WATERMELON SUMMER SALAD
This is a recipe I stumbled upon one hot lazy afternoon. Don't be scared by the ingredients, they work together to make a very tasty and refreshing salad. Go ahead and try it - be prepared for a pleasant surprise!

Steps:
- Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.
- In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all, and toss to blend. Dig in and be prepared for a pleasant surprise!

Steps:
- Remove the skin from the mango. Cut the melon in half and remove the pulp with a potato shaper spoon.
- Cut off the top third of the watermelon and remove the pulp, using the same spoon.
- Place all the fruit in a bowl and sprinkle the sugar on top, adding the maraschino and the wine.
- Leave to cool in the refrigerator.
- Serve either in a large bowl or in individual servings.

WATERMELON AND FETA SALAD
A take on the Mediterranean combination of watermelon and feta, this refreshing zinger of a salad couldn't be more perfect. Unassumingly simple, the sweet melon, salty cheese and fragrant basil reach their peak when doused with white balsamic vinegar and dribbled with fruity olive oil. Rather than building tall, this salad builds wide - so use a large platter for the most dramatic presentation. Vinegared watermelon does not keep its crisp, juicy texture well, so be sure to dress it (and eat it) the moment the last basil leaf falls.

- Preheat oven to 400 degrees F (200 degrees C).
- Toss bread cubes, 1 tablespoon plus 2 teaspoons olive oil, and 1/2 teaspoon salt in a bowl. Spread onto a baking sheet in a single layer.
- Bake in the preheated oven, tossing once halfway through baking, until golden, about 8 minutes. Let cool.
- Reduce oven temperature to 350 degrees (175 degrees C). Spread walnuts onto a baking sheet.
- Toast walnuts in the preheated oven until golden brown and fragrant, 10 to 15 minutes.
- Whisk lime juice, honey, Dijon mustard, 1/2 teaspoon salt, cumin, and pepper together in a bowl. Pour in 1/2 cup olive oil, whisking continuously, until dressing is blended.
- Combine bread cubes, watermelon, spinach-arugula mix, and feta cheese in a large bowl. Add a few tablespoons of dressing; toss to mix. Sprinkle toasted walnuts and basil on top. Drizzle more dressing over the top.
