This dish is based on a recipe in One Bite at a Time; a book that was recommended to me by Bev at Pesticide Action Network. I spread it on crackers and use it as a dip for fresh veggies. Ingredients

2 ripe avocados
1/2 cup packed herbs, chopped (I used basil, cilantro and parsley)
1 tablespoon lime juice
1/4 teaspoon chili powder
1/4 teaspoon celtic sea salt

Steps:

Place avocados, herbs, lime juice, chili and salt in a food processor.
Process until smooth.
Serve.

This fresh, fast, and easy snack is heart-healthy and delicious. I have tried lemon, lime, orange, grapefruit, Meyer lemon, key limes and Satsuma juices and I like good 'ol fashioned lemon the best, but please experiment to your own tastes!

Ingredients

1 cup ripe avocado, halved and pitted
½ lemon, juiced
2 tablespoons hot sauce (such as Valentina®), or to taste
2 pinches kosher salt

Steps:

Slice the meat of each avocado half 3 or 4 times in one direction, turn avocado and slice 3 or 4 more slices perpendicular to the first slices creating 8 to 12 small cubes still attached to the peel.
Drizzle lemon juice over each avocado and top with kosher salt. Drizzle hot sauce over each. Eat with a fork or spoon.

Avocados are a power food full of healthy fats and fiber. This quick bread has a great savory taste. A perfect way to use up a leftover avocado. The pumpkin seeds give it a great smoky taste that is a perfect complement to the bread.

Number Of Ingredients 10

Ingredients

1 cup flour
1 cup oat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, beaten
1/2 cup sour cream or 1/2 cup buttermilk
1 large ripe avocado, mashed (about 1/2 cup)
1/3 cup sugar
1/3 cup hulled pumpkin seeds (**)

Steps:

Preheat oven to 375*F. Lightly grease a 9x5 loaf tin.
Sift together dry ingredients in a medium bowl.
In a second bowl mix together the egg, avocado, sour cream and sugar.
Stir in flour mixture into wet ingredients, stirring just until wet. Stir in pumpkin seeds.
Pour mixture into tin and bake 45 minutes to an hour, or until an inserted toothpick comes out clean and surface is golden.
* you can make oat flour by processing oats in a food processor or blender until powdered.
** You may use pecans or walnuts instead.
