SPICY GRILLED TILAPIA RECIPE
This spicy grilled tilapia recipe is filled with flavour! It includes, tomatoes, red bell peppers, onions and scotch bonnets. Serve as a side.

- Preheat oven at 200°C fan/180°C/ Gas 6/400°F. Lightly, grease a baking tray with vegetable or sunflower oil. Add the tilapia pieces to the tray and drizzle oil on top of each piece. Bake for 1 hour and 30 minutes or until dry and brown in colour.
- Meanwhile, add 1 can of plum tomato, 1 large chopped onion, 2-3 scotch bonnets, 2 chopped red bell peppers, and pulse for 2-3 times. The consistency should not be smooth.
- Once, the fish is ready remove it from the oven and set aside. Then, heat vegetable oil in a pan, add 1/2 of a sliced onion then pour in the tomato mixture and cook for 10-15 minutes on a medium heat.
- Next, season the sauce with 1 Knorr chicken stock seasoning cube, salt to taste, 2 tsp of tomato puree (optional) and stir. Then, cook on a low heat for 15-20 minutes.
- Then, add the grilled tilapia pieces to the sauce and cover each piece with the tomato sauce. Cook for another 10 minutes.
- Finally, add 1/2 of a thinly sliced onion, 1 thinly sliced red bell pepper and leave to simmer for 5-7 minutes. Garnish with fresh green herbs of your choice and enjoy!

- Spray grill rack with a non-stick coating.
- Rinse tilapia with cold water; pat dry with paper towels.
- Combine spices and sprinkle on both sides of fillet Place on heated grill 4 to 5 inches from a hot fire.
- Cook 4-5 minutes per 1/2 inch measured at thickest point, turning once halfway through cooking time.
- Serve with Aioli.
- Aioli- Combine all ingredients in a bowl.

SPICY GRILLED TILAPIA WITH CREAMY GRITS AND MUSHROOM SCALLION SAUCE

- Mushroom Scallion Sauce: Melt butter in a large saute pan. Saute mushrooms and scallions for about 3 minutes. Stir in wine and heavy cream. Season with garlic powder, cayenne, salt, and pepper. Stir until sauce thickens slightly. Keep warm until ready to serve.
- Grits: Bring milk to a boil. Gradually whisk in grits, butter, salt, and pepper. Stir constantly for about 3 to 5 minutes until grits thicken to desired consistency. Keep warm until ready to serve.
- Grilled Broccoli and Carrots: Heat grill to medium. Toss broccoli and carrots in olive oil and season with garlic powder, salt, and pepper. Grill vegetables for about 6 minutes or until tender, turning them once halfway through. If room allows, grill tilapia at same time.
- Tilapia: Heat grill to medium. Rinse and dry fillets and then rub with jerk seasoning. Grill tilapia for 3 to 4 minutes on each side. Remove from heat.
- Plate entree by spooning grits on center of plate. Lay tilapia on top of grits. Lay the carrot slices on top of fish in a criss-cross manner and place broccoli stalk on the side of fish. Top with mushroom scallion sauce and serve immediately.

- Mix canola oil, cilantro, jalapeno peppers, chili powder, lime juice, salt, and black pepper for marinade together in a large bowl. Let sit for at least 30 minutes. Add tilapia fillets and marinate in the mixture for 30 minutes, up to 1 hour.
- Preheat an outdoor grill for high heat and lightly oil the grate. Remove fish from marinade and rub off remaining jalapenos and cilantro.
- Cook the marinated tilapia on the preheated grill until easily flaked with a fork, about 3 minutes per side.
- Mix Mexican crema and habanero hot sauce together in a small bowl.
- Shred cooked fish on a plate using 2 forks.

- Prepare the sambal by grinding chilies, shallots, belacan and lemongrass in a food processor. Make sure the sambal paste is well blended and smooth.
- Heat up a wok and add the oil. "Tumis" (stir-fry) the sambal paste until aromatic or when the oil separates from the sambal paste. Add the seasonings: salt, fish sauce and sugar and do a quick stirs, dish out and set aside.
- Soak the tamarind pulp with the water for 15 minutes and extract the juice. In a mortar and pestle or food processor, pound/blend the red chilies, bird's eye chilies and toasted belacan. Add tamarind juice, sugar, salt, and sliced shallots to the sambal. Stir well and set aside.
- Lay a few sheets of banana leaves and grease the surface of the banana leaves with some oil. Lay the fish fillet on top of the banana leaves and rub the turmeric powder on both sides of the fish. Add about 2 - 3 tablespoons of sambal on top of the fish. Spread the sambal evenly. Drizzle the lime juice on the fish.
- Place the fish on top of the grill (upper rack with indirect heat) and cover the grill. Wait for 8 minutes or so (depending on the heat) and flip the fish over to the other side.
- Add 2 - 3 more tablespoons of sambal on the other side of the fish. Cook for another 8 minutes or until the fish is cooked.
- Transfer the fish and the banana leaves to the lower rack and grill for a couple of minutes with direct heat, or when you smell the sweet aroma of burnt banana leaves.
- Transfer out and serve immediately with sambal belacan and sliced shallots condiment.
