This scallop sauté is very quick and easy to make. If you love scallop recipes, this one will quickly become one of your favorites.

1 pound sea scallops (washed and dried thoroughly)
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon black pepper (freshly ground )
1 clove garlic
1 tablespoon fresh parsley (finely chopped )
3 tablespoons lemon juice
2 tablespoons butter

Steps:

  • Heat a large skillet generously coated with cooking spray over medium-high heat. Add the scallops and cook, stirring frequently, for 8 minutes, or until golden brown. Remove to a serving platter and keep warm.
  • In the same skillet, combine the lemon juice, butter, parsley, salt, paprika, pepper, and garlic. Cook, stirring until the butter is melted. Pour over the scallops.

Sea scallops and bay scallops differ in size and sweetness. They also cook a little differently. I love a good hard sear on a sea scallop, a little crust, and a splash of wine in the butter at the end to provide a silky acidity against the sweet of the meat. For the tiny, sweet bay scallop, though, I prefer a gentle butter bath. Whichever you cook, be very careful not to overcook. Indeed, there is almost no such thing as an undercooked scallop.

3 tablespoons unsalted butter
1 pound sea scallops, patted dry
Kosher salt, to taste
1 tablespoon dry white vermouth or white wine
1 tablespoon finely chopped parsley, for garnish

Steps:

  • Place a large sauté pan or skillet over medium-high heat, and add to it 3 tablespoons of the butter. When it has melted and started to foam, place the scallops in the pan in a single layer, and season with a pinch or two of salt.
  • Cook scallops without moving until the bottoms are golden brown, approximately 2 to 3 minutes, then turn them over, add the wine and cook an additional 1 to 2 minutes.

  • In a large skillet, heat 1 teaspoon oil over medium-high heat. Add half the scallops; stir-fry until firm and opaque. Remove from pan. 8 oz. very fresh scallops (without their coral)
salt and pepper
1 clove garlic, crushed
all-purpose flour - to dust the scallops
1-2 tablespoons sunflower or vegetable oil
2 tablespoons white wine
2 tablespoons miso
1 tablespoon mirin
1 teaspoon soy sauce
1 teaspoon superfine sugar (see note)
1-2 tablespoons water
1/2 tablespoon whole-grain mustard
2 tablespoons heavy cream
small bunch watercress
freshly grated Parmesan cheese to taste

Steps:

  • 1. Season the scallops with the salt, pepper, and garlic and then lightly dust with flour.
  • 2. Heat the oil in a small frying pan. Briefly fry both sides of the scallops until seared on the outside, but still rare in the middle.
  • 3. Take the pan off the heat and remove the scallops. Add the white wine and then the miso, mirin, soy sauce, sugar, and water to pan and stir. Return to the heat and being to a boil, stirring, then remove. Mix in the mustard and heavy cream.
  • 4. Tear the leaves off the watercress and arrange on a large plate. Chop the stems finely and set aside as a garnish. Place the scallops on the bed of watercress leaves, pour the hot sauce over, and garnish with the finely chopped watercress stems. Sprinkle with Parmesan cheese and serve.

8 large sea scallops or 1 lb bay scallop
2 tablespoons flour (for dredging, most will be left on the plate)
1 tablespoon olive oil
1 tablespoon butter
salt or pepper
1 -2 teaspoon finely minced fresh garlic

Steps:

  • Dry scallops gently with paper towel.
  • Heat oil in medium pan.
  • Add butter.
  • While butter melts, dredge each scallop in flour on both sides.
  • When butter is starting to foam, add scallops to pan.
  • Cook until scallops are barely browned on both sides and starting to feel firm, about 1-2 minutes per side for the initial browning. (This will depend on the thickness of your scallops.
  • When both sides are browned slightly, add garlic.
  • Lower heat a little.
  • Season with salt and pepper as desired, and cook about 2 minutes more.
  • Stir or shake the pan so the garlic is all around the scallops.
  • Serve.

Sauteed Bay Scallops with Lemon Butter image

1 pound bay scallops
2 tablespoons olive oil
3 tablespoons unsalted butter
Juice of 1 lemon
1/4 cup chopped fresh parsley
Freshly ground black pepper

Steps:

  • Choose a saute pan large enough to hold all of the scallops in one layer without overcrowding the pan or without them touching each other. Cook in batches if necessary. Heat the oil and 1 tablespoon of the butter until nearly smoking. Add the scallops and do not move or shake pan, but allow the scallops to brown well on one side before tossing the pan to flip them or gently turning them with a spatula to cook the second side.
  • Remove the scallops from the pan and place on a warm serving platter. Return the pan in which the scallops had been cooked to the fire, add the remaining 2 tablespoons of sweet butter, and cook until the butter begins to turn a light brown color. When the butter has browned to a hazelnut color add the lemon juice and chopped parsley.
  • Pour the classic lemon butter over the scallops, garnish with heart-shaped croutons and serve promptly.

SCALLOPS WITH A SAUTE OF RED CABBAGE

1-2 tablespoons butter
2 tablespoons or so of flour for dusting
1 1/4 pounds scallops. trimmed of their "foot"
Salt and freshly ground black pepper
2 tablespoons olive oil
Small red cabbage, cut into long strips
Garlic clove, minced
1-2 tablespoons dry white wine or white balsamic vinegar
2 tablespoons chopped parsley

Steps:

  • Heat some butter in a non-stick skillet. Lightly dust the scallops with flour on one side only; shake off excess. When hot, add the scallops, floured side down, and saute, over moderate high heat, without moving for 2 to 3 minutes or until one side develops a crust. Put a lid on the scallops to help finish steaming the top or, if the heat is high enough, the scallops will cook from the bottom through to the top. Lightly season with salt and pepper.
  • Heat the olive oil in a skillet. When hot add the cabbage and garlic and saute for a few minutes just long enough to wilt it down. (You may need to add a touch of water to help it wilt down.) Remove from heat and add white wine to taste. Season with salt and pepper. To serve, pile some cabbage in the center of a plate and top the plate with scallops, putting the browned side up. Garnish with parsley if you wish.

3 ripe plum tomatoes, about 1/2 pound
2 tablespoons butter or olive oil

4 tablespoons chopped fresh coriander

Steps:

  • Cut in half each scallop crosswise if too large. Set them aside.
