THAI-STYLE COLESLAW WITH KOHLRABI
This easy Thai Slaw has a sweet and tangy blend of Asian flavours. Made with cabbage, carrots, kohlrabi and onions, this is a healthy cabbage salad to accompany any Asian meal.

Steps:
- Use the grating disc on a food processor or a box grater to grate the cabbage, carrot and kohlrabi.
- Slice the green onions on the diagonal.
- Combine the grated vegetables in a large bowl.
- Shake the Thai Slaw Dressing ingredients in a jar with a lid or combine in a blender.
- Toss the slaw ingredients with the dressing, adding a little dressing at a time until you've reached the desired amount. Garnish with black sesame seeds (or chopped salted peanuts) and serve.

- Pour the coleslaw mix into a large bowl. Pour in the lime juice, rice vinegar, fish sauce, sesame oil, honey, and peanuts. Stir until well blended. If you have a bowl with a lid, put the lid on and shake thoroughly. Taste, and season with salt and pepper. Refrigerate for a few hours, stirring or shaking occasionally, to allow the flavors to blend before serving.

- In a large bowl toss all th' salad in'redients wit' th' dressin'.

QUICK AND EASY THAI STYLE COLESLAW
This is incredibly easy and fresh tasting. I usually substitute broccoli slaw for the cole slaw mix. Cook time is refrigerator time.

- Place coleslaw mix or broccoli slaw mix in large bowl.
- In a separate bowl mix the lime juice, rice vinegar, fish sauce, sesame oil, honey and peanuts.

PVW'S SLAP ME I'M SO SIMPLE ASIAN INSPIRED SALAD
I made this up for dining on a $ cooking contest. This is an Asian Inspired salad it was great for lunch! It's very simple to make. It uses inexpensive ingredients but is very tasty I hope you enjoy! Prep/Cooking time does not include refrigeration time which is optional at 30 minutes.

- Open Ramen Noodle package and set aside the Beef Flavor package. In a small pot or pan break Ramen Noodles using your hands into 4 or more pieces. This will depend on how long you want your noodles for your salad. Cook on stove according to the Ramen Noodle package directions. When finished cooking drain and run under cold water until noodles are cold to the touch.
- In a medium to large sized bowl combine Cold Ramen Noodles, Cole Slaw, and carrots, mix then set aside.
- In a smaller sized bowl combine the Beef Flavor Package from the Ramen Noodles, Mayonnaise, Dry Mustard, Ground Ginger, Sugar, White Vinegar, Orange Zest and Orange juice or Juce from mandarin orange can. Mix until well blended. Pour dressing over salad and mix until well blended.
- Add Cooked Chicken Breasts to the salad, Drain and add the can of Mandarin Oranges, Add optional Onions, and/or Slivered Almonds. You may eat at this point or you can place in fridge for 30 minutes to cool the salad even more and blend flavors.
- Top with chow mein noodles before serving and enjoy.

THAI-STYLE CHICKEN COLESLAW
Found this recipe in the paper. Great if you have left over chicken. Makes for a great light meal or lunch, with wonderful flavours. I have used both green and red cabbage for this recipe and both work well, although I do cut down on the corriander as it is not a favourite of this family. I found the pickled ginger in an Asian supermarket, but have since noticed a few deli's and supermarket's also sell it.

Steps:
- Place the chicken in a large serving bowl.
- Combine the shallots, chilli, honey, rice vinegar, fish sauce, lime juice, soy sauce and chives. Pour the mixture over the shredded chicken. Keep mix in fridge until ready to serve.
- When ready to serve add the cabbage, carrot, mint leaves, coriander and peanuts to the chicken mix.
- Toss lightly until well combined and finish with a garnish of pink pickled ginger.
- Serve the salad well chilled.
