Slow Cooker Turkey Meatballs image

Provided by Giada De Laurentiis

Time 5h45m

Yield 25

Number Of Ingredients 14

Two 28-ounce cans crushed tomatoes
2 teaspoons dried oregano
1 teaspoon kosher salt.
1/2 teaspoon freshly ground black pepper (plus more to season)
3 large cloves garlic (smashed and peeled)
1 3 inch piece Parmesan cheese rind
1/2 cup plain breadcrumbs
1/2 cup finely grated Parmesan cheese (plus more for serving)
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 large egg (beaten)
2 cloves garlic (minced)
1 pound ground dark turkey meat
1 pound spicy Italian turkey sausage links (casings removed)

Steps:

  • For the Sauce: In a 4 quart slow cooker, add the cans of tomato, dried oregano, salt, pepper and garlic cloves. Stir to combine and set aside.
  • For the meatballs: In a large bowl, combine the breadcrumbs, Parmesan, salt, pepper, egg, and garlic. Using a wooden spoon, stir to blend. Add the ground turkey and sausage meat. Using your fingers, gently mix all the ingredients until thoroughly combined. Using a 1-ounce cookie scoop or a small ice cream scoop, form the meat mixture into 1 1/2-inch balls (24 to 26 meatballs).
  • Add the meatballs to the slow cooker with the tomato mixture. If you need to make a second layer of meatballs, gently press on the first layer to submerge and add the next layer on top. It's okay if they aren't fully covered in sauce.
  • Nestle the parmesan rind into the sauce. Cover and cook for 5 hours on high. After the 5 hours, remove the cover and cook an additional 30 minutes on high to reduce the sauce slightly. Serve with freshly grated parmesan.

  • Place two oven racks in the upper and lower thirds of the oven. Preheat the oven to 450 degrees F. Lightly grease 2 baking sheets with cooking spray, or line with parchment paper or a silpat mat.
  • In a large mixing bowl, whisk together the milk and eggs until evenly combined. Add the ground turkey, turkey sausage, breadcrumbs, cheese, parsley, salt, pepper, and garlic powder. Lightly mix with a fork or your fingers, just until combined, being careful not to compact the meat. With a scoop or spoon, scoop the meat, then shape into 1 1/2-inch meatballs. Arrange on the prepared baking sheets. (You will have about 38 meatballs total).
  • Bake the meatballs for 3 minutes, remove the pans from the oven and flip the meatballs, then return the pans to the oven, switching each pan from bottom to top. Bake 3 additional minutes, then remove from the oven. The exterior of the meatballs should be lightly browned, but they will not be cooked through.
  • Lightly coat a 5-quart or larger slow cooker with cooking spray. Arrange a layer of meatballs over the bottom, pour on half the sauce, then stack any remaining meatballs on top. Pour on the remaining sauce. Cover and cook on high for 2 hours or low for 4 hours, until the meatballs are cooked through and reach an internal temperature of 160 degrees F. Serve warm with pasta, on buns, over polenta, or enjoy alone as an appetizer.
