SUPER FLAVORFUL CABBAGE SIMMERED IN CHICKEN BROTH, WITH ONIONS, GARLIC, AND SMOKED TURKEY. SEASONED WITH APPLEWOOD SMOKED SALT, BLACK PEPPER, AND DOUSED WITH A LITTLE HOT SAUCE!

1 large head of cabbage
2-3 tablespoons butter
1/2 large white onion (sliced)
1/2 teaspoon garlic (minced (can add more if desired))
2 cusp chicken broth
1 fully-cooked (smoked turkey wing or leg)
Smoked salt & pepper (to taste)
hot sauce (if desired)

Steps:

  • Cut cabbage into quarters and then cut each quarter into strips. Set aside.
  • In a large pot or deep skillet, melt butter over medium heat.
  • Add in onions and cook until semi-translucent.
  • Add in garlic and cook until fragrant.
  • Slowly pour in chicken broth.
  • Add in the smoked turkey. (You can add it in whole but I like to chop it up a bit so that all the meat is simmering with the broth)
  • Bring to a simmer and cover.
  • Simmer for about 5-10 minutes.
  • Add cabbage and toss.
  • Cover and continue simmering (do not boil) until your desired firmness is reached, tossing cabbage mid-way.
  • When cabbage is done removed the turkey and chop it up into small bits.
  • Return smoked turkey to pot.
  • Taste cabbage and season with smoked salt and black pepper.
  • Serve with a splash of hot sauce if desired.

1 large green or purple cabbage
1/4 cup olive oil
1 teaspoon kosher salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
Fresh herbs (cilantro or thyme sprigs)
2 tbsp buttermilk
2 tbsp olive oil
2 whole limes (juiced)
1 tbsp mayonnaise
1 pear (green) (cored and chopped roughly)
1 jalapeno (de-seeded and chopped)
2 green onions (trimmed, green and white parts)
2 cloves garlic
1/4 cup cilantro
1 tsp sea salt
1 tsp black pepper

Steps:

  • Adjust the heat on the smoker to low and cover. Allow the heat to reach 250 degrees Fahrenheit.
  • Remove the thin outer leaves from the cabbage. Cut the cabbage in half in the direction of the core and then half each to create quarters
  • Coat the cabbage with 1/2 the olive oil and season it to taste with salt and pepper..
  • Arrange the cabbage quarters on their side on a smoker tray. Place the tray in the smoker and cover. Smoke the cabbage with the smooth side down for 20 minutes. Flip and smoke on one of the wedge sides another 20 minutes. Then flip to remaining uncooked wedge side and smoke for the last 20 minutes. Remove and let rest for 5 minutes. Serve with sauce.
  • Add all ingredients to a blender or food processor and mix well. If too thick feel free to add more of the liquid ingredients. Taste and tweak as necessary.

  • Heat a large skillet over medium-high heat. Add sausage; saute until lightly browned, about 3 minutes. Add onion and garlic; saute until the onion has softened and turned translucent, about 5 minutes. Add cabbages season with salt and pepper. This flavorful smothered cabbage has onions, garlic, authentic creole spices, and tender smoked turkey. It's a classic southern side dish that's perfect for just about any soul food style meal!

1 large head of savoy cabbage, or regular green cabbage (chopped)
1 large smoked turkey wing
4 cups water
1 medium onion (chopped)
2 1/2 tsp creole seasoning
1 tsp ground black pepper
4-6 cloves garlic

Steps:

  • Place the smoked turkey into a large pot, and pour in 4 cups of water.
  • Bring the water to a boil, and cook until the turkey is tender. At this time, there is very little liquid in the pot, but do not get rid of it (It's flavor baby!!)
  • Next turn the heat off, and remove the turkey from the pot.
  • Chop the turkey meat into bite sizes, then set to the side.
  • Place the pot back on the stove top, and turn the heat to medium high.
  • Add in the onions, and garlic then cook until they are translucent.
  • Start adding in the cabbage, and stir.
  • Cover the pot, and let the cabbage cook down some.
  • Toss in the smoked turkey meat, and sprinkle in the creole seasoning and black pepper.
  • Stir everything, place the lid on the pot, and let the cabbage cook down for 5 minutes.
  • Remove the lid from pot, and stir the cabbage. Place the lid back on pot.
  • Cook the cabbage until it's nice and tender.
  • Serve and enjoy!

½ smoked turkey leg, meat removed and chopped
¼ yellow onion, sliced
½ cup chicken broth
1 whole cabbage, chopped

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir turkey in hot oil until warmed, about 3 minutes. Add onion; cook and stir until hot, about 1 minute.
  • Reduce heat to medium-low. Pour chicken broth over the turkey mixture; stir. Bring liquid to a simmer and cook, stirring occasionally, for about 3 minutes.
