1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
1 -30 ounce egg beaters southwestern egg substitute
1 (4 1/3 ounce) bag hormel real bacon bits
1 (7 ounce) box sausage links (Brown N Serve, Turkey or Maple-lite)
2 (8 ounce) bags KRAFT Mexican Style Shredded Four Cheese with a Touch of PHILADELPHIA

Steps:

  • Preheat oven to 375.
  • Generously spray a 9"x13" baking dish with cooking spray. Pour bag of shredded potatoes evenly in bottom of casserole. Pour eggbeaters over potatoes.
  • Microwave sausage links for 1 minute and cut into bite sized pieces, then add to potato/egg mixture.
  • Evenly sprinkle cheese over mixture, then sprinkle with bag of bacon over top.
  • Bake for 30-40 minutes.

20 ounces Simply Potatoes Diced Potatoes with Onion
12 ounces corned beef
3 cups cooked green cabbage, shredded
10 slices swiss cheese, shredded
5 tablespoons Dijon mustard

Steps:

  • Put simply potatoes diced with onion into oil sprayed 9 x 13 pan.
  • Make a layer of shredded cabbage on top of potatoes with onions.
  • Make a layer of corn beef on top of cabbage.
  • Spread mustard around on top of corn beef.
  • Make a layer of cheese on top of simply potatoes with onions.
  • Bake in 350 oven for 30 minutes covered until cheese melts and is heated thru. Serve with more mustard.

1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1 quart fat-free half-and-half
1 lb breakfast sausage, browned

Steps:

  • Combine all ingredients and add salt and pepper to taste and cook over low heat until potatoes are tender. Sauce will thicken as it cooks. When serving, add baked potato type toppings as you choose. You can substitute heavy cream for a richer flavor but you add calories too! This can also be cooked in a crockpot on low all day while at work!

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 lb regular cut bacon
6 eggs
1/3 cup shredded cheddar cheese
1 tablespoon half-and-half cream

Steps:

  • Preheat oven to 350 degrees F.
  • Turn a large muffin tin upside down. Place a slice of bacon down the middle of the inverted cup. Place another piece of bacon perpendicular to the first piece. Continue to place bacon slices on cups slightly overlapping each piece until the cup is covered in bacon. Repeat on remaining cups until all bacon is used.
  • Place bacon cups in oven and cook 20-30 minutes or until bacon is golden brown.
  • Remove from oven and set aside to cool.
  • Cook potatoes in skillet according to package instructions. Set aside.
  • Beat eggs and half-and-half in a medium bowl.
  • Scramble eggs in a non-stick skillet over medium low heat until cooked through.
  • Assemble breakfast parfaits by spooning potatoes into bacon bowls and top with eggs and a sprinkle of shredded cheddar cheese.
