minutes before spreading with icing.
  • For icing: In a medium mixing bowl with a handheld mixer, beat together softened butter and sifted powdered sugar adding the sugar 1 cup at a time. Beat until light and fluffy. Add remaining ingredients and beat until combined. Spread or drizzle over cooled rolls.
