SPAM® Potato Chowder image

Call someone a "chowderhead" and it means something bad like "bonehead," "nincompoop" or "numskull." But calling someone a "potato chowderhead" means something good-a person who enjoys hearty, satisfying potato chowder made with cubed SPAM® Classic.

1 (12-ounce) can SPAM® Classic, diced
1 tablespoon butter or margarine
1/2 teaspoon caraway seeds
1/2 cup chopped celery
1/4 cup chopped fresh parsley
1 (10 3/4-ounce) can condensed chicken broth
1 1/2 cups half-and-half
1 medium onion, chopped
1/4 teaspoon pepper
1 pound (or about 3 medium) potatoes, peeled and diced
1 cup water

Steps:

  • In medium saucepan, sauté onion and celery in butter until tender.
  • Add SPAM® Classic and cook, stirring frequently, for 3 minutes.
  • Add broth, water, potatoes, caraway seeds, and pepper to saucepan.
  • Cover and cook for 10 minutes or until potatoes are tender. Stir in half-and-half and parsley; heat to serve.

I'm sorry I just couldn't resist posting, since we've had so many fascinating discussions about Spam in the past. Actually, I think this sounds kinda good, but maybe I would make it with ham or smoked sausage instead of the Spam.

1 (12 ounce) can spam lite, cut in chunks
1 cup chopped onion
2 (10 3/4 ounce) cans condensed cheddar cheese soup
1 can whole kernel corn
1 (14 1/2 ounce) can diced tomatoes, in juice,drained
1 (12 ounce) can evaporated skim milk
1 (4 ounce) jar sliced pimientos, drained

Steps:

  • Heat dutch oven over med-high heat.
  • Add Spam and onion.
  • Saute 5 minutes until browned.
  • Stir in soup, 1 1/2 soup cans of water, then remaining ingredients.
  • Bring to a boil and simmer 5 minutes to develop flavors.
  • Garnish with sliced scallions.
