SAUSAGE CASSEROLE
Mouth watering, bowl scraping good! This recipe also makes a great dinner entree!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
- Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
- Arrange potatoes in the bottom of the prepared dish, and top with onion rings. Spread corn and then tomatoes over onions. Arrange sausage over top. Cover.
- Cook for approximately 1 hour, or until potatoes are tender.

SAUSAGE CASSEROLE FOR ONE
Just about every cuisine in the world has its sausage, but of course, the British Banger is the best. Unfortunately it is also the wurst (little cultural joke there), and you may have to try many ghastly concoctions before you find one worthy of its place on your plate. I've been through all the supermarket ones - "butcher's choice", pork and apple (yuk!), leek (ditto), black pudding. When I relocated it took me over a year to find a local butcher who made something I really wanted to eat. He calls it "Old English" but won't divulge his recipe. Boo.

Steps:
- Heat the oven to 180 degrees C.
- Brown the sausages in a pan big enough to hold everything, then remove and set aside.
- Add some oil to the pan and gently sweat the shallot without browning. Add the chopped garlic and as much chilli as you want and cook for another couple of minutes.
- Cut the cooled sausages into bite-sized lengths and add them back to the pan.
- Add the remaining ingredients, some black pepper, stir and bring to the boil. Transfer to a small lidded casserole dish and cook in the oven for 30- 40 minutes. If it looks as if it is starting to get a bit dry, add a drop of water.
- Serve with a baked potato, mash or a short pasta like penne.
- Enjoy, then post a comment to encourage other solo cooks to try it out.
MARIE'S ITALIAN SAUSAGE CASSEROLE (ONE POT MEAL)
I was looking for something easy to make for Sunday dinner and put together this casserole and let the oven do the work. The sausage was so juicy and really flavored the cabbage, potatoes and carrots beautifully.

Steps:
- In a heavy Dutch oven pan, saute sausage in olive oil until browned.
- Remove sausage to a plate and set aside.
- Slice cabbage into fairly large pieces and add to Dutch oven; stir to mix.
- Add chicken stock, baby carrots and potatoes and mix.
- Add sliced garlic and pepper and mix again.
- Add sausages to top of casserole, cover and bake at 350° for 30 minutes.
- Stir once during baking, leaving sausages on top of ingredients.
- After 30 minutes, remove cover and raise oven temperature to 400° and bake for 15 more minutes to brown the sausage.

- Cut sausages in half lengthwise; place in a greased 1-1/2-qt. baking dish. In a medium saucepan, saute mushrooms and onion in butter until lightly browned. Stir in cream, mustard and garlic powder; bring to a boil. Cook and stir until slightly thickened. Pour over sausages; top with cheese.
