My daughters and I came up with this treat when planning a candy-making party. The pops also make adorable hostess gifts, are perfect for potlucks and would sell out quickly at a bake sale. -Lisa Haboush, Geneva, Illinois

Ingredients

4 whole graham crackers, coarsely crushed
24 lollipop sticks
24 large marshmallows
4 ounces milk chocolate candy coating, melted

Steps:

Place crushed crackers in a shallow bowl. Insert 1 lollipop stick into each marshmallow. Dip two-thirds of each marshmallow in melted candy coating; allow excess to drip off. Dip in cracker crumbs, covering about half the chocolate., Place on waxed paper; let stand until set. Store in an airtight container.

Ingredients

2 cups cold milk
1 (3.9 ounce) package instant chocolate pudding mix
2 whole graham crackers, crushed
1 ½ cups vanilla ice cream, softened

Steps:

Beat milk and pudding mix together in a bowl using an electric mixer until thickened, about 2 minutes. Measure 1 1/2 cup pudding and set remaining pudding aside for another use.
Sprinkle graham cracker crumbs into the bottom of each ice pop mold; add about 1/4 cup ice cream. Sprinkle another layer of graham cracker crumbs and top with about 1/4 cup pudding. Add a final layer of graham cracker crumbs. Freeze until completely frozen, about 3 hours.

To make the ice cream: Place a large mixing bowl in the freezer to get cold for 5-10 minutes while you prep the marshmallows and gather the other ingredients.
To toast the marshmallows: Line a baking sheet with parchment paper AND spray with cooking spray. Spread the mini marshmallows in an even layer. Place the baking sheet in the oven or toaster oven in the middle rack - not the top rack. Broil on high using that middle rack for 2-3 minutes. Watch closely and remove when they are golden brown and toasted. Let cool for a few minutes before folding into the ice cream.
Pour cold heavy whipping cream into the mixing bowl. Beat with a hand mixer or stand mixer until stiff peaks form, about 5-6 minutes. (You can start on low speed to avoid splatters and work up to medium speed.)
In a small bowl, combine the sweetened condensed milk and vanilla and stir until well combined.

Combine ice cream, marshmallow fluff, and coconut milk in a blender and blend on high until it's totally combined and creamy. (Note: add a little milk at a time so it's not too thin.) Pour mixture into disposable paper cups and add a stick or heavy duty paper straw. (I used mini Dixie cups and then cut my paper straws in half.)
Before serving, make magic shell according to directions. Let it cool slightly. Remove paper cup from popsicles and dip in warm magic shell, then immediately roll in graham cracker crumbs.
