Number Of Ingredients 14

1/2 pound bulk pork sausage
1 large egg, room temperature
2/3 cup whole milk
2 tablespoons canola oil
1 cup pancake mix
1/2 teaspoon ground cinnamon
1/2 cup shredded peeled apple
CIDER SYRUP:
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon pumpkin pie spice
1 cup apple cider
1 tablespoon lemon juice
2 tablespoons butter

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. In a large bowl, beat the egg, milk and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple and sausage. , Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles from on top. Cook until second side is golden brown., For syrup, combine the sugar, cornstarch and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter until melted. Serve warm with the pancakes.

Sour cream and maple syrup, optional

Steps:

  • In a 10-in. ovenproof skillet, cook sausage over medium heat until no longer pink; drain and set aside. In the same skillet, cook apples and brown sugar in butter over medium heat until apples are tender., In a blender, combine the eggs, milk, flour, sugar and salt; cover and process for 10 seconds or until smooth. Pour over apple mixture. Sprinkle with sausage and cheese. , Bake, uncovered, at 425° for 18-23 minutes or until pancake is puffy and golden brown. Cut into wedges. 1 1/3 cups low-fat buttermilk
1 large egg, lightly beaten
3 tablespoons maple syrup, plus more for serving, optional
1/2 cup diced apples
3/4 cup Jimmy Dean(R) Hearty Original Sausage Crumbles
2 tablespoons butter, for greasing griddle
Cinnamon Walnut Butter, recipe follows
1 stick unsalted butter, softened
2 tablespoons toasted walnuts, finely chopped
2 tablespoons maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Pinch of salt

Steps:

  • In a small bowl, combine the flour, cornmeal, baking powder, baking soda, and 1/2 teaspoon salt.
  • In a large measuring cup combine the buttermilk, egg, and 3 tablespoons maple syrup and stir with a fork. Stir into the flour mixture with a spatula until just combined. Mix in the diced apple and sausage crumbles.
  • Heat a pancake griddle over medium-low heat and then grease with a small amount of butter. Drop ladles of batter to form 4-inch pancakes, cooking pancakes for 2 to 3 minutes before flipping, or until the batter puffs up and bubbles form. Flip pancakes and continue to cook for an additional 1 to 2 minutes, until cooked through and nicely browned. Top with Cinnamon Walnut Butter and additional maple syrup, if desired.
  • Combine the butter, maple syrup, cinnamon, vanilla, and salt in a bowl and mix until well blended. Serve with pancakes.

1/4 cup granulated sugar
1/3 teaspoon ground cinnamon
3 large eggs
1/2 cup milk
1 teaspoon grated lemon zest
1/2 cup all-purpose flour
1/2 cup unsalted butter, divided
2 tart apples (Granny Smith), peeled, quartered, and sliced 1/4-inch-thick
Sifted confectioners' sugar

Steps:

  • Preheat the oven to 450 degrees and set out a deep 10-inch ovenproof skillet (cast-iron is best). In a small bowl, mix the granulated sugar with the cinnamon and set aside.
  • In a medium-sized bowl, lightly whisk the eggs, milk and lemon zest. Blend in the flour just until mixed (the batter will be slightly lumpy).
  • In the skillet, melt 1/4 cup of the butter over medium heat. Add the apples and saute for 5 minutes or until tender. Pour the egg batter over the apples and transfer the skillet to the oven. Bake for 20 minutes or until the apples are tender and the pie puffs up high.
  • Meanwhile, melt the remaining 1/4 cup butter. Remove the skillet from the oven, drizzle the puff pie with the butter and sprinkle with the cinnamon-sugar mixture. Return the pie to the oven for 5 minutes or until the sugar mixture is bubbly. Sprinkle with a little confectioners' sugar and serve immediately, right from the skillet.

1 egg
Additional maple-flavored syrup, if desired

Steps:

  • Heat oven to 350°F. Spread apple slices evenly over bottom of ungreased 13x9-inch pan. In 1-quart saucepan, heat 1/2 cup brown sugar, the butter and syrup over low heat, stirring occasionally, until melted. Pour syrup mixture over apples.
  • In 10-inch skillet, cook sausage over medium heat, stirring occasionally, until no longer pink; drain. Sprinkle sausage evenly over apple-syrup mixture.
  • In small bowl, stir remaining ingredients except additional syrup until blended. Carefully pour over sausage.
  • Bake 30 to 35 minutes or until top springs back when touched in center. Cut into 3-inch squares; turn each square upside down onto plate. Serve immediately with additional syrup.

1 teaspoon pure vanilla extract
1 cup all-purpose flour

Pinch of freshly grated nutmeg
1/2 cup (1 stick) unsalted butter, room temperature
4 apples, such as Gala or Red Delicious, peeled, quartered, cored and thinly sliced
1 tablespoon light-brown sugar
Confectioners' sugar, optional

Steps:

  • Preheat oven to 425 degrees.
  • Combine eggs, milk, and vanilla in the jar of a blender. Blend until well combined. Add flour, granulated sugar, salt, cinnamon, and nutmeg. Blend until dry ingredients are well incorporated; set aside.
  • Place butter in a 9-by-13-inch glass baking dish. Transfer dish to oven and heat until butter has just melted. Carefully remove from oven and place apples in a single layer in baking dish. Return to oven and cook until butter begins to bubble, about 4 minutes.
  • Pour batter over apples, sprinkle with brown sugar, and continue baking until puffed and golden, about 20 minutes. Sprinkle with confectioners' sugar, if desired; serve immediately.

2 granny smith apples, peeled, cored, and cut into 1/4-inch slices

6 tablespoons unsalted butter
1/2 a lemon, juice of
3 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
  • In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
  • Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
  • Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
  • Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.
