RED VELVET SPIDER CUPCAKES
Steps:
- For the cupcakes: Preheat the oven to 350 degrees F. Line 2 cupcake tins with 18 cupcake liners.
- Mix the flour, cocoa powder, baking soda and salt in medium bowl. Set aside.
- With an electric mixer on medium speed, beat the butter and sugar in a large bowl until light and fluffy, about 5 minutes. One at a time, beat in the eggs. Mix in the buttermilk, food coloring, vanilla and vinegar. On low speed, gradually beat in the flour mixture until just blended (do not overbeat!). Spoon the batter into the cupcake liners, filling them two-thirds full.
- Bake until an inserted toothpick comes out clean, 12 to 15 minutes. Cool the cupcakes in the tins on a wire rack for 5 minutes. Remove from the tins; cool completely.
- Remove part of the center of each cupcake, going in only halfway.
- For the frosting: In a stand mixer, whip the butter until light and creamy. Slowly whisk in the confectioners' sugar, one cup at a time, scrapping down the bowl as needed. Add the cream, vanilla and salt and whisk until light and fluffy.
- Transfer the frosting to a piping bag. Pipe frosting into the hollowed out center of each cupcake and then swirl around to cover the top. Arrange white cotton candy in a puffy bunch on top of the cupcakes. Top with a black fondant spider.

- Mix together the grated Parmesan, thyme, and spices in a medium bowl.
- Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
- Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.
- Bake in the heated oven for 15 to 20 minutes, or until tender. For a crispy golden topping, broil for 2 to 3 minutes more. Watch it carefully so the zucchini does not burn.
- Serve immediately as an appetizer with a dipping sauce, or as a side next to your protein of choice.

- Preheat oven to 350 degrees. Pulse together pecans and oats in a food processor until finely ground. Melt butter in a small saucepan. Add sugars and honey and cook over medium heat, stirring, until sugars are melted and mixture is simmering, about 3 minutes. Remove from heat and stir in pecan mixture, flour, salt, and cinnamon. Transfer to a bowl and refrigerate until firm, about 30 minutes.
- Mound 2 teaspoonfuls of dough, one on top of the other, to form each cookie; place 2 to 3 inches apart on parchment-lined baking sheets. Flatten stacked mounds to 1 3/4 inches in diameter. Bake until cookies spread and are golden throughout, about 10 minutes. Let cool completely. Repeat with remaining dough.
- Place chocolate in a bowl set over a saucepan of simmering water. Stir until melted; remove from heat. Pour chocolate into a parchment cone or resealable plastic bag; snip off a tiny corner. Pipe chocolate onto each cookie in a spiral, working out from center. Pipe lines from outside in and back again, all the way around. Let set at room temperature or in refrigerator before serving.

- Cut squash in half lengthwise; discard seeds. Place squash, cut side down, on a microwave-safe plate. Microwave, uncovered, on high for 15-20 minutes or until tender. Meanwhile, cook gnocchi according to package directions. , For pesto, place the basil, pine nuts, Parmesan cheese, garlic and salt in a food processor; cover and process until chopped. While processing, gradually add oil in a steady stream; process until blended., When squash is cool enough to handle, use a fork to separate strands. Drain gnocchi; place in a large bowl. Add spaghetti squash and pesto; toss to coat.

- HEAT morsels and 3/4 cup peanut butter in small, heavy-duty saucepan over low heat, stirring constantly until smooth; remove from heat. Add sugar; stir vigorously until smooth.
- PLACE cereal in large bowl. Add 1 cup melted chocolate mixture; stir until evenly coated. Place on ungreased baking sheet. Using small metal spatula, shape into 10-inch circle with slightly raised 1-inch-wide border. Pour remaining chocolate mixture in center of circle; spread to border.
- FOR SPIDERWEB:.
- PLACE remaining peanut butter in small, heavy-duty plastic bag. Cut tiny corner from bag; squeeze to pipe concentric circles on top of chocolate. Using wooden pick or tip of sharp knife, pull tip through peanut butter from center to border. Refrigerate for 30 minutes or until firm. Cut into wedges.
