SLOW COOKER MASHED POTATOES
Though I love mashed potatoes, I've always thought of them as a fairly laborious thing to make.

- Combine potatoes, chicken broth (see note below), butter, and salt in a slow cooker. Stir together, then cover and cook on high for 3-4 hours, until potatoes are tender and fluffy-looking. Mash with a potato masher or fork (or put them through a potato ricer, for super smooth potatoes), then add sour cream, chives or scallions, heavy cream or milk, or whatever ingredients you'd like. Season to taste, then serve and enjoy!Note: I used unsalted chicken broth. If you use full salt, reduce the salt to 1 teaspoon, then season to taste at the end. If you wish to skip the chicken broth, substitute water instead.
SLOW COOKER MASHED RED POTATOES WITH PARMESAN
When there's no space on the stovetop to boil and mash potatoes, braise and mash them in a slow cooker - an easy and forgiving one-pot method. This rustic version has big flavors, thanks to the garlic that's cooked and smashed with the potatoes. The five garlic cloves lends a fairly assertive flavor, so decrease it to 2 or 3 cloves if you want a more subtle effect. You can leave the dish on warm for up to 3 hours after you mash the potatoes, just stir in the Parmesan and parsley right before serving.

- Coarsely mash the potatoes and garlic with a potato masher. Just before serving, fold in the Parmesan, parsley and remaining 1 tablespoon lemon juice. Taste for seasoning and add more salt and pepper if necessary.

This hands-off, one-pot recipe makes creamy, slightly tangy mashed potatoes, and, unlike most mashed potato recipes, this one doesn't call for milk. The potatoes give off enough moisture as they braise, so just some extra butter and sour cream is enough to make them smooth. After mashing, the potatoes hold very well on warm for up to 3 hours: Just add the chives and give the potatoes a quick stir before serving.

- In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency.
- Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.

V'S DO-AHEAD SLOW COOKER MASHED POTATOES
After several failed recipe attempts, I finally did it. I came up with a way to make mashed potatoes in the slow cooker. I'm so excited. This will definitely help on time during the last minute craze to get dinner on the table and have the potatoes still warm.

Steps:
- Place the potatoes, water, and butter into a slow cooker.
- Season with salt, garlic powder, and pepper.
- Cover, and cook High for 4 hours.
- Do not remove the excess water from slow cooker. This adds to the creamy texture.
- Mash potatoes with a masher or electric beater, adding the desired amount of warm milk to achieve a creamy consistency.
- Keep warm on low until serving.
- My slow cooker has a warm setting which it automatically goes to once cooking time has been reached. Potatoes keep consistency for a couple of hours after mashing. Just keep the lid on the slow cooker and serve directly from there.

- First, peel and cube the potatoes. Throw them in the slow cooker with the vegetable stock (or water) and butter. Cut the butter into small cubes before adding. Cover and cook on high for 4 hours and 30 minutes.
- Once the cook time is up, mash the potatoes. I used a potato masher. You could also use an immersion blender, potato ricer, etc. But I think the masher is the easiest option.
- Add the sour cream and milk and stir to combine. If it still seems too thick to you, add more milk until you get the consistency you prefer. Taste and add as much salt and pepper as you think it needs. Top with chives before serving, optional.
