Roasted Pork Loin With Sweet Tangy Sauce image

This roast is so tender and juicy and has a sweet tangy sauce that will melt in your mouth.I got this from another website and tweaked it to my likings. I roast this is a glass baking dish on top of an onion cut into 4 pieces. If you are preparing a larger roast just double the ingredients. The sauce is also good on rice if you'd like. Prep time does not include marinating time. I plate this with the onions that were in the bottom-oh so good!

1 (2 1/2 lb) pork loin roast
1 large onion (cut into 4 or 5 big pieces)
1 teaspoon rubbed sage
1/4 teaspoon pepper
1/2 teaspoon salt
2 -3 garlic cloves, crushed
1 tablespoon Worcestershire sauce
1/2 cup brown sugar, packed
1 tablespoon flour (don't worry about that lumping up-it won't)
1/4 cup vinegar
1/4 cup water
2 tablespoons soy sauce

Steps:

  • Preheat oven to 325°F.
  • In a bowl, combine sage, salt, pepper, and garlic.
  • Rub roast with olive oil so rub will stick to the roast.
  • Rub mix all over roast.
  • Cover with plastic wrap tightly.
  • Marinate for about 2 hours (if you don't have time for that it'll still be fine.
  • Sprinkle the Worcestershire sauce on right before you put it in the oven.
  • Place roast in either a roasting pan or glass dish on top of the onion.
  • Pour 1/4 cup water in bottom.(don't pour it over the roast).
  • Place in oven on middle rack.
  • Cover for the first 2 hours then uncover for remaining time.
  • Bake approximately 3 hours or until internal temperature is at least 150°F depending on your desired doneness.
  • Meanwhile, place sugar, flour,vinegar, water and soy sauce in small saucepan. Heat, stirring occasionally until mixture begins to bubble and thicken slightly.
  • Brush roast with glaze 3 or 4 times during last half hour of cooking.
  • When roast is done (I use a meat thermometer to ensure that it's done). Take out of oven, pour remaining glaze on and let rest set about 10 minutes before carving.

1/2 cup olive oil
1/4 cup stone ground mustard
3 tablespoons dijon mustard
2 tablespoons apple cider vinegar
2 tablespoons honey
1 1/2 teaspoons salt
1 teaspoon granulated garlic
1/4 teaspoon onion powder

Steps:

  • Place pork in a shallow dish (or resealable plastic bag)
  • Whisk together remaining ingredients until emulsified.
  • Reserve 1/4 of the marinade to serve with cooked pork.
  • Pour remaining marinade over the pork. Turn to coat. Cover and refrigerate for at least 2 hours.
  • When ready to cook, preheat grill to medium.
  • Cook pork 8 - 10 minutes on each side or until a meat thermometer inserted reaches 145 degrees.
  • Remove pork from grill and allow to rest 5 - 10 minutes.
  • Slice, drizzle with reserved marinade and serve.

1 Tbsp. fennel seeds
2 Tbsp. dried oregano
2-2½-lb. boneless pork shoulder (Boston butt)
Grapeseed or other neutral oil (for pork)
1 Tbsp. kosher salt, plus more
3 chiles de árbol, torn in half, seeds removed if desired
½ cup apple cider vinegar
½ cup (1 stick) unsalted butter
2 Tbsp. sugar
Special Equipment: A spice mill or mortar and pestle

Steps:

  • Toast fennel seeds in a dry small skillet over medium heat, tossing often, until golden brown and starting to pop, about 3 minutes. Transfer to a spice mill or mortar and pestle and let cool; coarsely grind. Transfer to a small bowl and mix in oregano. Place pork on a wire rack set inside a rimmed baking sheet and rub with oil. Season all over with 1 Tbsp. salt, then rub with spice mixture, packing it on. Let sit at room temperature 2 hours or chill, uncovered, up to 2 days.
  • Bring chiles, vinegar, butter, and sugar to a simmer in a small saucepan over medium-high heat; cook, stirring occasionally, until sugar is dissolved and sauce is reduced by about a third, about 5 minutes. Season with salt; cover and keep warm over low heat until ready to use.
  • Prepare a grill for medium heat. Drizzle pork all over with oil, then grill, turning every 5 minutes or so, until extremely, gorgeously browned and crisp and an instant-read thermometer inserted into thickest part registers 120°F, 35-45 minutes. Continue to grill, brushing with sauce and turning not quite every minute (you're going to see flare-ups, but don't worry), until pork is glazed and shiny and temperature on thermometer has risen to 130°F, 5-10 minutes more. Transfer pork to a platter and let rest 30 minutes; reserve remaining sauce.
  • Transfer pork to a cutting board and pour any accumulated juices on platter into reserved sauce. Return sauce to a simmer. Slice pork against the grain ¼" thick. Arrange on platter, spoon some sauce over, and season with salt. Serve remaining sauce alongside.
  • Cooks' Note
  • If using a charcoal grill, a bed of medium-hot coals will gradually lose heat. Get a chimney started when the meat first hits the grill. About halfway through, throw some new glowing coals on the pile to keep things going.

1 cup orange juice
2 tablespoons olive oil
3 cloves garlic, minced
6 (6 ounce) boneless pork loin chops
6 slices applewood smoked bacon
6 fresh figs
1 cup fresh mint leaves
1 tablespoon balsamic vinegar
3 tablespoons olive oil
1 tablespoon honey
½ cup orange juice
1 pinch sea salt and pepper to taste

Steps:

  • Whisk together 1 cup orange juice, 2 tablespoons olive oil, and the minced garlic in a bowl; pour into a resealable plastic bag. Add the pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 8 hours.
  • Place the figs and mint leaves into a blender, and blend until pureed. Add the balsamic vinegar, 3 tablespoons olive oil, honey, and 1/2 cup orange juice to the blender, and puree until smooth and thick. Season to taste with sea salt and pepper, then set aside.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the pork from the marinade. Discard the remaining marinade. Wrap each pork chop with a slice of bacon, securing with toothpicks as necessary; season with salt and pepper.
  • Grill the pork chops until the pork is no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Pour the mint-fig sauce over the pork chops to serve.

2 T St. Elmo's seasoning (or your favorite)
½ C sour cream
½ C mayonnaise
1 T dry mustard
1 T chopped scallions (or onions)
1½ T white wine vinegar

Steps:

  • Preheat your grill to medium-high heat.
  • Rub the tenderloins with olive oil and then rub on the seasoning.
  • Grill the tenderloins by turning so as to get a nice sear on all sides.
  • Remove from grill when the internal temperature is 140°F to 145°F.
  • Cover with foil and let rest for 5 minutes.
  • Mix all ingredients in a medium-size mixing bowl and let stand for at least 4 hours - let stand on counter, NOT in fridge.
  • Use as a sauce to taste with tenderloin however you prefer - pour on top, use for dipping, etc.
