I use the unused yolks crumbled for topping on a salad, or you can mix with mayo, celery seed, salt, and chives, etc., for a sandwich spread, like a tea sandwich. The time I posted is for using already cooked shrimp and already boiled eggs.

1/2 lb baby shrimp, boiled, peeled, chopped fine (I buy them already cooked at Whole Foods)
1/8 cup mayonnaise
1 dash celery seed
1 dash kosher salt
1/2 tablespoon snipped chives
6 hard-boiled eggs, peeled

Steps:

  • In a medium bowl, mix shrimp, mayonnaise, celery seed, salt and chives.
  • Halve eggs lengthwise; scoop out yolks (save for another use).
  • Fill whites with shrimp mixture.
  • Refrigerate before serving.

12 eggs, hard boiled
1 (6 ounce) can shrimp, drained
1/3 cup mayonnaise (to taste)
1 tablespoon prepared mustard
1 teaspoon onion powder
1 teaspoon lemon juice

Steps:

  • Place eggs in salted water, and bring to a boil. When water starts to boil hard, take off burner, put on cover, and let sit for 15 minutes.
  • Take eggs out, and crack each one as you run under cold water, to peel off the shell.
  • Cut each egg in half, and put the yolks in a bowl. Put egg whites and egg yolks aside for now.
  • In a bowl mix mayonnaise, mustard, onion powder, and lemon.
  • Open can of shrimp, and drain well. Using your hands mince shrimp between your fingers until they are mixed up well (so they are shredded and not in pieces).
  • Repeat this step with the egg yolks too. (I hate big chunks of egg).
  • Add shrimp and eggs to the mayonnaise/mustard mixture in the bowl,and mix together well.
  • Stuff egg whites with mixture.
  • Put on a serving plate, and sprinkle with paprika to decorate.
  • Cover with Saran Wrap, and chill until ready to serve.

1/3 cup medium-sized cooked and de-veined, optional additional shrimp shrimp
6 large hard-boiled and peeled eggs
2 tablespoons mayonnaise
2 tablespoons sour cream
2 teaspoons dijon mustard
1 teaspoon fresh lemon juice
optional fresh dill

Steps:

  • Peel and de-vein shrimp. Finely chop and set aside. Halve eggs lengthwise. Remove yolks and place in a small bowl. Mash yolks with a fork and stir in chopped shrimp, mayonnaise, sour cream, mustard and lemon juice. Add salt and pepper to taste. Fill egg whites evenly with yolk mixture. Garnish with additionally shrimp and dill, if desired. Store covered in refrigerator.

1/4 cup chopped sweet red pepper

Bake 10 minutes. , Meanwhile, in a large skillet, heat butter over medium-high heat. Add red pepper, onion, garlic, Italian seasoning, salt and chopped stems; cook and stir 2-3 minutes or until tender. Add cream cheese; cook and stir until melted. Stir in shrimp and bread crumbs., Drain liquid from caps; fill with shrimp mixture. Sprinkle with Parmesan cheese. Salt and freshly ground black pepper
3 tablespoons peanut oil, butter or neutral oil, like grapeseed or corn
8 eggs
2 tablespoons soy sauce
1 tablespoon sesame oil
1/2 cup chopped scallions
Chopped fresh cilantro leaves for garnish, optional

Steps:

  • Devein shrimp if you like; if large, cut into bite-size pieces. Sprinkle with salt and pepper.
  • Put oil or butter in a large skillet, preferably nonstick or cast iron, and turn heat to medium. When hot, add shrimp. Cook, stirring, until shrimp is somewhat pink. Beat eggs in a bowl with soy sauce and sesame oil.
  • Turn heat to medium high and add eggs and scallions. Cook, scraping pan with a rubber spatula. Fold eggs over themselves, breaking up curds. If mixture clumps, remove it from heat and stir, then return to heat.
  • When eggs are creamy, adjust seasoning, garnish if you like and serve immediately.

1/2 cup mayonnaise or salad dressing
1 teaspoon seafood seasoning (from 6-oz container)
1/2 teaspoon paprika
1/2 teaspoon ground mustard
1/2 cup cooked salad shrimp, chopped (4 oz)
1 can (6 oz) lump crabmeat, drained
3 slices bacon, crisply cooked, crumbled
2 tablespoons chopped fresh parsley

Steps:

  • Place eggs in 4-quart Dutch oven. Add cold water until it reaches 1 inch above eggs. Heat to boiling; remove from heat. Cover and let stand 18 minutes. Immediately cool eggs about 10 minutes in cold water to prevent further cooking.
  • Tap egg to crack shell; roll egg between hands to loosen shell, then peel. Cut eggs lengthwise in half. Slip out yolks into medium bowl; reserve egg white halves. Mash yolks with fork. Stir in mayonnaise, seasoning, paprika and ground mustard until well blended. Stir in shrimp and crab.
  • Spoon heaping teaspoonfuls of yolk mixture into egg white halves. Refrigerate at least 30 minutes before serving. Just before serving, sprinkle with bacon and parsley.

