SUPER-EASY SAUSAGE AND PEPPERS
A simple and delicious way to serve sausage and peppers with a tomato-based sauce. This is one of my husband's and kids' favorite meals. They like it served over rice because it makes a lot of 'gravy' that soaks into the rice. It 's one of my favorites because it's quick, easy, and has only a few ingredients that I usually have on hand.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spread sausage pieces into a baking dish.
- Bake sausage in preheated oven until heated through, about 20 minutes.
- Heat olive oil in a large skillet over medium-high heat. Saute onion in oil until translucent, 5 to 7 minutes.
- Stir sausage with the onion. Pour tomato sauce over the sausage mixture; bring to a simmer and cook for 20 minutes.
- Stir bell pepper into the mixture to coat in tomato sauce; cook until the bell pepper is tender, about 20 minutes more.

This is a great recipe for anyone who loves bell peppers! My dad always made this for me when I was growing up... now I make it for my own family and get raves every time! Serve over pasta and with bruschetta for a full meal! Enjoy!

- Slice each sausage link into 5 pieces. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the sausage, and cook until browned, turning as needed.
- Drain excess grease, then add the green, red and yellow peppers, tomatoes, and Italian seasoning. Drizzle the remaining olive oil over all, and reduce the heat to medium-low. Cover, and let simmer for 15 minutes.
- Remove the lid, and stir. Add the garlic and onion to the pan. Sprinkle with Parmesan cheese. Cover, and simmer for 15 more minutes. Stir, then top with mozzarella cheese. Cover and cook for 5 minutes to melt the cheese. Remove from the heat and enjoy.

This dish from Quick Cooking Magazine is as colorful as it is delicious. We hope you enjoy it as much as our family does. Instead of using herb and garlic soup mix we use a regular envelope of onion soup mix with 1 t cornstarch mixed in the water. I also add zucchini slices.

SAUSAGES WITH PEPPERS AND ONIONS

- Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
- Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
- Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
- Garnish with the basil and serve immediately.

SAUSAGE AND PEPPERS
You may be surprised to see that there is no stock or wine in this dish. I prefer to let the sausages and vegetables simmer in their own juices. The flavors blend and mellow a little, but still stay intense. The key to making really wonderful sausage and peppers is to caramelize each ingredient separately, then to pile them into a baking dish and finish them in the oven.
Yield makes 8 servings (ingredients can easily be reduced by half to serve 4)

- Poke the sausages all over with a fork. Divide 1/4 cup olive oil between two large, heavy skillets and heat them over medium heat. Divide the sausages between the skillets and cook, turning occasionally, until the sausages are well browned on all sides, about 8 minutes. About halfway through browning the sausages, whack the garlic with the flat side of a knife and toss half the cloves into each skillet. Transfer the browned sausages and garlic to a 13 × 9-inch baking dish, leaving the fat behind.
- While the sausages are browning, prepare the mushrooms. Trim the stems from the shiitakes, if using. Trim the stems from the white and cremini mushrooms if you like. Cut any mushrooms with caps larger than 2 inches in half; leave smaller mushrooms whole.
- Preheat the oven to 400° F. Scatter the onions and cherry peppers over the fat in one of the skillets, and the mushrooms over the fat in the other. Cook the onions, stirring often, until browned and wilted but still quite crunchy, about 8 minutes. Cook the mushrooms until they have absorbed the fat in the skillet and have begun to brown, about 6 minutes.
- Slide the mushrooms into the baking dish. Spoon the onions into the baking dish, leaving behind some of the fat in the skillet. (If there is not enough fat left to coat the bottom of the skillet, pour in enough olive oil to do so.) Add the peppers to the skillet and cook, tossing frequently, just until wilted but still quite crunchy, about 6 minutes. Slide the peppers into the baking dish, toss all the ingredients together well, and place in the oven.
- Bake uncovered, tossing occasionally, until the vegetables are tender but still firm and no trace of pink remains in the sausages, about 25 minutes. Serve hot.
