STUFFED SALMON WITH SHRIMP AND CRAB
This is a nice way to make a fancy looking stuffed salmon with simple ingredients you can find at your local market.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a sheet pan with cooking spray.
- Cut a slit through the middle of each salmon fillet, about 2/3 the length of the fillet. Set aside.
- Mix crab, shrimp, mushrooms, mayonnaise, Parmesan cheese, lemon juice, green onion, and bread crumbs together in a bowl.
- Shape 2/3 of the stuffing mixture into 2 large mounds on the prepared sheet pan. Spread open the fillets and place one over each mound. Fill in the top of the slits with remaining stuffing. Season each fillet with seafood seasoning.
- Bake in the preheated oven until salmon flakes easily with a fork and stuffing is hot, about 30 minutes.

EASY SOUR CREAM BAKED SALMON
This easy baked salmon recipe is perfect for a weekday, but could also fill in for a special occasion. The fish is smothered with a mixture of sour cream, mustard, and parmesan cheese. When baking the fish, be careful not to overcook. (There are lots of tricks above in the article for how not to overcook salmon). For moist salmon, bake until the salmon is barely done at the thickest part then remove from the oven cover with foil and let rest.

Steps:
- Heat oven to 425 degrees F. Lightly oil a rimmed baking sheet or baking dish. (Instead of oiling the pan, you could also line with parchment paper).
- In a small bowl, combine sour cream, mustard, and the cheese. Season with salt and pepper to taste.
- Place salmon onto a baking sheet then spread two tablespoons of sour cream mixture on top of each salmon filet.
- Bake 10 to 15 minutes until barely done in the center at the thickest part of the salmon. The center should be firm, but with a small amount of uncooked salmon in the very center. Depending on how thick the salmon is, it may need a few minutes longer. (The internal temperature should be around 125 degrees F).
- Remove from oven then cover lightly with aluminum foil and let rest 5 to 10 minutes. During this time, the salmon will continue to cook.

SAUTéED SHRIMP WITH SOUR CREAM SAUCE

Steps:
- Mix together the salt, paprika and sour cream in a small bowl and set aside.
- Dice the mushrooms. Sauté the mushrooms and shrimp in melted butter until the shrimp are pink and cooked through.
- Remove from the heat and stir in the sour cream mixture. Serve over cooked rice or noodles.

PAN SEARED SALMON WITH SOUR CREAM AND DILL
Steps:
- Coat a large skillet with olive oil and place over medium heat. When hot, add the fillets to the pan skin side down; season with salt and pepper. Cook for 5 minutes until the skin is nice and brown. Turn the fish over and cook for 3 minutes on the other side. Keep warm while preparing the sauce.
- In a small bowl whisk together sour cream, dill, lemon juice, shallot, red pepper flakes and horseradish. Season with salt and pepper. Serve the sauce over the pan-seared salmon.
CREAMED SALMON ON TOAST
Steps:
- In a saucepan or skillet, melt butter over medium heat. Whisk in flour, stirring constantly, until a smooth paste is formed. Gradually add milk and reserved liquid from peas, stirring constantly, until a smooth thick gravy is formed.
- Flake salmon into a bowl, breaking apart any large pieces. Stir salmon and peas into the sauce carefully with a wooden spoon to avoid mashing the peas. Cook until heated through. Adjust seasoning with salt and pepper.
- Toast bread in toaster oven or broiler pan. Butter, if desired, and top with salmon mixture.

Steps:
- Peel and devein the shrimp. Cut them into half-inch cubes.
- Heat the butter in a small skillet and add the shallots. Cook briefly and add the wine. Cook until the wine almost evaporates. Add the shrimp, salt and pepper to taste and paprika. Cook, stirring, about one minute.
- Add the sour cream and cook just until the cream is piping hot without boiling. Stir in the dill.

CREAM OF SALMON SOUP
Guests always compliment me when they taste this rich and creamy salmon soup. For special occasions, I make puff pastry triangles for dipping into the soup, but you can serve it without them.

- Preheat the oven to 400 degrees F (200 degrees C).
- Lay puff pastry on a lightly floured surface and roll out with a rolling pin. Brush with egg yolk. Sprinkle with sesame seeds and press in firmly. Cut puff pastry first into squares, then into triangles, and place on a baking sheet.
- Bake in the preheated oven until triangles are puffed up and golden brown, about 15 minutes.
- Meanwhile, melt butter in a pot over medium heat and cook onion until soft and translucent, about 5 minutes. Add salmon and cook for 5 minutes. Stir in tomato paste and cook for 1 minute. Pour in fish stock and white wine. Bring to a boil, reduce heat, and simmer for 15 minutes.
- Stir cornstarch and a little bit of water into a paste. Add to soup and bring to a boil. Cook until soup thickens, about 5 minutes. Puree soup with an immersion blender until smooth. Stir in cream and saffron. Season with salt and pepper.
- Garnish soup with dill and serve with puff pastry triangles.

- Cook the salmon in the oven at 400 F (200 C) for about 15 min. (depending on how large the piece is). Remove the skin and any brown fat after cooking.
- Cook the pasta according to the instructions on the package. You want the pasta to be done around the same time as the salmon, so based on how long the pasta needs to boil, wait until the salmon only has that long left to cook before placing the pasta in the boiling water.
- Cook the shrimp for 2-3 minutes in lightly salted water until they just start turning pink. You also want the shrimp to finish cooking around the same time as the salmon and pasta, so wait until those ingredients only have a few minutes left before cooking your shrimp. Alternatively, you could buy your shrimp pre-cooked, in which case you’ll just skip this step.
