SRI LANKAN CHICKEN CURRY
Based on a traditional Sri Lankan family recipe, this curry is spicy and full of flavor. Try this recipe and you will love it! Serve with basmati or jasmine rice and any other curried dish.

Steps:
- Cut the chicken into bite-sized pieces. Combine the vinegar, tamarind juice, 1/4 cup curry powder, salt, and pepper in a bowl. Add chicken and toss to coat.
- Heat the coconut oil in a wok or frying pan over medium heat. Cook the sliced onion, green chiles, cardamom pods, cloves, curry leaves, ginger, and cinnamon stick until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Stir in the garlic and cook for an additional minute.
- Add the chicken mixture, water, and tomato paste. Stir and simmer until the chicken is cooked through, about 10 minutes. Add the roasted curry powder and stir until evenly dispersed.
- Gradually stir in the coconut milk and simmer for 2-3 more minutes. (Do not overheat or the coconut milk may curdle.)

- Clean and wash the chicken winglets, make sure to drain any excess water. Add the winglets in a large bowl, add salt to season and 1/2 teaspoon of Turmeric, mix then set aside for 15 minutes. Place pan over medium heat, pour in the oil and let the oil heat for 10-15 seconds. Add the marinated chicken and pan fry the wings. Toss and pan sear the winglets so they fry, not completely but just enough that you see the edges turn golden brown. Once the chicken wings are semi-fried, transfer the fried wings to a paper towel. Place the same pan over low medium fire, add ginger, half of the onions, green chillies and cook until the onions turn translucent. Add the chopped tomatoes, chilli flecks, pepper and sugar. Mix all ingredients well, this should take you less than two minutes. taste, add salt if necessary. Now, pour in the Ketchup, cook for two minutes and then add the crispy pan seared chicken wings, leave it on low simmer so the sauce thickens and coats the winglets. You might want to leave a little gravy or let the gravy completely coat the chicken wings as it cooks. Do a final taste test, remove the pan from the fire, add the raw onion rings as garnish, combine and serve while warm.
SRI LANKAN CHILI DEVILLED CHICKEN RECIPE
Let's cook Sri Lankan devilled chili chicken stir fry. This is spicy and easy to make. This recipe is great with fried rice or cooked rice. Use shallow fry so less oil.

- Cut the chicken into pieces. If you use drumstick no need to cut them.
- Marinate the chicken pieces with red chili powder, pepper powder (use only one tablespoon), turmeric powder, and salt for 15 minutes.
- Cut onion into strips or ring shape and Capsicum into ½ inch ring shape.
- Blend ginger and garlic and keep them separately.
- Get the cooking pot and put the chicken pieces, one and a half (1½) cup of water and close the lid and cook for 15 minutes.
- After 15 minutes, remove the chicken with a cooking spoon. Put the chicken stock water into a mixing bowl. We need it to prepare the devilled chicken sauce.
- Add 90ml coconut oil to a nonstick pan. When the oil heated enough, add chicken pieces. Shallow fry chicken until they turn to a golden brown. Using a spoon or tong remove the fried chicken to the plate.
- Mix cornflour, soya sauce, chili flask, sault, tomato or chili sauce, sugar, and one tablespoon pepper.
- Add 10ml coconut oil to a nonstick pan. When the oil heated add garlic paste and when it turns to a golden brown add green chili, capsicum, ginger, and wait for 2 minutes.
- Mix chicken stock with the previously prepared cornflour mixture.
- Add above step prepared sauce, tomato piece, and fry chicken and wait for 2 minutes.
- Add devilled chicken to plate and garnish with coriander.

- Season the chicken with salt and pepper and let sit for 10 minutes.
- In a pot add the chicken and fill with enough water just to cover the meat. Bring to a boil and let boil until the water is almost completely evaporated.
- Then add the butter, curry powder, sliced chili pieces and stir. Let fry for a minute or two.
- Add in the onion, ginger, garlic, Turmeric powder, curry leaves, tomato, and salt. Mix well.

- Clean, rinse, and cut the chicken into medium-sized pieces. Add ginger and garlic pastes, turmeric powder, and salt. Mix and let them marinate for 30 minutes.
- Cook the marinated chicken covered under the high flame until all the liquid evaporates or 15 minutes, whichever comes first. In halfway through open the lid and give a stir to avoid burning.

- Add some salt and tomato sauce. Give a good mix until all combined under low flame.
- Finally, switch off the flame and add the lime juice. Give one last good mix.

- Have all the ingredients ready. Cut the chicken to the required size and place them in a bowl. Place chicken in a bowl, add turmeric, chilli powder, salt(1/2 teaspoon) and combine. set aside for 15 minutes. Place a shallow skillet or pan over medium heat, pour in 1/4 cup oil into the pan, let the oil heat slightly and shallow fry the chicken until they turn golden brown on the edges.
