Savory Black-Eyed Peas with Bacon image

4 slices bacon, cut into 1-inch pieces
2 1/2 cups Progresso™ chicken broth (from 32-ounce carton)
1 cup dried black-eyed peas, sorted and rinsed
2 medium celery stalks, sliced (1 cup)
1 large onion, chopped (1 cup)
1 1/2 tablespoons chopped fresh savory leaves or 1 1/2 teaspoons dried savory leaves
1 garlic clove, finely chopped
3 medium carrots, thinly sliced (1 1/2 cups)
1 large green bell pepper, cut into 1-inch pieces
1/2 cup shredded Monterey Jack cheese with jalapeño peppers (2 ounces)

Steps:

  • Cook bacon in 10-inch skillet over medium heat, stirring occasionally, until crisp. Remove bacon with slotted spoon; drain on paper towels. Drain fat from skillet.
  • Heat broth, peas, celery, onion, savory and garlic to boiling in same skillet. Boil uncovered 2 minutes; reduce heat. Cover and simmer about 40 minutes, stirring occasionally, until peas are almost tender (do not boil or peas will burst).
  • Stir in carrots and bell pepper. Heat to simmering. Cover and simmer about 13 minutes, stirring occasionally, until vegetables are tender; stir. Sprinkle with cheese and bacon.

2 tablespoons olive oil
1 large onion, finely chopped
1 green bell pepper, seeded and diced
2 cups cauliflower florets, roughly chopped into 1/2-inch pieces
2 cloves garlic, minced
1 tablespoon ground cumin
1 teaspoon chili powder
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/2 teaspoon sea salt
2 (15-ounce) cans black-eyed peas, rinsed and drained
1 (14-ounce) can tomato sauce
1 cup water
1/4 cup soy sauce
1/3 cup packed brown sugar or maple syrup
2 tablespoons white or apple cider vinegar

Steps:

  • In a large pot, heat oil over medium-high heat and sauté onions and green peppers until soft. Add cauliflower and cook, stirring frequently, until it is lightly browned, about 5 to 8 minutes. Add garlic, cumin, chili powder, cinnamon, cayenne and salt, and cook a few more minutes.
  • Stir in black-eyed peas, tomato sauce, water, soy sauce, brown sugar and vinegar. Reduce heat to medium. Simmer, uncovered, for 10 to 15 minutes. Adjust seasoning to taste. Serve in soup bowls with biscuits and whipped maple "butter" on the side.

This country recipe combines black-eyed peas and okra for a down-home country taste. We like to make this recipe in the winter with fried chicken and mashed potatoes.

3 cups dry black-eyed peas
12 cups water
3 pounds smoked ham hocks
1 ¼ cups chopped onion
1 cup chopped celery
1 teaspoon salt
⅛ teaspoon cayenne pepper
1 bay leaf
1 (10 ounce) package frozen sliced okra, thawed

Steps:

  • Pick over the peas, rinse them, and place them in a large Dutch oven or soup pot with the water. Bring the beans to a boil for 2 minutes. Remove from heat, cover, and let stand for 1 hour.
  • Stir in the ham hocks, onion, celery, salt, cayenne pepper, and bay leaf; bring to a boil, cover the pot, and simmer until the ham hocks are tender, about 1 1/2 hours. Stir in the okra and simmer until tender, 10 to 15 minutes. Remove and discard bay leaf before serving.

1 3/4 cups black-eyed peas, soaked (or 1 16 oz. bag, frozen)
5 cups water
1/2 lb mushroom, sliced
6 tablespoons oil
1 tablespoon cumin seed
1 inch cinnamon stick
1 1/2 medium onions, chopped
4 garlic cloves, minced
1 (15 ounce) can diced tomatoes, retain juice (or 4 tomatoes, chopped)
1 teaspoon coriander
1 teaspoon cumin
2 teaspoons turmeric
1/2 teaspoon cayenne pepper
2 teaspoons salt
black pepper (optional)
3 tablespoons cilantro, chopped (optional)

Steps:

  • Place black-eyed peas and water into a covered pot and bring to a boil.
  • Let simmer for two minutes and then remove from flame and let steep for one hour (30 minutes if using frozen peas).
  • Let cumin seeds and cinnamon stick sizzle for a few seconds in heated oil.
  • Add onions and garlic and fry until the onions turn translucent and brown at the edges.
  • Add mushrooms and cook until they begin to soften.
  • Add tomatoes, coriander, cumin, turmeric, and cayenne pepper.
  • Stir and cook for one minute.
  • Cover, and let simmer for ten minutes.
  • Remove cooked sauce from flame.
  • Return peas to a boil and let simmer for 20 to 30 minutes.
  • Mix the sauce with the peas while adding the salt. Add cilantro and black pepper if desired.
  • Let simmer, uncovered, on low heat for 30 minutes, stirring occasionally.
  • Remove cinnamon stick & serve.
