SOUR CREAM FAN ROLLS
I received this recipe from an email pen pal in Canada. The dough is so easy to work with, and it makes the lightest yeast rolls. I haven't used another white bread recipe since I started making this one. -Carrie Ormsby, West Jordan, Utah

Steps:
- In a large bowl, combine 3-1/2 cups flour, sugar, yeast, salt and baking powder. In a small saucepan, heat the sour cream, water and butter to 120°-130°; add to dry ingredients. Beat on medium speed for 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 23x9-in. rectangle. Cut into 1-1/2-in. strips. Stack 5 strips together; cut into 1-1/2-in. pieces and place cut side up in a greased muffin cup. Repeat with remaining strips. Cover and let rise until doubled, about 20 minutes. , Bake at 350° for 20-25 minutes or until golden brown. Remove from pans to wire racks.

SOUR CREAM DINNER BUNS
Perfect to serve with a hearty stew or soup and even better warm with some butter!

Steps:
- Heat the sugar, sour cream, water and oil in a saucepan until warm, but not hot.
- Whisk together the flour, salt and yeast in a big bowl and make a well in the middle. Dump the sour cream mixture in the big bowl and mix with a wooden spoon until the mixture comes together.
- Turn the dough out onto a floured surface and begin kneading it, adding extra flour if the dough is too sticky and hard to knead. (I usually add in another ¼ to the dough while kneading)
- Knead the dough for 10-15 minutes by hand, or until it is smooth, elastic and the dough springs back to a finger poke.
- Oil the same big bowl used to mix the dough and plop the bread dough back in it. Let the dough rise in a warm spot until doubled in size (about one hour).
- After the first rise, punch the dough down, then portion out and shape the dough into 12 circular buns. Place the buns in a 9 inch square or round pan lined with parchment paper, then return to the warm spot to rise again for about 45 minutes.
- Once the buns are risen, brush the tops of them with the egg and place them in a 350 F oven for 25-30 minutes, or until the buns are a beautiful browned color and spring back to the touch.
- Remove from the oven and take the turn the buns out of the pan to cool further on a wired rack (or you can devour them warm, I always do!)
SOUR CREAM MEATLOAF
Steps:
- Heat the oven to 350 F. In a large mixing bowl, combine all ingredients. Mix well with your hands until well combined.
- Pat the meat mixture into a 9 x 5 x 3-inch loaf pan.
- Bake the meatloaf in the preheated oven for about 1 1/2 hours.
- Let stand for 10 minutes. Drain off fat and transfer to a serving platter.
- Enjoy!

- Preheat the oven to 350 degrees F.
- In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
- For sandwich: cut 2 thick slices of cooled meatloaf and place on white bread with lettuce and tomato. If you've never had a cold meatloaf sandwich the next day, you don't know what you're missing
THE FRUGAL GOURMET'S SOUR CREAM MEATLOAF RECIPE

He had his own cooking show on PBS and his recipes were fantastic! Hearty Meatloaf with a creamy gravy that is fantastic over the loaf and of course the mashed potatoes! Freezes WELL and is great the next day! *MY notes: I find using 1/3 beef, 1/3 ground turkey & 1/3 ground pork works really well here too **

Steps:
- In large bowl combine eggs, 1/2 C of the sour cream and milk; stir in bread crumbs, onion, parsley, Worcestershire sauce, mustard, salt and pepper.
- Add beef and mix well.
- Put into 9x5x3 loaf pan or shape into that size and place in 12x7 1/2 x 2 inch baking dish.
- Bake, uncovered, in a 350 degree oven for about 1 1/4 hrs or till meat thermometer registers 170 degrees.
- Let cool 10 minutes; remove from pan.
- Meanwhile, for the gravy, in medium pan stir together the remaining sour cream and dry gravy mix.
- Add water as called for on pkg.
- Cook according to pkg directions,.
- Slice meat loaf and serve wih the mashed potatoes and gravy.
- ENJOY!

I haven't had a chance to try this yet, but I found it in the cookbook Thru the Grapevine, and it looks like a unique Summertime dinner! Can be made ahead and frozen.

Steps:
- Mix first 8 ingredients; place in loaf pan and bake at 325 degrees for 1 1/2 hours.
- Remove from oven and let sit for 30 minutes.
- Drain off fat; place in larger baking pan, top side up.
- Mix together brown sugar and ketchup and glaze top and sides of meatloaf.
- Bake at 350 degrees for 1/2 hour.
- Cool; remove to platter and chill overnight in refrigerator.
- Note: Can also be made in the Winter and served hot!

- In a large bowl, mix together the ground beef, sour cream, onion soup mix, bread crumbs and pepper using your hands. Refrigerate while you heat up the grill so the flavors have a chance to blend.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, thoroughly mix ground beef, onion, salt, pepper and garlic powder. Mix in bread, milk, egg, 2 tablespoons mustard and 1/4 cup ketchup.

MAMA'S MEXICAN MEATLOAF/CASSEROLE
My mom and I created this recipe and my husband loves it! He says it's not your traditional meatloaf and tastes more like a casserole. if you want more of the meatloaf taste, I would suggest using one egg instead of two. Easy to make. I will post a picture soon.

- Preheat oven to 375°F.
- Cook and stir ground beef in 10-inch skillet until brown. Remove beef; drain fat from skillet.
- In a mixing bowl, beat two eggs.
- Turn the hamburger bun into bread crumbs with a food processor. I add a small amount of half and half to soften it.
- Combine the meat with the salsa, half and half, bread crumbs, sour cream, eggs, parsley, and dill. Place in a greased meatloaf pan.

- In a large bowl combine milk and egg whites; beat with a fork until well mixed. Stir in bread crumbs, 1/4 cup chopped green onions, the Italian seasoning, salt, and the 1/8 teaspoon pepper. Add ground beef; mix well. Shape beef mixture into a 7x4-inch rectangle in the prepared baking dish.
