1 1/2 lbs catfish fillets
2 cups Chardonnay wine
1 tablespoon salt
1 small onion, chopped
2 tablespoons capers
2 tablespoons liquid smoke
1 tablespoon creole seasoning salt
1 dash Tabasco sauce
2 teaspoons Worcestershire sauce
3/4 cup mayonnaise
1 tablespoon horseradish (or to taste)
extra whole capers (to garnish)

Steps:

  • Cut fish filets into 2" pieces and place in large skillet with wine and salt. Poach gently until thoroughly done, about 15 minutes.
  • Drain fish well, discarding wine, and place in food processor with onions, capers, and seasonings. Remove to bowl and blend in mayonnaise and horseradish, adding a bit at a time until desired consistency is reached. Should not be too thin.
  • Chill overnight. Sprinkle with extra capers, and serve with crackers or crostini.

1 (8 ounce) package cream cheese, softened
6 ounces smoked salmon, chopped
¼ cup capers, or to taste
2 tablespoons chopped green onion
1 ½ teaspoons chopped fresh dill
¼ cup heavy whipping cream
3 dashes Worcestershire sauce
3 drops hot pepper sauce
1 squeeze fresh lemon juice

Steps:

  • Process cream cheese in a food processor to soften completely; add salmon, capers, green onion, dill, cream, Worcestershire sauce, hot pepper sauce, and lemon juice. Process the mixture again until creamy and smooth.

1 lb smoked catfish, broken into small pieces
8 ounces cream cheese
2 tablespoons unsalted butter
1 tablespoon onion, minced
1 tablespoon white wine
1 tablespoon fresh lemon juice
1 tablespoon hot pepper sauce
1 tablespoon fresh dill, chopped
kosher salt
fresh cracked black pepper

Steps:

  • Place all ingredients in a mixing bowl and mix well. Season with salt and pepper.
  • Chill for an hour or so and serve with crackers or chips.
  • Garnish with either minced fresh chives or parsley.