"Deviling" an egg usually refers to seasoning the cooked yolk with mustard or anything else that is spicy but not necessarily hot. Then you add your favored flavorings. If I had to pick a favorite, it would be the deviled egg with shrimp. In this preparation, a fairly basic combo is jazzed up with chopped shrimp and olives; I like green, sometimes even pimiento-stuffed, for this.

1/4 pound shrimp, peeled and deveined
4 eggs
2 or 3 tablespoons chopped good olives
1 tablespoon minced onion
2 tablespoons chopped parsley leaves, more for garnish
1 teaspoon Worcestershire sauce
1 teaspoon extra virgin olive oil
Salt and pepper to taste
2 tablespoons mayonnaise.

Steps:

  • Bring a small pot of water to a boil. Add shrimp and cook until pink, about 2 minutes. Remove shrimp with a slotted spoon. Let cool a bit, then chop.
  • Add eggs to pot, adding water, if necessary, to cover. Bring water just to a boil, then shut off heat. Cover pot and let eggs rest for 9 minutes, 10 minutes if eggs are large. Plunge eggs into a bowl of ice water. When cool enough to handle, peel.
  • Halve eggs lengthwise and remove yolks. Mash yolks of 3 eggs in a medium bowl. Add chopped shrimp and remaining ingredients and mix well.
  • Mound this mixture into egg whites. Crumble remaining yolk on top and garnish with parsley. Serve, or cover with plastic and refrigerate for up to a day; bring back to room temperature before serving.

3 small eggplants
¾ cup seasoned bread crumbs
¼ cup all-purpose flour
½ teaspoon minced garlic
½ teaspoon minced onion
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried basil
1 egg
2 tablespoons water
2 tablespoons garlic flavored olive oil
1 onion, chopped
1 ½ tablespoons minced garlic
15 peeled and deveined jumbo shrimp
¾ pound chopped raw shrimp
1 pinch garlic powder
1 pinch onion powder
1 teaspoon dried basil
¼ teaspoon crushed red pepper flakes
½ cup dry white wine
½ cup shredded low-fat mozzarella cheese
½ cup seasoned bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Peel 2 of the eggplants and cut lengthwise into 1/4-inch-thick slices. Dice the remaining eggplant and any scraps; soak the diced eggplant in lightly-salted, cold water. Sprinkle the eggplant slices with salt and set aside as you prepare the remaining ingredients.
  • Pour 3/4 cup of seasoned breadcrumbs into a bowl; set aside. Stir together the flour, 1/2 teaspoon minced garlic, 1/2 teaspoon minced onion, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/2 teaspoon basil in a bowl; set aside. Beat the egg with 2 tablespoons of water in a separate bowl. Rinse the salt off of the eggplant slices and wipe off excess water. Coat the eggplant slices in the flour mixture, dip into the egg, and press into the bread crumbs. Place the eggplant slices onto the prepared baking sheet.
  • Bake in the preheated oven until the eggplant slices are golden brown and tender, about 10 minutes. Turn once as they cook to brown both sides; set aside and allow to cool until you can easily handle.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in 1 chopped onion and 1 1/2 tablespoons minced garlic; cook and stir until the onion is soft and translucent, about 5 minutes. Add the whole jumbo shrimp and cook until pink and no longer translucent in the center, about 5 minutes. Remove the shrimp and set aside. Stir the diced shrimp into the skillet and cook until no longer translucent. Season with 1 pinch garlic powder, 1 pinch onion powder, 1 teaspoon basil, red pepper flakes, and the white wine. Drain the water from the diced eggplant and squeeze out the excess water. Stir the eggplant into the shrimp mixture and bring to a boil. Reduce heat to medium, cover, and cook until the eggplant is soft, about 10 minutes; stir in the mozzarella cheese and 1/2 cup of bread crumbs until the cheese has melted.
  • To assemble, place one jumbo shrimp onto the center of each eggplant slice. Spoon about 2 tablespoons of the stuffing over each jumbo shrimp. Fold the ends of the eggplant over the stuffing and secure with toothpicks. Place the eggplant rolls onto the baking sheet.
  • Bake in the preheated oven until the eggplant rolls are hot in the center, about 5 minutes. Remove the toothpicks before serving.

½ cup olive oil, divided

8 medium shrimp - peeled, deveined and chopped
⅛ cup chopped fresh basil

½ cup white wine

½ cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Scoop out the flesh of the eggplant, chop, and reserve. Coat shells with olive oil, and season with salt and pepper; set aside.
  • Heat 1/4 cup olive oil in a large, deep skillet over medium high heat. Saute shrimp, basil and garlic until shrimp turns pink, about 1 minute. Stir in the reserved chopped eggplant. Season with salt and pepper. Pour in wine, and cook 5 minutes.
  • Transfer to a large bowl, and mix in the bread crumbs and 1/4 cup Parmesan cheese. If mixture is dry, stir in more olive oil. Stuff mixture into eggplant shells, and sprinkle top with remaining Parmesan cheese.
  • Bake in preheated oven for 30 to 40 minutes, or until eggplant is tender.
