Meet the Cook: This soup's one my mother taught me to make. It's good all year but especially when the weather's cold. In winter, I serve it with grilled cheese sandwiches. It would also be a nice lunch with a side salad or homemade corn bread. Even our grandchildren - we have four - like it. It's a good way of getting them to eat their vegetables. 1 pound beef stew meat, cut into 1/2-inch cubes
1 small meaty beef soup bone (beef shanks or short ribs)
2 tablespoons vegetable oil
4 cups water
1 can (28 ounces) diced tomatoes, undrained
1 cup chopped carrots
1 cup chopped celery
1/4 cup chopped celery leaves
1 tablespoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon dried savory
1/4 teaspoon dried thyme
1/8 teaspoon ground mace
1/8 teaspoon hot pepper sauce

Steps:

  • In a Dutch oven or soup kettle, brown the stew meat and soup bone in oil. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 4-5 hours or until meat is tender. Skim fat. Remove meat from bone; cut into 1/2-in. cubes. Return to soup; heat through.

2 (14.5 ounce) cans fire-roasted diced tomatoes, drained
1 (15 ounce) can whole beets, drained
1 (6 ounce) can tomato paste
26 ounces beef stock, divided
1 tablespoon white sugar, or more to taste
½ teaspoon dried dill weed
3 drops hot pepper sauce, or more to taste
salt and ground black pepper to taste

Steps:

  • Puree tomatoes, beets, tomato paste, and 1/2 cup beef stock together in a blender until smooth.
  • Pour tomato mixture into a saucepan with the remaining beef stock. Stir sugar, dill, hot pepper sauce, salt, and pepper into the tomato mixture.
  • Bring the soup to a simmer, reduce heat to medium-low, and cook until the flavors meld, about 30 minutes.

4 large potatoes, peeled and cubed
2 cups water
3 large carrots, sliced
1 large onion, chopped
Salt and pepper to taste
4 cups fresh or frozen cut green beans
4 cups tomato juice
1-1/2 pounds ground beef, cooked and drained
2 cups fresh or frozen corn
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
2 bay leaves

Steps:

  • In a large saucepan, combine the potatoes, water, carrots, onion, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 25 minutes or until tender. Add the remaining ingredients. , Cover and simmer 30 minutes longer or until heated through, stirring occasionally. Discard bay leaves.

1 pound Fresh Roma Tomatoes, 1 (4-pound) bag peeled cut up and juice reserved
1/4 ounce Knorr Suiza Beef Flavor Bullion, 1 (3 1/2-ounce) jar
ounce Tones Italian Seasoning, 1 (6-ounce) bottle dried crushed
1/4 ounce Tones Whole Black Pepper, 1 (18-ounce) bottle
1 Tones Whole Bay Leaves, 1 (2-ounce) bottle (optional)
1/2 pound Albertson's Garbanzo Beans, 1 (15-ounce) can
2/3 pound Hormel Roast Beef, 1 (12-ounce) can lean cooked, cut in 1/4 -inch pieces

Steps:

  • 1. Place celery, onion and 2 tablespoons water in a 2 1/2-quart microwavable casserole. Cover with a glass lid or plastic wrap, turning one edge back. Microwave at 100% power (700 watts) for 8 to 9 minutes or until vegetables are almost tender.2. Add 1 1/2 cups water, tomatoes with juice, bouillon granules, Italian herbs, pepper and, if desired, bay leaf. Re-cover and vent. Microwave at 100 % for 4 minutes or until mixture comes to a boil. Stir, then re-cover and vent. Reduce power and microwave at 50% power (350 watts) for 4 minutes.3. Stir in beans with liquid and meat. Re-cover and vent. This soup paired with a grilled cheese sandwich is the best. My family used to always eat the tomato soup in a can, but DH didn't like it, so I was on a mission for a homemade tomato soup and my neighbor gave me his recipe. DH loved it and the whole family was happy. I hope you enjoy too.

1/4 cup chopped celery
2 tablespoons chopped green onions
1 tablespoon butter
2 teaspoons flour
8 ounces stewed tomatoes
1 cup water
1/4 cup dry white wine
1 chicken bouillon cube
2 slices bacon, cooked crisp and crumbled

Steps:

  • Cook celery and onion in butter till tender but not brown.
  • Blend in flour.
  • Add remaining ingredients, except bacon; cook and stir until slightly thick.
  • Reduce heat; cook slowly 15 minutes, stirring occasionally.
  • Garnish with bacon.

1 cup roast beef lean cooked, cut in 1/4 -inch pieces

Steps:

  • 1. Place celery, onion and 2 tablespoons water in a 2 1/2-quart microwavable casserole. Cover with a glass lid or plastic wrap, turning one edge back. Microwave at 100% power (700 watts) for 8 to 9 minutes or until vegetables are almost tender.2. Pantry Tomato Beef Soup image

This is an easy dish, if you have everything in the pantry. I came up with the recipe after having it in a diner. I use ground turkey instead of beef. Sometimes I make this in a crockpot (low for a few hours), adding the cooked macaroni at the end of cooking. For zesty flavor, you can add in 1/2 jar pasta sauce.

Steps:

  • Combine first five ingredients in in a soup pot and simmer for 30 minutes.
  • Add cooked macaroni just prior to serving.
  • Top with parmesan cheese, if desired.
