OVERNIGHT SOURDOUGH BUCKWHEAT PANCAKES
I find the taste of pure buckwheat pancakes too strong so I am using half all-purpose and half buckwheat flour. The pancakes can be served with syrup for breakfast, or like blinis with savory toppings such as smoked salmon and sour cream.

OLD-FASHIONED SOUR BUCKWHEAT PANCAKES
Fresh out of the skillet, these buckwheat pancakes go great with homemade sausage. This is a forgiving recipe, and each kitchen and cook seems to add a personality to the pancakes. Follow the general process, and after you have learned that, have fun!

Steps:
- Combine buckwheat and all-purpose flour in a mixing bowl. Add buttermilk and yeast. Stir with a spoon until batter is smooth. Add more buttermilk, 1 tablespoon at a time, if batter is too stiff.
- Cover bowl with a dinner plate and let stand in a draft-free place, 8 hours to overnight.
- Add sugar, baking soda, and salt after the overnight rest. Mix in enough hot water to give batter a thin, pourable consistency.
- Heat a lightly oiled griddle over medium heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Reserve some batter as a starter for the next batch.

HOW TO MAKE AND MAINTAIN A BUCKWHEAT SOURDOUGH STARTER ...

- If you are using a purchased starter, follow the directions on the box until it is bubbling reliably within a few hours of feeding. If you are using a gluten-free starter from a friend, also make sure that it bubbles reliably within a few hours of being fed. Once this happens, you can start training it to use buckwheat flour instead of brown rice four. In order to be on the safe side, always save some of your starter discard in case your starter doesn't take to the new flour or there is some other unforeseen disaster.
- Feed with a 1/2 and 1/2 mixture of the two flours. For example, take 1 tablespoon of your bubbling brown rice starter at the top of its rise and mix it with 2 tablespoons of brown rice flour and 2 tablespoons of buckwheat flour plus 1/4 cup of water. Mix well to aerate (get oxygen into the starter). Once the mixture is bubbling and happy, feed it again in exactly the same way. Do two or three feedings just like this. Be sure that it is bubbling within 6-8 hours of being fed. You now have a half buckwheat, half brown rice starter and you can maintain it like this if you like. I prefer my starter to be half buckwheat, half brown rice because they complement each other well. If you want are grain-free or just want only buckwheat in your starter, then you need to keep training.

- Beat first 6 ingredients (only use 1 Tablespoon of molasses) in large bowl until smooth. Cover the bowl and leave overnight.
- Cook on a greased pan - my cast iron frying pan does the best job with these pancakes. Cook until bubbles form on the top, then flip and cook on the other side.
- If desired, save 1 cup of batter, stored in the fridge, to start the next batch of pancakes. The batter should keep up to 3 days in the fridge. I give mine a quick shake or stir daily to keep it from separating.

- Stir together the water, yeast and 1 teaspoon of the sugar in a small bowl. Let stand in a warm spot until foamy, about 10 minutes.
- Warm a large cast-iron skillet over medium-high heat. Break the sausage into lumps and drop them into the skillet, spacing them evenly. Cook until browned all over with no traces of pink, about 5 minutes. Stir gently from time to time to break up the meat a bit more. The ideal texture is a combination of fine, crisp bits dotted with small tender clumps. Transfer with a slotted spoon to a bowl.
- Spread the pork on a rimmed baking sheet and place in the freezer until the fat is very firm, but not frozen solid, about 20 minutes.

- First, soak the buckwheat for at least 6 hours. Place thoroughly rinsed and drained groats with 150g of water into blender and blend until you get a homogeneous batter.
- Then, place this batter into a plastic or ceramic bowl (big enough to mix the pancake batter later), cover with clean kitchen cloth and place into a warm (30°C, 86°F) oven for at least 7 hours. Metal bowl would interfere with fermenting process. It’s ready when the batter has risen and you see small bubbles.
- Next, smash the banana with fork or blend with immerse blender and add it to the batter with applesauce, ground flax seeds, cinnamon, and sea salt. Mix thoroughly and carefully with wooden spoon. Don’t be too hasty, as you’d lose the fluffiness of the batter.
