Szechuan Dry Fried Green Beans image

An authentic Szechuan dish, served in the best Chinese restaurants. You can serve it as an entree in a multi-course Chinese dinner or as an unusual vegetable dish in a western style meal.

1 lb green beans, cut 2 inches
deep frying oil, heated to 325 to 350 degrees f (sala or peanut oil)
1 slice fresh ginger, minced (about 1/2 - 1 teaspoon)
1/4 lb ground pork
1/4 cup cha choy, chopped
1 teaspoon salt
1 tablespoon dark soy sauce
1 tablespoon sugar
2 tablespoons chicken stock
2 scallions, minced
2 tablespoons cider vinegar (or Chinese red vinegar)
1 teaspoon sesame oil

Steps:

  • *Regularor Chinese long beans.
  • **Chachoy is a moderately spicy pickled Chinese root vegetable packed in salt and chilies.
  • It comes in cans.
  • It should be rinsed in cold running water to remove the seasonings.
  • Unused cha choy keeps for a long time refrigerated in a zipper bag.
  • Deep fry the beans until they're well wrinkled, about 3- 4 minutes.
  • Pour into a sieve to drain.
  • Heat 1- 2 T oil in a wok.
  • Stir in the ginger and add the pork.
  • Stir fry until the pork is just cooked.
  • Stir in the cha choy, then the beans to blend.
  • Pour in the sauce and continue to stir until it dries up.
  • Finally, stir in the scallions, vinegar and sesame oil.

  • Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 2 tablespoons of the oil and add half the beans. Reduce the heat to medium and pan-fry, turning the beans with a metal spatula or tongs, until they have brown spots and begin to wrinkle, 3 to 4 minutes. Transfer to a plate with a slotted spoon. Pan-fry the remaining beans with 1 tablespoon of the oil in the same manner and add to the plate.
  • If the unwashed wok is dry, swirl in the remaining 1 tablespoon of oil over medium heat. Add the ginger and ground pork and stir-fry until the pork is no longer pink, breaking it up with a spatula, about 2 minutes.
  • Stir the broth mixture and swirl it into the wok. Bring to a boil over high heat and add the beans, tossing to combine, and cook until most of the liquid has evaporated, 1 to 2 minutes. Add the vinegar, sesame oil and scallion and remove from the heat. Place on a serving platter. Serve at room temperature.

  • Heat your wok over high heat until just starting to smoke, and add the green beans and salt. Immediately lower the heat to medium low, and sear the green beans for about 20 minutes, stirring occasionally. You want to see small scorch marks on the green beans. During this process, gather the rest of the ingredients and have them ready. Once the beans are somewhat tender, take them out of the wok and set aside.
  • Heat the oil in your wok over medium high heat and brown the pork. Add the garlic and chili, and stir for 30 seconds. Add the sui mi ya cai, and stir everything together. Cook for another minute.
  • Toss in the seared green beans, cooking wine, soy sauce, sugar, and sesame oil. Crank the heat back up to high and stir-fry for a final minute. Serve immediately.
