¼ pound chorizo, crumbled
1 (6 ounce) package baby spinach leaves
2 cups cherry tomatoes, halved
4 green onions, sliced
6 eggs
½ cup milk
1 ½ cups KRAFT Shredded Pepper Jack Cheese with a TOUCH OF PHILADELPHIA, divided

Steps:

  • Heat oven to 375 degrees F. Cook chorizo in large ovenproof skillet on medium-high heat until done, stirring frequently. Remove chorizo from skillet, reserving drippings in skillet. Set chorizo aside. Add spinach to skillet; cook 2 min. or just until wilted, stirring frequently. Stir in tomatoes and onions. Remove from heat.
  • Whisk eggs and milk in medium bowl until blended; stir in 1 cup cheese. Add to ingredients in skillet; stir just until blended. Top with remaining cheese.
  • Bake 25 min. or until knife inserted in center comes out clean.

A spicy way to start your morning, try this cheesy chorizo and potato frittata. It has heaps of cheddar cheese and savory Spanish sausage.

Number Of Ingredients 12

2 cups water
2 medium red potatoes, diced (about 1 cup)
8 large eggs
1 tablespoon extra virgin olive oil
1 cup semicured Spanish chorizo, casing removed (about 6 ounces)
1 large clove garlic, minced (about 1 tablespoon)
1 tablespoon unsalted butter
1 teaspoon coarse Kosher salt (or to taste)
1/2 teaspoon ground black pepper
2 tablespoons half-and-half
1/2 cup shredded sharp cheddar cheese (about 2 ounces)
3 tablespoons thinly sliced green scallions, white and green parts (1-2 large)

Steps:

  • In a medium-size stockpot, add 2 cups water and bring to a boil.
  • Reduce heat to medium. Add diced red potatoes and boil for 5 minutes.
  • Strain water and set potatoes aside to cool.
  • Crack eggs into a large bowl and whisk until fully incorporated and frothy, about 2 minutes. Set aside.
  • Preheat oven to 350°F.
  • Place a medium-sized, oven-safe saute pan over medium heat and add the olive oil. Wait 1 minute, or until oil is hot.
  • Add ground chorizo and garlic. Reduce heat to low, and stir occasionally for about 4 minutes.
  • Add potatoes and butter. Stir until butter melts completely.
  • Stir in salt and pepper, then remove from heat.
  • Add eggs, half-and-half, sharp cheddar, and scallions. Gently stir until all ingredients are fully incorporated. Let sit for 2 minutes.
  • Place in oven for 8-10 minutes, or until the edges start to brown and the center is cooked through.
  • Allow to cool in the pan for 10 minutes before slicing and serving.

HOMEMADE SOY CHORIZO (VEGAN, GLUTEN-FREE) image

This homemade spicy Soy Chorizo recipe is so simple to make in just 20 minutes, using just 1 pot. It's so much healthier than store-bought versions, and you'll also find most (if not all) of these ingredients already in your kitchen.

1 15-ounce package extra-firm organic tofu (drain, remove moisture and freeze overnight*)
1 tablespoon olive oil (or for oil-free, sub with unsalted vegetable broth)
1 medium yellow onion (minced)
3 garlic cloves (minced)
2 tablespoons soy sauce (or tamari (for gluten-free))
1 4-ounce can green chiles
1 6-ounce can tomato paste
2 teaspoons smoked Spanish paprika (or regular paprika)
2 teaspoons chili powder
1/4 teaspoon cayenne pepper (omit if you don't like spicy)
1 teaspoon ground cumin
1/2 teaspoon chipotle powder (optional (or sub with additional chili powder))
1/2 teaspoon salt
1 tablespoon nutritional yeast (optional)

Steps:

  • To begin, freeze the tofu block overnight. You can either 1) remove the tofu block from the packaging and transfer to an airtight container, or 2) keep the tofu block in the original packaging and freeze (either way works). Remove the tofu the next morning and leave on the counter all day to thaw (or transfer to fridge). about 12 hours.
  • When thawed, cut the tofu lengthwise into 2 pieces and remove moisture again, pressing down with paper towels. Once the moisture is removed as much as possible, crumble the tofu into a medium bowl. Make sure the pieces are very small, with no noticeable chunks.
  • Next, in a medium/large skillet or Dutch oven, add the olive oil to the skillet over medium heat. Add the onion and garlic and cook for 4-5 minutes, stirring occasionally until the onions are soft and translucent.
  • Reduce the heat a little and add the soy sauce, can of green chiles and can of tomato paste. Mix together until the tomato paste is mixed in thoroughly. Then add the Spanish paprika, chili powder, cayenne pepper, cumin, chipotle powder, salt and nutritional yeast (if desired). Then stir again until spices are mixed in thoroughly.
  • Finally, add the crumbled tofu to the pot. Mix all together until combined. Then cook over low heat for 1-2 minutes until warmed throughout. Remove from heat.
  • This soy chorizo works great as a filling for tacos, nachos, taco salad, or any Mexican-Inspired dish. Serve with sliced avocado, chopped green onions, chopped red cabbage, salsa, black beans, and/or cilantro.
  • This recipe makes 3 cups chorizo meat, or 4 (3/4 cup) servings. Store in an airtight container in the fridge for 3-4 days.

2 tablespoons olive oil
1/2 cup finely chopped onion
1 medium carrot, finely chopped
1 rib celery, finely chopped
1 clove garlic, minced
1 pound ground beef
6 ounces soft Mexican chorizo, removed from casing and crumbled
Two 4-ounce cans diced roasted green chiles
3/4 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
2 large eggs, well beaten
1/4 cup ketchup
1/4 cup sour cream or Mexican sour cream
1/2 cup dried breadcrumbs
2 tablespoons chopped fresh cilantro, for garnish, optional
2 tablespoons olive oil
2 cloves garlic, minced
1/4 medium white onion, minced
1 cup tomato puree
1/4 cup brown sugar
1 tablespoon yellow mustard
One 4-ounce can diced roasted green chiles
1 canned chipotle chile in adobo sauce, minced
Kosher salt

Steps:

  • For the meatloaf: Preheat the oven to 375 degrees F.
  • In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery and garlic and cook, stirring often, until the vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
  • In a large bowl, combine the sauteed vegetables, ground beef, chorizo and green chiles.
  • In a medium bowl, combine the salt, cumin, black pepper, cayenne and eggs. Add the ketchup and sour cream. Mix well with a fork, then pour it on top of the meat mixture. Sprinkle with the breadcrumbs and mix thoroughly with clean hands.
  • Put the mixture into a loaf pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
  • For the salsa-glaze: Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until softened, 3 to 4 minutes. Stir in the tomato puree, sugar, mustard, green chiles and chipotle chile. Bring the mixture to a simmer over medium-low heat. Cook until slightly thickened, 5 to 6 minutes. Season with salt to taste.
  • Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf, garnish with fresh cilantro if desired and serve.
