1/2 cup evaporated milk
2 teaspoons salt
4 tablespoons sugar
4 tablespoons butter, softened
2 tablespoons salt, added to water

Steps:

  • Peel and cut potatoes into small chunks.
  • Boil in salted water until you cannot pick up a piece with a fork.
  • Drain all the water from the potatoes and place all ingredients in a large mixing bowl.
  • Beat until creamy smooth.
  • Serve hot.

1 cup milk

Steps:

  • Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
  • In a small saucepan heat butter and milk over low heat until butter is melted. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with salt and pepper to taste.

Who doesn't love potatoes? I mean, come on. Fry 'em, dice 'em, slice 'em, or bake 'em, there's nothing better than a well-seasoned iteration of a potato. This time, we're mashing 'em. And not only are we mashing them, we're loading 'em up with all sorts of tantalizing flavors to give you, what we proudly call, the Ultimate Mashed Potato. It's an experience, trust us.

2 lb yukon gold potato
½ cup whole milk
½ cup heavy cream
8 cloves garlic, crushed
½ cup unsalted butter, cubed, cold
2 teaspoons kosher salt
freshly ground black pepper, to taste
chive, finely chopped, for serving

Steps:

  • On a cutting board, peel the potatoes. Place the potatoes in a large bowl of cold water after peeling to avoid discoloration.
  • Cut the potatoes into 1-inch (2 cm) cubes.
  • Add the potatoes to a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to low and simmer for 12 minutes.
  • In a small saucepan, bring the milk, heavy cream, and garlic to a simmer over low heat.
  • Remove the pot from the heat and strain the cream through a fine mesh sieve.
  • Drain the potatoes in a colander and transfer back to the pot.
  • Mash the potatoes with a potato masher, potato ricer, or by pushing through a fine mesh sieve with a spatula.
  • Add the cubed cold butter and salt. Stir to combine.
  • Gradually add the cream mixture to the potatoes, little by little, until fully incorporated.
  • Top with freshly ground black pepper and sprinkle with chives and serve.

I actually came up with this by trying to mimic a restaurant recipe. After I was done with it, I was more pleased with my version then I was with the restaurants!

Number Of Ingredients 7

3 -4 large potatoes (or equivalent in smaller potatoes)
2 -3 tablespoons bacon bits (real are best)
garlic powder
butter or margarine
milk
1 small chopped onion (optional)
salt (optional)

Steps:

  • Cut and skin all but one potato into cubes or chunks and boil.
  • Prepare lone potato the same way but leaving skin on, cubing and boiling separately, alternatively, this could also be a baked potato.
  • Drain potatoes and mash either by hand or by mixer.
  • Add butter and milk until smooth and creamy. I do not add exact measures, as this tends to be a personal decision, but about a tablespoon of each is a good start.
  • Cook onion separately if you are using, I would personally sauté it.
  • Mix in bacon bits, garlic powder, onions and salt if you are using them.
  • Add the lone potato to the mix last. If it was a baked potato, cut it into cubes. If you chose to boil it separately, just drain it, it should already be in cubes.
  • I would suggest a gentle mix for this lone potato in with the rest, either a really short and low mixer setting, or even just using a fork.
  • If all goes well you should have a smooth mashed potato with small skinned potato chunks. Yummy!
