PESTO PASTA WITH ITALIAN SAUSAGE



Pesto Pasta with Italian Sausage image

Incredibly easy Pesto Pasta made with Italian sausage and a yummy breadcrumb and parmesan topping.

Number Of Ingredients 10

12 oz. pasta (any kind)
1- lb. ground mild Italian sausage
1 shallot (minced)
2 cloves garlic (minced)
½ cup pesto (we used homemade pesto)
½ cup shredded mozzarella cheese
⅓ cup breadcrumbs
½ teaspoon garlic powder
½ teaspoon dried Italian seasoning
¼ cup grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Once the water is boiling, cook the pasta just to al dente. Reserve 1.5 cups of pasta water and then drain the pasta and set it aside.
  • While heating the water in step 1, heat a large oven-safe skillet over medium heat. Add the Italian sausage and break it into bite-sized pieces as it cooks. Continue stirring and cooking until the sausage is browned-- about 5 minutes.
  • Add the shallot and garlic and cook for an additional 1-2 minutes, stirring often.
  • Deglaze the pan by adding the pasta water and scraping the bottom to remove any browned bits.
  • Next stir in the pesto and ¼ cup mozzarella. Add the pasta and toss to combine. Cook until the sauce has thickened and coated the pasta-- about 2 minutes.
  • Top the pasta with the remaining ¼ cup grated mozzarella.
  • In a small bowl, stir together the breadcrumbs, garlic powder, and Italian seasoning. Spread the breadcrumb mixture over the pasta and then top with the grated parmesan.
  • Place the pan under the broiler for 2-3 minutes or until the breadcrumbs are crisp and golden brown.
  • Serve immediately, topped with fresh basil.
  • Store any leftovers in an airtight container in the fridge for up to three days.

A kid-friendly but still sophisticated pasta dish with chicken sausage. Can easily be modified to your liking. We used a mixture of pastas (penne, farfalle, rotini) because 2-year-old Brian mixed the boxes together!

1 (14.5 ounce) package penne pasta
1 tablespoon olive oil
1 pound fresh chicken sausage, casings removed
⅓ cup diced onion
1 tablespoon pesto
1 (14.5 ounce) can petite diced tomatoes in juice
1 cup chicken broth
½ cup heavy cream
¼ cup shredded Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and return to the pot.
  • Meanwhile, heat olive oil in a large pan over medium-high heat. Add chicken sausage and onion. Cook until chicken is browned and no longer pink in the center, 5 to 7 minutes. Reduce heat to low and mix in pesto. Add tomatoes with juice and chicken broth. Simmer sauce until slightly reduced, 5 to 10 minutes.
  • Pour cream into the sauce. Simmer until reduced to your desired thickness, 5 to 10 minutes. Pour sauce into the pot of cooked penne. Mix thoroughly. Let rest for 5 minutes before serving. Garnish with shredded Parmesan cheese to your liking.

½ pound ground sausage
1 (1.2 ounce) package creamy pesto sauce mix (such as Knorr®)
1 cup milk
¼ cup olive oil

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook penne at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain and transfer pasta to a bowl.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; add to pasta.
  • Whisk pesto sauce mix, milk, and olive oil together in a small saucepan; bring to a boil while stirring constantly. Reduce heat to low and keep at a simmer until thickened, about 3 minutes; pour over pasta and sausage mixture and toss to coat.
