SANTA FE CARROT CAKE



Santa Fe Carrot Cake image

High-altitude version of a great carrot cake. A great success in Santa Fe, NM at 7000 feet.

1 cup olive oil
4 eggs
1 cup white sugar
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon ground nutmeg
3 cups shredded carrots
½ cup chopped walnuts
½ cup raisins
1 (8 ounce) package cream cheese, softened
¼ cup butter, softened
1 cup confectioners' sugar, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease two 8-inch cake pans.
  • Mix olive oil, eggs, sugar, and vanilla extract together. Combine flour, salt, cinnamon, baking soda, baking powder, and nutmeg in a separate bowl.
  • Stir flour mixture into oil mixture until well blended. Fold in carrots, walnuts, and raisins. Portion batter evenly between the cake pans.
  • Bake in the preheated oven until tops spring back with lightly touched, 25 to 35 minutes. Adjust temperature if cakes are browning too quickly. Let cool completely, about 30 minutes.
  • Beat cream cheese and butter together just until smooth. Add confectioners' sugar; beat until smooth. Spread frosting over the cooled cakes.

Santa Fe Natillas image

Santa Fe Natillas are like iles flottantes, floating islands, but with the meringue folded into the pudding. The recipe is most authentic with canela (Mexican cinnamon) and Mexican vanilla. When I can't be in Santa Fe, this is comfort food! This recipe comes courtesy of the Santa Fe School of Cooking and is one that I particularly enjoy, so I'm parking it here for safekeeping.

2 eggs, separated
2 cups heavy cream, divided
1/4 cup sugar
2 tablespoons flour
salt
1/4 teaspoon vanilla
nutmeg
cinnamon (preferably Canela)

Steps:

  • Make a paste of the egg yolks, flour and 1/2 cup of the heavy cream.
  • In a saucepan combine 1/4 cup of sugar and a pinch of salt with the remaining heavy cream and bring the mixture to the boiling point.
  • Remove the mixture from the heat and whisk into the egg mixture gradually.
  • Pour the mixture into a double boiler and cook slowly over simmering water until it thickens (20 minutes).
  • Mix in the vanilla and remove from the heat, allowing it to cool.
  • The recipe can be made ahead until this point.
  • Beat the egg whites with 2 tablespoons of sugar until stiff but not dry. Gently fold the meringue into the cooled custard.
  • Sprinkle with freshly grated nutmeg and/or cinnamon and serve.

This recipe is from a Santa Fe, New Mexico restaurant. This wonderful Carne Adovada can be use like green chile sauce to cover any dish or as a filling in a taco or burrito.

2 1/2 lbs pork shoulder
16 ounces water
6 garlic cloves, peeled and roughly chopped
1 medium onion, peeled and chopped
1 tablespoon salt
1/8 teaspoon fresh ground black pepper
1/8 teaspoon dried oregano
3 ounces red chili peppers, coarsely chopped
2 1/2 ounces red chili powder (Hatch chiles would be perfect)

Steps:

  • On a cutting board, cut the pork into 1 1/2-inch cubes and place in a roasting pan (approximately 13 by 21-inch).
  • Put the water into a blender and add the garlic, onion, salt, black pepper, oregano, chile pepper and chili powder. Blend until smooth as possible. Pour over the pork cubes and toss to coat well.
  • Preheat oven to 400 degrees F. Cover the roasting pan and place in the oven to bake for 1 1/2 hours or until fork tender.
