Easy Shrimp and Creamy Cheesy Grits! The ultimate southern meal! Cheesy grits, spicy shrimp, crispy bacon and fresh green onions make the ultimate comfort food!

1/2-3/4 pound deveined and shelled shrimp
2 tablespoons Olive oil
2 teaspoons Old Bay seasoning
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
2 cups chicken broth
1/2 cup yellow corn grits
2 ounces cream cheese
1 cup shredded sharp cheddar cheese
2 green onion stalks, chopped
2 slices bacon
salt and pepper to taste

Steps:

  • In a large skillet cook two slices of bacon over medium heat until crisp, remove bacon from skillet, roughly chop. Wipe skillet clean and set aside to use later for the shrimp.
  • In a medium to large sauce pan bring chicken broth to a boil, add grits and reduce heat to low. Cover and let grits simmer for 7 minutes, stirring occasionally.
  • When grits have absorbed the liquid add cream cheese, shredded cheese and salt and pepper to taste.
  • Stir mixture well, cover and remove from heat.
  • Place shrimp in a large plastic bag or mixing bowl, add Old Bay, Italian seasoning, garlic powder and smoked paprika and toss until shrimp is coated.
  • Heat olive oil in a large pan over medium high heat. Add shrimp and cook 3 minutes on each side or until shrimp is pink and tender.
  • To assemble the shrimp and grits add a heaping serving of grits to two shallow bowls. Top with shrimp, chopped green onions, chopped bacon and additional pepper.

Creamy Southern Shrimp and Cheese Grits image

I came up with this recipe when I couldn't find anything else that would satisfy my cravings for a gourmet shrimp and grits without spending a ton of money at restaurants. This is simple and delicious, and is made with things we mostly all have in our homes. Use chicken stock in grits, if you prefer.

3 ½ cups water
1 cup quick-cooking grits
3 ounces farmers cheese
2 ounces goat cheese
1 slice American cheese
2 tablespoons butter
2 teaspoons vegetable oil
1 large tomato, diced
2 green onions, sliced
1 clove garlic, minced
1 teaspoon bacon drippings, or to taste
1 pound fresh shrimp - peeled, deveined, and tails removed
salt and ground black pepper to taste
¼ cup half-and-half, or more to taste
1 tablespoon dry sherry
1 green onion (green tops only), sliced

Steps:

  • Bring water to a boil in a large saucepan and slowly whisk in grits; reduce heat to medium-low and simmer until thickened and tender, 5 to 7 minutes, stirring occasionally. Stir farmers cheese, goat cheese, and American cheese into grits until cheese has melted. Set grits aside and keep warm.
  • Melt butter with vegetable oil in a large skillet over medium heat. Cook and stir tomato, 2 green onions, and garlic in the hot skillet until the vegetables are tender, 5 to 7 minutes. Stir in bacon drippings until combined. Cook and stir shrimp with vegetables until bright pink, about 5 minutes; season to taste with salt and black pepper.
  • Mix grits into shrimp mixture and stir in half-and-half until smooth. Simmer the mixture to blend flavors, about 5 minutes, and add sherry. Simmer 3 more minutes before adjusting salt and black pepper. Garnish with sliced green tops of 1 green onion before serving.

I also got to enjoy these shrimp and grits. This recipe is alot easier than it looks and is actually very simple. The lemon, white wine, and chives keep the dish fresh and light. Shrimp and grits can sometimes be too heavy and saturated with butter. Using herbs and citrus gives the dish flavor without packing on the calories.

4 cup Water
1 cup Quick Cooking Grits
1 teaspoon Salt
1/2 teaspoon Ground Black Pepper
1 1/2 tablespoon Butter
1/4 cup Parmesan Cheese
1/4 cup 1% Low Fat Milk
2 clove Garlic
1 tablespoon Extra-Virgin Olive Oil
1 1/2 tablespoon White Cooking Wine
1/4 teaspoon Cayenne Pepper
1 1/2 tablespoon Lemon
1 tablespoon Fresh Chives

Steps:

  • Peel and devein the Medium Shrimp (20).
  • To begin, in a medium saucepan bring Water (4 cup) to a boil. Slowly add in Quick Cooking Grits (1 cup) while whisking continuously. Over medium heat, cook grits for about 4 to 5 minutes until they thicken up.
  • Add in Salt (1 teaspoon), Ground Black Pepper (1/2 teaspoon), Butter (1 tablespoon), Parmesan Cheese (1/4 cup), and 1% Low Fat Milk (1/4 cup). Turn the heat to low until you are ready to serve.
  • Mince the Garlic (2 clove).
  • Add Extra-Virgin Olive Oil (1 tablespoon) to a medium skillet. Over medium heat add in shrimp and cook until translucent and tender about 3 to 4 minutes.
  • Add White Cooking Wine (1 1/2 tablespoon), Minced Garlic and Cayenne Pepper (1/4 teaspoon) to the shrimp and cook for an additional minute, then turn off the heat.
  • Squeeze juice from Lemon (1 1/2 tablespoon).
  • Take shrimp off the heat and stir in Lemon Juice and Butter (1/2 tablespoon). Season with salt and pepper to taste.
  • Chop the Fresh Chives (1 tablespoon).
  • To serve place grits in individual bowls and top with shrimp mixture. You can always serve family style too in a large platter. Drizzle each bowl/or platter with the extra sauce. Garnish with chives.

  • Bring seasoned cooking liquid to full boil, add grits, reduce heat to low, and whisk for 1 full minute. Cover and stir every 3 to 4 minutes until the grits are fully cooked, softened. Heat should remain on low during the entire cooking process. Keep the grits covered while they cook. Once they’re done, add your cheese, stir and adjust seasoning. Cover and keep warm while you make the shrimp.
  • Cook everything over medium heat. Add the red pepper flake to the hot oil so that it infuses, sauté your shallots for about 2 minutes. Add the shrimp, and cook for 1 minute on each side. Add the garlic and butter, lemon juice and wine. Cook an additional minute or two. Toss with parsley and enjoy.
