STEAK RANCHERO WITH SOUR CREAM
Steak sauce, salsa and lime juice make a great marinade for this steak ranchero dish. Top with warm salsa and sour cream.

Steps:
- Mix first 3 ingredients until blended. Pour 1/2 cup over steak in shallow dish; turn to evenly coat both sides of steak. Refrigerate 1 hour to marinate.
- Heat grill to medium heat. Remove steak from marinade; discard marinade. Grill steak 4 to 6 min. on each side or until medium doneness (160°F).
- Remove steak from grill; let stand 5 min. Meanwhile, cook remaining salsa mixture and 3 Tbsp. olives in saucepan on medium heat 3 min. or until heated through, stirring occasionally.
- Cut steak across the grain into thin slices. Cover platter with lettuce; top with meat and remaining olives. Drizzle with warm salsa dressing. Garnish with sour cream.

SOUR CREAM TOP SIRLOIN
I made this for my mothers birthday some years ago and she loved it! You may have to add extra seasoning though, I added salt and pepper to the sauce. Serve on a bed of rice or buttered noodles with green beans.

Steps:
- Cut meat into serving-size pieces.
- Dredge in flour, seasoned with paprika, salt and pepper.
- Heat oil in a heavy skillet. Sear steak on one side. Turn meat.
- Add onion, garlic, water, soy sauce, brown sugar and mustard.
- Cover. Simmer for 8 to 10 minutes.
- Add mushrooms. Continue to simmer for 5 minutes or until meat is tender.
- Add sour cream. Simmer until thoroughly heated.

My in-laws raise beef for all their children, so I'm always looking for new ways to cook steak. This is an absolute favorite. It's so easy to fix, and the result is a tender steak smothered in a creamy onion and mushroom sauce. The aroma alone makes my husband's mouth water!

- In a large resealable plastic bag, combine 2 tablespoons flour, salt, pepper and paprika; add beef and toss to coat. In a skillet, brown beef on all sides in oil. Add the onion, mushrooms, garlic, 1/2 cup water, brown sugar, soy sauce and mustard; cover and simmer for 10-15 minutes or until meat is tender. - In a shallow bowl, combine 1/3 cup flour, salt, pepper, paprika and ground mustard; dredge the steak. , In a large skillet, heat oil and butter. Cook steak on both sides until browned. - Combine soy sauce, sherry, onion, olive oil, brown sugar, rosemary, garlic, and pepper in a bowl and mix well. Pierce flanks steak throughout using a large fork, flip, and repeat. Place steak in a plastic zip-top bag and pour in marinade to cover. Marinate in the refrigerator, 8 hours to overnight.
- Combine sour cream, green onions, horseradish, salt, and pepper in a bowl. Cover and refrigerate sauce until ready to use, up to 24 hours.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Drain steak and pour marinade into a small saucepan. Bring marinade to a boil over high heat and boil for 1 minute. Remove from heat. Season steak with pepper.
- Cook steak on the preheated grill to desired doneness, basting occasionally with marinade, about 5 minutes per side for medium doneness. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

This turns an average grocerty store bought steak into a good restaurant tasting steak. It takes only minutes to prepare and marinade can be for 30 minutes to overnight. Ooh, so good!

- Mix it all together and marinade steak for 30 minutes to overnight.
- Garlic will be stronger the longer you marinade.
- Don't be afraid of the garlic it makes the steak taste wonderful!
- Either grill the steaks or pan fry them in butter.
- Either way they're great!
- I do both; I grill them til they're almost done then finish the cooking by pan frying.
- This turns an average grocery store steak into a delicious good restaurant tasting steak.
