I received this recipe from an email pen pal in Canada. The dough is so easy to work with, and it makes the lightest yeast rolls. I haven't used another white bread recipe since I started making this one. -Carrie Ormsby, West Jordan, Utah

Yield about 2-1/2 dozen.

Number Of Ingredients 9

7 to 8 cups all-purpose flour
1/2 cup sugar
2 tablespoons active dry yeast
1-1/2 teaspoons salt
1/4 teaspoon baking powder
2 cups sour cream
1 cup water
6 tablespoons butter, cubed
2 large eggs, room temperature, lightly beaten

Steps:

  • In a large bowl, combine 3-1/2 cups flour, sugar, yeast, salt and baking powder. In a small saucepan, heat the sour cream, water and butter to 120°-130°; add to dry ingredients. Beat on medium speed for 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 23x9-in. rectangle. Cut into 1-1/2-in. strips. Stack 5 strips together; cut into 1-1/2-in. pieces and place cut side up in a greased muffin cup. Repeat with remaining strips. Cover and let rise until doubled, about 20 minutes. , Bake at 350° for 20-25 minutes or until golden brown. Remove from pans to wire racks.

SOUR CREAM DINNER BUNS



Sour Cream Dinner Buns image

Perfect to serve with a hearty stew or soup and even better warm with some butter!

Number Of Ingredients 8

2-1/2 cups of flour, plus more for kneading
2 tbsp sugar
2 tsp dried yeast (I use the fleischmann's quick rise yeast)
¾ tsp salt
¾ cup (6 oz) sour cream
¼ cup water
2 tbsp oil
1 egg, beaten (for brushing the buns)

Steps:

  • Heat the sugar, sour cream, water and oil in a saucepan until warm, but not hot.
  • Whisk together the flour, salt and yeast in a big bowl and make a well in the middle. Dump the sour cream mixture in the big bowl and mix with a wooden spoon until the mixture comes together.
  • Turn the dough out onto a floured surface and begin kneading it, adding extra flour if the dough is too sticky and hard to knead. (I usually add in another ¼ to the dough while kneading)
  • Knead the dough for 10-15 minutes by hand, or until it is smooth, elastic and the dough springs back to a finger poke.
  • Oil the same big bowl used to mix the dough and plop the bread dough back in it. Let the dough rise in a warm spot until doubled in size (about one hour).
  • After the first rise, punch the dough down, then portion out and shape the dough into 12 circular buns. Place the buns in a 9 inch square or round pan lined with parchment paper, then return to the warm spot to rise again for about 45 minutes.
  • Once the buns are risen, brush the tops of them with the egg and place them in a 350 F oven for 25-30 minutes, or until the buns are a beautiful browned color and spring back to the touch.
  • Remove from the oven and take the turn the buns out of the pan to cool further on a wired rack (or you can devour them warm, I always do!)

This simple moist meatloaf is made with sour cream, cracker crumbs, and ground beef and pork. Some shredded carrots and onion add to the flavor.

Steps:

  • Heat the oven to 350 F. In a large mixing bowl, combine all ingredients. Mix well with your hands until well combined.
  • Pat the meat mixture into a 9 x 5 x 3-inch loaf pan.
  • Bake the meatloaf in the preheated oven for about 1 1/2 hours.
  • Let stand for 10 minutes. Drain off fat and transfer to a serving platter.
  • Enjoy!

20 saltine crackers, crumbled
1 large egg, lightly beaten
1/2 cup ketchup
1 tablespoon yellow mustard
1 teaspoon salt
1/2 teaspoon pepper
1/2 yellow onion, finely chopped
Slices of white bread, lettuce and tomato, for making sandwiches, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
  • For sandwich: cut 2 thick slices of cooled meatloaf and place on white bread with lettuce and tomato. If you've never had a cold meatloaf sandwich the next day, you don't know what you're missing

8 ounces sour cream
1/4 cup milk
1/2 cup fine dry breadcrumb
1/4 cup finely chopped onion
2 tablespoons minced parsley
1 tablespoon Worcestershire sauce
1 tablespoon dijon-style mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs lean ground beef
1 (3/4 ounce) package brown gravy mix
hot mashed potatoes

Steps:

  • In large bowl combine eggs, 1/2 C of the sour cream and milk; stir in bread crumbs, onion, parsley, Worcestershire sauce, mustard, salt and pepper.
  • Add beef and mix well.
  • Put into 9x5x3 loaf pan or shape into that size and place in 12x7 1/2 x 2 inch baking dish.
  • Bake, uncovered, in a 350 degree oven for about 1 1/4 hrs or till meat thermometer registers 170 degrees.
  • Let cool 10 minutes; remove from pan.
  • Meanwhile, for the gravy, in medium pan stir together the remaining sour cream and dry gravy mix.
  • Add water as called for on pkg.
  • Cook according to pkg directions,.
  • Slice meat loaf and serve wih the mashed potatoes and gravy.
  • ENJOY!

2 lbs ground chuck
1 cup sour cream
1 (1 1/4 ounce) envelope dry onion soup mix
1 egg
3 stale hot dog buns, crushed
1/2 cup tomato juice or 1/2 cup V8 vegetable juice
1 teaspoon leaves thyme
1 teaspoon leaves tarragon
2 teaspoons black pepper, coursely ground
1/2 cup brown sugar
1/4-1/3 cup ketchup

Steps:

  • Mix first 8 ingredients; place in loaf pan and bake at 325 degrees for 1 1/2 hours.
  • Remove from oven and let sit for 30 minutes.
  • Drain off fat; place in larger baking pan, top side up.
  • Mix together brown sugar and ketchup and glaze top and sides of meatloaf.
  • Bake at 350 degrees for 1/2 hour.
  • Cool; remove to platter and chill overnight in refrigerator.
  • Note: Can also be made in the Winter and served hot!

3 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, thoroughly mix ground beef, onion, salt, pepper and garlic powder. Mix in bread, milk, egg, 2 tablespoons mustard and 1/4 cup ketchup.
  • Press the meat mixture into a 9x5-inch loaf pan. In a small bowl, stir together remaining mustard, ketchup and brown sugar; pour on top of the meat loaf.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 2 hours.

1 cup half-and-half (that's what we used. could use milk)
1 cup chunky salsa (we use Pace medium)

onion (optional)

Steps:

  • Preheat oven to 375°F.
  • Cook and stir ground beef in 10-inch skillet until brown. Remove beef; drain fat from skillet.
  • In a mixing bowl, beat two eggs.
  • Turn the hamburger bun into bread crumbs with a food processor. I add a small amount of half and half to soften it.
  • Combine the meat with the salsa, half and half, bread crumbs, sour cream, eggs, parsley, and dill. Place in a greased meatloaf pan.
