Smoked Salmon Pasta with Scotch image

Delicate smoked salmon in a creamy reduction sauce spiked with Scotch -- full of flavor!

1 (16 ounce) package dry penne pasta
1 tablespoon olive oil
1 medium onion, finely chopped
2 cups fish stock
2 cups white wine
3 tablespoons Scotch whiskey
½ pound chopped smoked salmon
2 cups heavy cream
freshly ground black pepper to taste
½ cup grated Parmesan cheese for topping
1 bunch Italian flat leaf parsley, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Place penne pasta in the pot, cook 8 to 10 minutes, until al dente, and drain.
  • Heat the olive oil in a skillet over medium heat, and cook the onion until tender. Pour in the fish stock and white wine, and cook until reduced by 1/2.
  • Remove the skillet from heat, and pour in the Scotch whiskey. Using a long match, carefully ignite the Scotch. Once the flame had subsided, return the skillet to medium heat, and mix in the salmon. Stir in the cream, and bring the mixture to a boil. Continue to cook and stir until thickened.
  • In a large bowl, toss the cooked penne pasta with the salmon mixture. Season with pepper, and top with Parmesan cheese and parsley to serve.

This is an awesome pasta that is quick to make and very satisfying. I first copied a recipe from Bon Appetit and then combined it with several recipes from my cookbooks. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

1/4 cup olive oil
1 cup mushroom, sliced
2 shallots, sliced thinly
1 garlic clove, minced
1 pinch cayenne
1/3 lb smoked salmon, cut into 2-inch pieces
1/4 cup white wine
1 cup heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest, grated
3 tablespoons capers, drained
1 teaspoon parsley
1 lb linguine or 1 lb spaghetti
1/2 cup parmesan cheese, freshly grated
salt and pepper

Steps:

  • Cook Pasta as directed. Drain.
  • Meanwhile, in a large skillet, heat oil. Add mushrooms, shallots, garlic and cayenne. Saute until veggies are tender.
  • Add white wine and bring to boil. Add cream and bring to boil. Let simmer for 3minutes.
  • Add lemon juice, lemon zest and salmon. Bring to boil and let simmer 1 to 2 minutes.
  • Add capers, parsley, salt and pepper. Mix well.
  • Pour salmon mixture onto hot drained pasta. Toss to mix. Add Parmsean and toss well. Let set for 2 minutes as pasta will absorb any extra liquid.
  • Serve.

11 ounces multi-colored fusilli pasta
1 small carrot, grated
1 small onion, chopped
½ cup diced cucumber
½ cup diced celery
8 ounces smoked salmon, cut into 3/4 inch pieces
⅓ cup mayonnaise
2 teaspoons lemon juice
1 pinch salt
1 pinch ground black pepper
1 pinch cayenne pepper

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the fusilli; return to a boil. Cook the pasta uncovered, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well and rinse with cold water. Transfer cooled pasta to a large bowl.
  • Toss the carrot, onion, cucumber, celery, and salmon with the pasta; mix well.
  • Combine the mayonnaise, lemon juice, salt, pepper, and cayenne pepper in a small bowl; mix well. Pour sauce over pasta mixture. Mix well to coat evenly.

½ onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons garlic powder
2 cups skim milk
½ cup grated Romano cheese
1 cup frozen green peas, thawed and drained
½ cup canned mushrooms, drained
10 ounces smoked salmon, chopped
1 (16 ounce) package penne pasta

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
  • Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.

A really quick, easy sauce for 'pasta asciutta,' which means 'dry pasta.' It's not a dish over-loaded with sauce, but one that appreciates the simple smokiness of good smoked salmon.   • Fill a large pot with lightly-salted water and bring to a rolling boil. Stir the linguine into the water and return to a boil. Cook uncovered until the pasta has cooked through but is still firm to the bite, about 11 minutes; drain, reserving 2 tablespoons of the water.

Despite what an Italian might otherwise recommend, I like to serve this dish with freshly grated Parmesan cheese.

1/4 cup extra-virgin olive oil
1 small onion, chopped
1/4 pound smoked salmon, chopped
1 cup heavy cream (a.k.a. whipping cream)
3 tablespoons capers, drained
Salt and freshly ground black pepper to taste

1 pound pasta, cooked al dente, drained (reserving about 1/4 cup of the cooking water), and tossed with olive oil

Steps:

  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté until translucent, but not browned. Add the smoked salmon and continue cooking just until the salmon turns opaque, 1 to 2 minutes. Pour in the cream and add the capers. Taste and adjust seasoning with salt and pepper. Be careful how much salt you add because the smoked salmon and capers are both salty. Add the pasta and toss to coat. If there doesn't appear to be enough sauce, add a couple of tablespoons of the pasta cooking water to thin it down. Serve with freshly grated Parmesan cheese.

4 tbsp olive oil
1/2 cup dill (chopped)
1/4 cup parsley (roughly chopped)
2 tsp lemon zest
200 g risoni pasta (7 ounces/approx 1 3/4 cups)
1 bunch asparagus
100 g frozen peas (3 1/2 ounces/approx 1/2 cup )
150 g hot smoked salmon (approx 5.5 oz)
1/2 cup soft ricotta
juice of half a lemon
salt and pepper to taste

Steps:

  • Cook the risoni according to packet instructions. In the last 2 minutes of cooking, add the frozen peas and the asparagus.
  • Heat the olive oil in a small fry pan over medium heat.
  • Add the dill and parsley and cook for 5 minutes.
  • Add the hot smoked salmon and break up with a wooden spoon. Salmon should be warm through.
  • Stir in the ricotta.
  • Drain the pasta, peas and asparagus.
  • Mix the salmon through the pasta, and stir in the lemon juice.
  • Serve and garnish with a little extra parsley and lemon zest.

1 small red onion, quartered and thinly sliced

6 ounces smoked salmon, cut into pieces
6 tablespoons (3 ounces) butter
2 lemons, zested and juiced
2/3 cup heavy cream
3 tablespoons minced chives (can substitute 2 tablespoons thinly-sliced scallions)
kosher salt

Steps:

  • Bring a pot of salted water to a boil and cook pasta until just shy of al dente. Drain, reserving some pasta water.
  • While the water is boiling, melt the butter in a large skillet over medium heat. Add the salmon, lemon juice, half of the lemon zest, and half of the chives. Cook for a few minutes, stirring occasionally. Stir in the cream and cook over low heat (the cream should be at a simmer) for about 5 minutes.
  • Add the drained pasta to the cream mixture. Cook for a few minutes, tossing to coat. Taste for seasoning. If the pasta looks a little dry, add pasta water a tablespoon or two at a time until it is creamy enough.
  • Serve immediately, topped with the remaining chives and lemon zest.
