A very easy and different twist - spinach, cottage cheese- onions- cheese- to the classic old cornbread - Gimme Some of dat Cornbread! One of our readers suggested this: added 1/2 cup cracklin crumbs to add a lil "more" Cajun taste!!

1 package 10 oz frozen spinach thawed
1 package 6 oz Mexican or plain cornbread mix
1/2 tsp salt
1/2 cup margarine
3/4 cup cottage cheese
1 cup chopped onions
4 large eggs
1/2 cup your choice shredded cheese optional

Steps:

  • Preheat oven to 400. Drain spinach well, pressing between layers of paper towels. Place in mixing bowl, add cornbread mix and remaining ingredients and mix well. Pour into lightly greased 8 inch square pan. Bake for 30 minutes.

1 (8 1/2 ounce) box Jiffy cornbread mix
1 (10 ounce) package frozen spinach (thaw and squeeze out juice)
4 eggs
6 ounces cottage cheese
1 onion (finely chopped)
1/4 cup melted margarine (I use 1/4)
1/2 teaspoon salt

Steps:

  • Mix all ingredients together.
  • Pour into greased baking 9x9" baking pan, or any other pan to a depth of no more than 1 1/2".
  • (I cook this in a greased 9" cast-iron skillet).
  • Bake at 375 deg F.
  • for 30-50 min, until a knife stuck into the center comes out cleanly.

½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup shredded Cheddar cheese
½ cup fresh spinach
½ (14 ounce) can artichoke hearts, broken up with your fingers
⅓ cup milk
1 egg, lightly beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners.
  • Combine flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl.
  • Mix Cheddar cheese, spinach, artichoke hearts, milk, and egg together in a separate bowl. Stir into the flour mixture just until moistened. Pour into the prepared muffin tin.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool briefly on a wire rack.

1 package (8-1/2 ounces) corn bread/muffin mix
1/2 cup grated Parmesan cheese
1/8 teaspoon garlic powder
2 eggs
1/2 cup blue cheese salad dressing
1/4 cup butter, melted
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup shredded cheddar cheese
1/2 cup finely chopped onion

Steps:

  • In a large bowl, combine the muffin mix, Parmesan cheese and garlic powder. In another bowl, whisk the eggs, salad dressing and butter; stir into dry ingredients just until moistened. Fold in the spinach, cheddar cheese and onion. , Fill greased miniature muffin cups two-thirds full. Bake at 350° for 12-14 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Refrigerate leftovers.
