Sweet Bourbon Ham image

My dad made this ham for Christmas about 15 years ago, and we loved it. I haven't made a different ham since and haven't loved one as much.

1 (8 1/2 pound) cooked bone-in ham (shank end)
40 whole cloves
1 cup firmly packed brown sugar
¼ cup bourbon whiskey
1 ½ teaspoons freshly ground black pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove skin and excess fat from ham, leaving a fat layer about 1/4-inch thick. Score ham in a diamond pattern with a sharp knife. Push cloves into the center of the scored diamond shapes. Place ham with cut side down into a roasting pan.
  • Bake ham in the preheated oven until an instant-read meat thermometer inserted into the thickest part of the meat, not touching bone, reads 125 degrees F (52 degrees C), about 2 hours.
  • Combine brown sugar, whiskey, and black pepper in a bowl until glaze is smooth.
  • Raise oven temperature to 375 degrees F (190 degrees C).
  • Baste ham with 1/3 the whiskey glaze. Return to oven and bake until internal temperature reaches 140 degrees F (60 degrees C), basting ham with whiskey glaze every 10 minutes. Cover ham loosely with a tent of aluminum foil if ham browns too quickly.
  • Let ham rest for 15 minutes before carving.

This is a delicious combo of about five recipes I found while researching for my first Thanksgiving ham. The empty baking pan afterwards was my best compliment!

1 (5 pound) boneless ham
⅓ cup bourbon whiskey
½ cup packed brown sugar
1 (8 ounce) can crushed pineapple in juice
½ cup honey
3 cloves garlic, minced
1 ½ cups water
1 (8 ounce) can pineapple rings

Steps:

  • Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
  • Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

Grilled Bourbon Ham image

A charcoal grilled ham that your guests will devour. This recipe will work with any fully cooked ham. It can be canned, smoked, or whatever. I recommend you not use a sliced ham because the pre-cut slices will dry out. The picture I uploaded is a 5 lb canned ham but I have also used the same recipe with other larger boneless and bone-in hams.

1 ham, 5-12 lbs, depending on how many people you are serving
1/2 cup clove
1 cup orange juice, with pulp
1 cup honey
1/3 cup dark molasses
1/2 cup dark brown sugar
2 tablespoons whole grain Dijon mustard (or whatever your favorite mustard happens to be)
1 cup Bourbon
20 ounces pineapple slices (1 can of rings, packed in pineapple juice)

Steps:

  • Remove the ham from its wrapping. If it's a canned ham, rinse off any gel and pat dry with paper towel.
  • Score the ham on the top and sides into a 1-inch diamond pattern. Then push a clove into each square.
  • Preheat the grill for indirect cooking to 225°F To do this, place a disposable aluminum pan in the middle of the charcoal grate and make two small piles of charcoal on either side of the pan. You can also add some wood for extra flavor. I add a few Kingsford apple wood chunks when I'm grilling a ham. Light the charcoal and close the lid but make sure the air vents are open enough to keep the charcoal burning at a low heat. If your grill doesn't have a built-in thermometer, you can place an oven thermometer on the warming rack. Also, during the cooking, periodically check the temperature and add a few extra coals as necessary in order to maintain heat.
  • Brush the ham with 1 cup orange juice. Use less or more according to the size of your ham.
  • Place the ham over the aluminum pan on the grill and shut the lid. Grill for 3-5 hours, depending on the size of the ham and the color you want it to be.
  • While the ham begins to cook, make the glaze. Combine all the other ingredients, except for the pineapple rings, in a saucepan and cook over a low heat, stirring for about 20 minutes as the glaze thickens. Then remove saucepan from heat and let cool. It will continue to thicken as it cools.
  • Glaze the ham every 10-15 minutes during the final hour of grilling. During the last 1/2 hour of cooking, place the pineapple rings on the ham and secure them with toothpicks.
  • When the ham is done grilling, remove it from the grill and place it on a cutting board. Let it rest for 5 minutes. Carve and serve.

  • Take ham out of plastic and score (lightly cut) the top of the skin with a sharp knife. Make large cuts in one direction across the ham and then in the other direction to form a pattern of large diamonds. Place it in a large roasting dish fat-side up and make sure it is brought to room temperature if refrigerated - so let stand for approximately 1 hour, if refrigerated. Pour and brush the glaze over the ham and add 1 cup of water with 3 tbsp of bourbon to the bottom of the roasting pan before baking. Pop it into the oven on the lower rack.
  • Bake for 90 minutes, basting with pan juices every 30 minutes. Check for internal temperature – it should reach 140°F on a meat thermometer and the meat should be tender and falling apart when done. When done, remove from oven, tent loosely with foil and let stand for 15 minutes.

  • Gather your ingredients. Note that you'll want your half ham with the cut side down for every step of this process. Set your smoker for 225 degrees, indirect. I used maple and cherry wood for this smoke. Note that you can do all of the steps up until the smoke as much as 24 hours ahead of time, and I'd suggest at least 12 hours to let it "marinate".
