Provided by TishT

Categories     Beans

Time 8h

Yield 6-8 serving(s)

Number Of Ingredients 15

1 lb dry pinto beans
5 cups cold water
2 teaspoons chicken bouillon
4 ounces ham hocks
1/4 teaspoon liquid smoke
1 1/2 tablespoons combination of california chili powder (New Mexico, Hungarian Paprika. All Mild)
1 tablespoon brown sugar, plus
1 teaspoon brown sugar
1/2 teaspoon black pepper (for spicier beans add another 1/2 Tsp)
1/4 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon garlic powder or 1 -2 garlic clove, minced
1 1/2 tablespoons onion powder or 1 medium onion, chopped
1 teaspoon seasoning salt (add in the last 30 min only)
1/4 cup tomato puree (add in the last 30 min only)

Steps:

  • Wash beans and place in a large pot or kettle. Add water and remaining ingredients (except salt and tomato puree, which should be added in the last 30 minutes before beans are done). Cover and simmer for 5 to 6 hours. Check liquid level occasionally and add more water (add boiling water, never cold) as needed to keep beans covered.
  • If cooked in a crock pot, (you will need extra cup of water if you did not pre-soak) and cook them on the low setting. It also may take a little longer than the 5 to 6 hours.
  • Note: You can reduce cooking time by soaking beans overnight or using or (1 Hour soak method).
  • Add ¼ Cup of tomato puree with additional 1 tsp brown sugar in the last hour. Adjust salt and sugar to your liking.

RANCH STYLE BEANS

Ranch style beans image

Provided by Lisa Fain

Number Of Ingredients 13

1 pound dried pinto beans
6 ancho chiles, stems and seeds removed
6 cloves garlic, minced
1 onion, diced
1 15-ounce can diced tomatoes and their juices
1 teaspoon brown sugar
1 teaspoon apple cider vinegar
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon oregano
1 cup water
1 tablespoon kosher salt
6 cups beef broth

Steps:

  • Soak the beans covered in water-either overnight or the quick soak method in which you place the beans in a pot, cover with water, bring to a boil, cover and remove from heat and let sit for 1 hour.
  • Drain the soaked beans.
  • In a cast-iron skillet heated up to medium high, cook the anchos on each side for a couple of minutes (or until they start to bubble and pop), turn off the heat and fill the skillet with warm water. Let them sit until soft and rehydrated, about half an hour.
  • In the pot you'll be cooking your beans, heat up a teaspoon of canola oil and cook the onions for 5 minutes on medium. Add the garlic and cook for another minute. Throw the cooked onions and garlic in a blender and add the tomatoes, brown sugar, apple cider vinegar, paprika, cumin, oregano, water, hydrated ancho chiles, and salt. Puree until smooth. Set aside.
  • Add the pinto beans and beef broth to the pot. On high, bring the pot to a boil and then cover; turn the heat down to low and simmer for 1 hour, stirring occasionally.
  • At this time, stir in the reserved chile puree and then continue to cook the beans uncovered for another hour or until tender and the sauce has reduced. Taste and adjust seasonings. Serve warm.

FRESH RANCH DIP

Fresh Ranch Dip image

Creamy yogurt served alongside salty chips and vegetables, like crisp Persian cucumber, never disappoints. In this superbly simple recipe, a tub of Greek yogurt is transformed into a delicious dip that's loosely inspired by the dominant flavors of ranch dressing. Add a handful of fragrant dill and chives, brighten things up with a little lemon juice and lemon zest, and you have yourself a party for a crowd (or for one!). This dip can be made a day in advance and travels well if kept cool.

Provided by Naz Deravian

Categories     easy, quick, snack, dips and spreads

Time 5m

Yield 4 to 6 servings

Number Of Ingredients 7

1 (16-ounce) container plain Greek yogurt, preferably full-fat
1 large garlic clove, finely grated
1/2 cup finely chopped fresh dill leaves
2 tablespoons thinly sliced chives
1 small lemon
Kosher salt (such as Diamond Crystal)
Potato chips, Persian cucumbers or other crudités, for serving

Steps:

  • Place the yogurt in a medium bowl. (Save the container for storing your dip.) Add the garlic, dill and chives. Add ½ teaspoon of lemon zest and 1 tablespoon of lemon juice, and season with salt (about 1 teaspoon). Stir to combine and taste for seasoning. Be mindful not to oversalt if you plan to serve this with salty chips. Serve right away or transfer back to the container, cover and store in the fridge for up to 1 day.
