Tomato- and pepper-based ranchero sauce works great for dishes other than Huevos Rancheros. We've added it to the slow cooker with everyone's favorite easy app - chicken wings - for a savory, less fiery, take on wings.

3 lb chicken wing sections
2 packages (0.85 oz each) Old El Paso™ chicken taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
1 can (10 oz) Old El Paso™ enchilada sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 medium onion, quartered
2 medium serrano chiles, seeds and stems removed
5 cloves garlic
1 teaspoon ground cumin

Steps:

  • Spray 6-quart slow cooker with cooking spray. Add chicken wings and taco seasoning mix; toss to coat.
  • Add remaining ingredients to blender. Cover; blend 30 to 60 seconds or until smooth.
  • Pour tomato mixture over chicken in slow cooker. Stir to coat chicken. Cover; cook on Low heat setting 3 1/2 to 4 1/2 hours or until chicken is cooked through (at least 165°F).
  • Set oven control to broil. Spray large rimmed sheet pan with rack with cooking spray. Place chicken in single layer on rack in pan; reserve sauce. Broil 4 inches from heat 5 to 7 minutes, turning once, until browned.
  • Stir sauce in slow cooker; serve with chicken wings.

Crock Pot Ranchero Chicken is slow cooked chicken in a zesty Ranchero Sauce. Use for tacos, enchiladas, nachos, or tostadas!

2lbs chicken breasts
2 cups chicken broth
1 teaspoon salt
1/2 teaspoon pepper + shake red pepper flakes
juice of 1/2 lime
1 Tablespoon extra virgin olive oil
1 large shallot or 1/2 onion, chopped
1 green bell pepper, chopped
1 jalapeño pepper, seeded and minced
3 cloves garlic, minced
2 teaspoons cumin
1/4 teaspoon (or more) cayenne pepper
4 cups chicken broth
15oz can crushed tomatoes
1/3 cup chopped fresh cilantro

Steps:

  • For the Ranchero Sauce: Heat olive oil in a large skillet over medium-high heat. Add shallot, bell pepper, and jalapeno pepper, season with salt and pepper, then saute until vegetables are tender, 5 minutes. Add garlic, cumin, and cayenne pepper then saute for 1 more minute. Add chicken broth and crushed tomatoes then turn heat to high to bring liquid to a boil. Reduce heat slightly then boil, stirring often, until sauce reduces by half (3 cups,) about 20 minutes. (A splatter screen is very helpful, especially near the end.) Taste then add salt and pepper if necessary, and then stir in fresh cilantro.
  • To a large, 5-6 quart crock pot, add the chicken broth, salt, pepper, red pepper flakes, lime juice, chicken breasts and 2 cups Rancher Sauce. Cover and cook on low for 4-5 hours then shred chicken and place back in the juices to cook on low for 1 more hour. Scoop chicken into a storage container then mix with remaining Ranchero Sauce. Use chicken as filling for tacos, enchiladas, nachos, or tostadas.

3/4 cup chicken broth
1 envelope ranch salad dressing mix

Optional: Shredded cheddar cheese, crumbled cooked bacon and chopped green onions

Steps:

I do not remember where this recipe came from, originally it called for beef chuck. I've modified it and now make it with chicken. It's always well received at my house. You can make it mild or hot, depending on the type of salsa you choose. Serve with a salad and some warmed up tortillas.

4 boneless skinless chicken breasts, cut into strips
2 tablespoons olive oil
1 cup chopped onion
1 clove garlic, minced
1 (4 ounce) can green chilies
1 1/2 cups chicken broth
1 (7 ounce) can green chili salsa
1 cup cheddar cheese, cubed
3 cups hot cooked rice

Steps:

  • Saute chicken over medium heat,in olive oil about 5 minutes.
  • Add onions and continue cooking until chicken is done and onions are soft (about 10 more minutes).
  • Add garlic, green chiles and broth.
  • Bring to boiling.
  • Reduce heat and simmer, covered for 30 minutes.
  • Stir in salsa.
  • Bring to a boil.
  • Remove from heat.
  • Gently fold in cubed cheddar cheese.
  • Serve immediately over beds of rice.

1 ½ pounds potatoes, peeled and cubed
1 medium onion, chopped
1 (4 to 6 pound) whole roasting chicken
6 cloves garlic, halved lengthwise
2 tablespoons rosemary
freshly cracked salt and pepper to taste

Steps:

  • Place potatoes in the bottom of a slow cooker. Add onion over the top of the potatoes.
  • Remove the chicken parts inside the cavity and pat the outside of the chicken dry. Slice deep, garlic clove-width slits into your chicken with a knife. Make 4 cuts on each side of the chicken, and 1 in each of the drumsticks. Stick a sliver of garlic deep into each cut. Place the remaining chunks of garlic into the cavity.
  • Starting on the back of the chicken, season generously with about 1/2 of the rosemary and cracked salt and pepper. Add some seasoning inside the chicken's cavity as well. Flip the chicken and place it breast side up in the slow cooker on top of the potatoes and onions. Season the top of the chicken generously with the remaining rosemary and more cracked salt and pepper.
  • Cook on Low until the chicken is cooked through completely and the juices run clear when the chicken is cut, 8 to 10 hours, depending on the size. Serve with the potatoes and onions from the pot.
