I've had this recipe for so long I don't remember where it came from. A 16 ounce can of bean sprouts can be substituted for the fresh, but if you can find fresh use them.

7 ounces uncooked vermicelli
3/4 cup mayonnaise
1 tablespoon soy sauce
1 teaspoon salt
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
1 dash white pepper
2 -3 cups fresh bean sprouts
1 (3 ounce) can sliced mushrooms, drained
1 medium celery rib, sliced
1/3 cup chopped green pepper
1 small onion, chopped
1 cup frozen green pea
1/2 cup cashews or 1/2 cup peanuts, coarsely chopped
sliced radish, for garnish

Steps:

  • Break vermicelli into 2 inch pieces;cook as directed on package. Rinse under running cold water;drain.
  • Mix mayonnaise and next 5 ingredients in a large bowl.
  • Stir in vermicelli, bean sprouts, celery, mushrooms, green pepper, onion and peas.
  • Refrigerate at least 3 hours.
  • Stir in cashews when ready to serve.
  • Garnish with radishes.

2 carrots, peeled and julienned
2 green peppers, seeded and julienned
8 ounces bean sprouts
1 tablespoon sesame oil
1 tablespoon canola oil
3 tablespoons soy sauce
2 tablespoons rice vinegar

Steps:

  • Submerge carrots in boiling salted water. After a minute add peppers and bean sprouts. Bring back to the boil and refresh mixture in ice water and drain. Pat dry and transfer to a serving bowl. In a bowl combine sesame oil, canola oil, soy sauce and vinegar. Pour dressing over vegetables and toss to combine.

1 tablespoon vegetable oil
1 pound fresh bean sprouts
1 medium red bell pepper, seeded and thinly sliced into strips
2 scallions, chopped
2 tablespoons rice wine vinegar
2 teaspoons sugar
Salt
Dash of sesame oil

Steps:

  • Heat oil in large skillet over medium high heat. Add the bean sprouts and cook quickly for 30 seconds. Add the peppers and stir fry. Add the scallions and stir. Remove vegetables to a strainer to drain.
  • In a large bowl, mix together vinegar, sugar, salt and sesame oil. Add vegetables and toss tocoat. Refrigerate for 6 hours before serving.

3 medium garlic cloves, minced
6 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1 teaspoon ground ginger
¾ teaspoon hot red pepper flakes
2 tablespoons mayonnaise
¼ cup vegetable oil
2 tablespoons salt
1 pound penne pasta
8 ounces broccoli florets
1 pound rare deli roast beef, sliced 1/8 inch thick and cut into bite-size strips
3 medium carrots, peeled and coarsely grated
1 medium red bell pepper, cut into bite-size strips
2 cups bean sprouts
3 green onions, thinly sliced
½ cup chopped roasted (or honey-roasted) peanuts
¼ cup chopped fresh cilantro

Steps:

  • Mix garlic, soy sauce, vinegar, sugar, sesame oil, ginger, and pepper flakes in a 2-cup Pyrex measuring cup. Whisk in mayonnaise until smooth, then in a slow steady stream, whisk in oil to make an emulsified dressing; keep chilled until ready to toss with salad. Store in a clean jar with lid.
  • Bring 1 gallon of water and 2 tablespoons of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding broccoli the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside while preparing remaining salad ingredients.
  • Place all salad ingredients (except soy-ginger dressing) in a large bowl or transfer to a gallon-size zipper bag. (Can be covered and refrigerated several hours at this point). When ready to serve, add dressing; toss to coat and serve.

1/4 cup sugar
1/4 cup cider vinegar
2 tablespoons finely chopped onion
1 egg
2 tablespoons Worcestershire sauce
1 package (10 ounces) fresh spinach, torn
1 cup canned bean sprouts
4 bacon strips, cooked and crumbled
4 green onions
2 hard-boiled large eggs, sliced
2 tablespoons sunflower kernels

Steps:

  • In a small saucepan, whisk together the first six ingredients. Cook and stir over low heat until the mixture reaches 160°. Remove from the heat; cool., In a serving bowl, toss the spinach, bean sprouts, bacon and green onions. Drizzle with 1/2 cup salad dressing; toss to coat. Garnish with egg slices and sunflower kernels. Serve immediately. Refrigerate remaining dressing.

4 ounces mange-touts peas, shredded diagonally
6 ounces bean sprouts
1 red onion, very finely sliced
7 ounces canned straw mushrooms
1 tablespoon rice wine vinegar or 1 tablespoon white wine vinegar
2 tablespoons shoyu or 2 tablespoons light soy sauce
1 -2 teaspoon sesame oil
1 teaspoon raw brown sugar
1 tablespoon fresh coriander leaves, roughly chopped
1 tablespoon Thai basil, roughly chopped
3 spring onions, finely shredded
3 sprigs fresh coriander
3 sprigs fresh basil leaves
1 tablespoon sesame seeds, toasted

Steps:

  • Steam the green beans and mange tout for 3 minutes.
  • Place in a colander and refresh under cold running water. Drain.
  • Place the beans, mange tout, bean sprouts, onion and mushroom in a large bowl and mix well.
  • In a small bowl mix together the vinegar, shoyu, sesame oil, and sugar.
  • Stir in the coriander and basil leaves, pour over the salad ingredients and toss together well.
  • Transfer to a serving platter and scatter over the spring onions, herb leaves and toasted sesame seeds.

3 tablespoons white vinegar
2 cloves garlic, minced
3/4 cup parmesan cheese, grated

4 cups bean sprouts
2 large tomatoes, peeled and sliced round
4 -5 lettuce leaves, washed

Steps:

  • To prepare the Pesto, blend basil, oil, vinegar, garlic, salt and cheese in a blender or food processor until smooth.
  • Keep aside.
  • Line a salad plate with lettuce leaves.
  • Spread the bean sprouts over it.
  • Place the sliced tomatoes over the bean sprouts.
  • Spoon the Pesto over the salad.
