- In a large bowl, mix everything together. The best way is to use your hands and really mix it all together. You can also use your stand mixer with the paddle attachment.
- There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
- Make 12 equal sized sausage patties. I make them about 1-inch thick if I am going to cook them straight away, but you can make according to your preference.
- If you are going to freeze half the batch, make the ones you are going to freeze no thicker than 1/2-inch, if you plan on cooking from frozen. Otherwise, you will need to defrost the sausage patties before cooking.
- Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through.The most reliable way to to check if a sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 160°F / 71°C.
- If you are cooking from frozen, follow the same instructions, but you will need to slightly increase the cooking time. If the sausages are browned but not cooked through, turn the heat down and finish cooking.

- In a small saute pan, cook the bacon over medium heat until rendered but not crispy, about 3 minutes. Add 1 tablespoon vegetable oil and onions, and cook until the onions are soft and begin to turn golden in color, about 3 more minutes. Add the minced garlic and cook an additional 1 minute, or until fragrant. Remove the pan from the heat, and set aside.
- In a medium bowl, use a fork to mix together the bread crumbs, brown sugar, thyme, cayenne pepper, and salt, and pepper. Add the ground pork, egg yolk, and bacon and onion mixture to the bread crumbs, and gently mix with your hands until just combined. Do not over mix. Divide the mixture into 8 even portions and form into patties, pressing a small thumb indentation in the middle of each so they stay flat when they cook. In a large saute pan, heat 1 tablespoon vegetable oil over medium-high heat. Add the sausage patties and brown on both sides, about 2 minutes per side. Add a tablespoon of water and cover the pan for 3 minutes, or until the sausage is fully cooked. Serve hot.

Add the oats, maple syrup, brown sugar, sage, thyme, salt, rosemary, cayenne, nutmeg, red pepper, eggs and some black pepper and continue to pulse just until the mixture comes together into a thick batter. There should still be some coarse bits of oats and walnuts.
- Heat a generous layer of oil in a skillet over medium-high heat. Dollop 2 tablespoons of batter per patty into the skillet, allowing at least 1 inch between patties, flatten them slightly and cook until golden brown on the bottom, about 4 minutes. Flip and cook until golden brown on the other side, another 4 minutes. Transfer to a plate lined with a paper towel to soak up excess oil. Repeat with the remaining batter.

- In a large bowl mix together the pork and all of the spices. Mix well until evenly distributed. Shape the mixture into 5 equal patties. Grill the patties on each side until cooked to desired doneness, about 4 minutes on each side.

- Skin sausages, place in a bowl with the spring onion and stir well. Divide the mixture into 8 and shape into round patties. On a plate, mix together 2tbsp flour with the herbs. Dip the patties in to coat each side.
- Cook the potatoes in boiling water for 10 - 15 mins until tender. Meanwhile heat 3/4 oz of the butter and half the oil in a frying pan, then fry the onion for 10 mins until golden brown. Stir in the cranberry sauce and cook until it's dissolved. Stir in the remaining flour and cook until it turns golden. Remove from the heat and gradually stir in the stock. Return to the heat and cook until the gravy has thickened slightly. Season to taste.
- Drain and mash the potatoes with the milk and butter and add the mustard, if liked. Keep warm.
- Heat the remaining oil in a frying pan, then cook the patties until golden on each side. Reheat the gravy.
- Place some mash in the centre of each plate, top with two of the patties and spoon over the gravy. Serve with mixed vegetables.

Make a double recipe of these, shape them and then freeze for brunches. I love these between butter pan rolls! The first time you make these use the amounts of spices listed, you might however want a stronger flavor, so the next time you make them just adjust all spices to taste. This recipe will not work well with lean pork, the patties will be very dry, so try to purchase ground pork with some extra fat in it for flavor and texture. The garlic is optional, I added it in when I made these, only because we love garlic. I strongly advise you to prepare the patties (do not cook) shape and refrigerate overnight, as the flavors will blend and become stronger, they do take on a whole different flavor when left overnight.

- In a small skillet heat oil over medium-low heat and saute the onion and garlic (if using) for about 7-8 minutes, or until softened; cool for 10-15 minutes.
