This is my mom's Christmas cookie recipe that the kids and I have made for years. Great fun to make and decorate.

Number Of Ingredients 6

1 cup shortening
1 ½ cups white sugar
3 eggs
3 ¾ cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, cream the shortening with the sugar. Add the eggs and vanilla and mix well. Sift the flour and salt into the creamed mixture and stir in gradually. Chill dough for at least one hour.
  • Roll the chilled dough out to 1/8 inch thick and cut into desired shapes. Bake on an ungreased baking sheet for 6 to 8 minutes. Allow cookies to cool before decorating.

2 cups butter, softened
1-1/4 cups sugar, divided
1 teaspoon vanilla extract
4 cups cake flour
2 tablespoons edible glitter

Steps:

  • In a large bowl, cream butter and 1 cup sugar until light and fluffy. Beat in vanilla. Gradually add flour and mix well. Divide in half. Cover and refrigerate for 2 hours or until easy to handle., On a lightly floured surface, roll out one portion of dough to 1/4-in. thickness. Cut with a floured 4-in. snowflake-shaped cookie cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 300° for 8-10 minutes or until firm. Repeat with remaining dough. Chill and reroll scraps if desired. , In a small resealable plastic bag, combine edible glitter and remaining sugar. Seal bag; crush mixture to break glitter into smaller pieces. Sprinkle over warm cookies. Cool for 5 minutes before removing to wire racks to cool completely.

Yield Makes 2 to 3 dozen cookies

Number Of Ingredients 7

1 1/2 cups (3 sticks) unsalted butter
1 cup sugar
2 large egg yolks
3 3/4 cups sifted unbleached all-purpose flour
1/4 teaspoon kosher salt
1 tablespoon pure vanilla extract
Colored sanding sugars

Steps:

  • Heat oven to 350 degrees. In a large bowl, cream butter and sugar until light and fluffy. Add egg yolks, flour, salt, and vanilla. Mix thoroughly.
  • Fill a cookie press with the dough, and turn out cookies 1 to 2 inches apart onto an unbuttered baking sheet. Sprinkle cookies with colored sanding sugars.
  • Bake until the cookies are lightly browned, 7 to 10 minutes. To ensure even baking, rotate sheet halfway through the baking process. Transfer to a wire rack, and let cool.

1 cup confectioners' sugar
1 egg
1 teaspoon vanilla extract
1/2 to 1 teaspoon almond extract
2-1/2 cups all-purpose flour

GLAZE:
1-1/2 cups confectioners' sugar
1 tablespoon light corn syrup
1/4 teaspoon vanilla extract
2 to 3 tablespoons water
Edible glitter, sprinkles or coarse sugar
Ribbon

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour and salt; gradually beat into creamed mixture. , Divide dough into three portions. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 375°. On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 3-in. snowflake-shaped cookie cutter. Place 1-in. apart on ungreased baking sheets. Using a plastic straw, make a hole about 1/2 in. from the top of each cookie. Using small decorating cutters, cut out desired shapes to create designs in snowflakes. , Bake 5-6 minutes or until set. Use straw to reopen holes in cookies. Remove from pans to wire racks to cool completely. Repeat with remaining portions, using 4- and 5-in. cutters. Bake 4-in. cookies, 6-7 minutes; bake 5-in. cookies, 8-10 minutes., For glaze, in a small bowl, beat confectioners' sugar, corn syrup, vanilla and enough water to reach desired consistency. Brush over snowflakes; sprinkle with glitter. Let stand at least 5 minutes or until set. , Thread ribbon through the holes.

  • Beat butter and sugar until fluffy with an electric mixer. Mix in egg and lemon extract until well blended.
  • Combine flour, baking powder and salt in a separate bowl. Gradually beat flour mixture into butter mixture until smooth. Divide dough in half; shape into 2 flat disks. Wrap dough in parchment paper; refrigerate 1 hour until firm enough to roll.
  • Roll out the dough 1/8-inch thick between two sheets of lightly floured parchment paper.
  • Cut dough with 2 to 6-inch snowflake cookie cutters. Place cookies 1-inch apart on parchment-lined cookie sheet. Decorate with colored sprinkles.
  • Bake 8 to 10 minutes or until cookies are just beginning to brown on edges. Cool.
  • Mix powdered sugar and milk together in a small bowl, adding milk slowly until desired consistency is reached. Drizzle over cooled cookies.

Number Of Ingredients 9

1 cup butter (refrigerator temp for electric mixer, slightly softened for hand mixing, margarine or shortening can)
3 ounces cream cheese (refrigerator temp for electric mixer, slightly softened for hand mixing)
1 cup sugar
1 egg yolk
1 teaspoon vanilla
1 teaspoon orange zest
2 1/2 cups flour, sifted
1/2 teaspoon salt
1/4 teaspoon cinnamon

Steps:

  • Cream butter, cream cheese and sugar well. (*See Note below).
  • Beat in egg yolk, vanilla and orange zest.
  • Sift together the flour, salt and cinnamon; gradually blend into creamed mixture.
  • Fill cookie press and form cookies on an ungreased cookie sheet.
  • Bake at 350°F for 12-15 minutes. Checking for a slightly set or very slightly browned cookie at 12 minutes. If needed, bake another 1-3 minutes.
  • Remove at once to cooling racks.
  • Decorate if desired or enjoy them plain. Store in an air-tight container and layered between foil or waxed paper, if needed. These cookies freeze well.

  • Put dough in cookie press and make favorite shapes (wreath, tree, etc.).
  • Sprinkle with colored sugar and bake in 350-degree oven for 10-12 minutes or until golden.
  • Remove from oven and let set on baking sheet 3 minutes to set.
  • Cool on wire rack.
