2 ½ lbs boneless skinless chicken thighs
20oz can canned pineapple
⅓ C packed brown sugar
⅓ C soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons cornstarch
3 tablespoons water

Steps:

  • In your slow cooker, add chicken, brown sugar, soy sauce, crushed pineapple, salt, and pepper.
  • Mix together.
  • Set slow cooker high 4 hours.
  • Turn off.
  • Take out chicken and set aside.
  • Make a slurry whisking cornstarch and water together in a bowl.
  • Add to slow cooker and whisk to combine. (If you want your sauce thicker, add more by combining equal parts water and cornstarch, a little at a time.)
  • Return chicken to slow cooker.

4 chicken thighs, trimmed
1 cup pineapple chunks
¾ cup pineapple juice
½ cup soy sauce
⅓ cup brown sugar
2 tablespoons ketchup
1 clove garlic, minced

Steps:

  • Put flour into a shallow bowl. Dredge chicken thighs in the flour to coat; tapping thighs to remove excess flour.
  • Arrange chicken thighs in the bottom of your slow cooker crock; top with pineapple chunks.

8 bone-in, skin-on chicken thighs
1 cup pineapple juice
1/2 cup chicken broth
1/4 cup brown sugar, packed
3 tablespoons reduced sodium soy sauce
2 tablespoons honey
2 tablespoons apple cider vinegar
1 teaspoon Sriracha, optional
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1 (8-ounce) can pineapple chunks, juices reserved
1 (8-ounce) can crushed pineapple, juices reserved
2 tablespoons cornstarch
1 red bell pepper, chopped
1 red onion, chopped
1/2 teaspoon sesame seeds
2 tablespoons chopped fresh parsley leaves

Steps:

  • Season chicken with salt and pepper, to taste. Melt butter in a large skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat and set chicken aside. In a large bowl, combine pineapple juice, chicken broth, brown sugar, soy sauce, honey, vinegar, Sriracha, garlic and ginger. Place chicken thighs into a 6-qt slow cooker. Stir in pineapple juice mixture. Top with pineapple chunks, crushed pineapple and reserved juices. Cover and cook on low heat for 5-6 hours or high for 2-3 hours, basting every few hours. ⅔ cup brown sugar
¼ cup lemon juice
2 Tablespoons soy sauce

½ teaspoon red pepper flakes ((optional, more or less depending on heat level you like))

1 small yellow bell pepper, cut into 1-inch pieces
2 tablespoons cornstarch

Steps:
