6 tablespoons unsalted butter, at room temperature
1/2 cup granulated sugar
1 tablespoon grated lemon zest
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup shelled pistachios, roasted and coarsely chopped
2 cups sifted powdered sugar
1 teaspoon grated lemon zest
1/4 cup lemon juice

Steps:

  • Preheat an oven to 375°F In a large bowl, beat the butter, sugar, and lemon zest until well blended. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. In a small bowl, combine the flour, baking powder, and salt. Add to the butter mixture and blend thoroughly. Stir in the nuts. The dough will be soft.
  • On a lightly floured work surface, divide the dough in half. Lightly flour each piece and shape it into a log about 1 1/2" in diameter and 9" long. Place the logs about 3" apart on an ungreased baking sheet. Press each log down to make it about 3/4" thick and 3" wide. Bake until puffed and lightly browned on top, about 20 minutes.
  • Cool 10 minutes on the pan, then slide the logs onto a work surface. Using a long, sharp knife, cut each log crosswise into 3/4" thick slices. Make each cut with a single swipe of the blade. Don't use a sawing motion, which will break the cookies. Place the cookies, cut side down, on the baking sheet. (The cookies can be touching.) Bake 10 minutes.
  • Remove from the oven and, using tongs, turn each cookie over. Bake until the biscotti are golden, 10 minutes more. Transfer to wire racks to cool completely.
  • To make the icing: in a small bowl, combine the powdered sugar, lemon zest, and lemon juice and beat until smooth. Beat in additional drops of lemon juice if necessary to make an icing that will coat the biscotti lightly. Dip one end of each biscotti in the icing, turning to coat the tip evenly. Place on a wire rack until the icing sets.

½ cup vegetable oil
1 cup white sugar
3 ¼ cups all-purpose flour
3 eggs
1 tablespoon baking powder
1 tablespoon anise extract, or 3 drops anise oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper.
  • In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into two pieces. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2 inch thickness.
  • Bake for 25 to 30 minutes in the preheated oven, until golden brown. Remove from the baking sheet to cool on a wire rack. When The cookies are cool enough to handle, slice each one crosswise into 1/2 inch slices. Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side. Slices should be lightly toasted.

1 1/2 cups unsweetened coconut flakes
1 cup granulated sugar
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup coconut oil
1 teaspoon pure vanilla extract
1/2 cup salted macadamia nuts, chopped
1 cup confectioners' sugar
2 tablespoons coconut cream
1/8 to 1/4 teaspoon coconut extract
Coarse sugar, for decorating

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Spread 1 cup coconut flakes on a baking sheet and bake until toasted, about 3 minutes. Let cool completely. Transfer to a food processor; add the granulated sugar and pulse until finely ground. Line 2 baking sheets with parchment paper.
  • Whisk the coconut-sugar mixture, the flour, baking powder, baking soda and salt in a bowl. Melt the coconut oil in the microwave; add to the flour mixture along with the vanilla and 1/3 cup water and mix with a wooden spoon until a stiff dough forms. Stir in the macadamia nuts and the remaining 1/2 cup coconut flakes; gently knead until the dough comes together.
  • Divide the dough in half and shape into two 9-by-2-inch logs; place 1 log on each baking sheet. Bake, switching the pans halfway through, until the logs are firm and golden, about 25 minutes. Reduce the oven temperature to 300 degrees F.
  • Let the logs cool 10 minutes, then transfer to a cutting board; slice diagonally with a serrated knife into 3/4-inch-thick pieces. Arrange the slices cut-side down on the baking sheets. Bake, flipping halfway through, until just golden and the centers still have a little give, 20 to 25 minutes. Let cool completely on the baking sheets. (The biscotti will crisp as they cool.)
  • Whisk the confectioners' sugar, coconut cream and coconut extract until smooth. Dip the biscotti in the glaze; sprinkle with coarse sugar.

½ cup butter, softened
1 teaspoon coconut extract
2 eggs
3 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup flaked coconut
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the sugar and butter. Stir in the coconut extract and the eggs. Combine the flour, baking powder, and salt, stir into the creamed mixture. Finally, fold in the coconut and walnuts.
  • Divide dough into 2 pieces. Roll each piece out into a log about 10 inches long. Place them on an unprepared cookie sheet and flatten them until they are about 3 inches wide.
  • Bake for 30 to 35 minutes in the preheated oven, until firm. Cool on baking sheet for 10 to 15 minutes.
  • Slice the logs crosswise into 1/2 inch wide slices. Place slices cut side down onto the baking sheet.
  • Return to the oven for an additional 15 minutes, until crisp and light brown. Cool and store in an airtight container.

2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 extra large eggs
1 cup sugar
1/2 cup vegetable oil
2 teaspoons almond extract or 2 teaspoons vanilla extract
1 1/3 cups blanched slivered almonds, toasted

Steps:

  • Preheat oven to 350 F with rack in center. Line a baking sheet with parchment paper or aluminum foil. Set aside.
  • Sift the flour, baking powder and salt into a medium bowl. Set aside. Place the eggs and sugar in a large mixing bowl and beat on high until fluffy and light, about 2 minutes. Add the vegetable oil and almond extract, and beat until the oil is incorporated and the mixture is thick and smooth, about 1 minute. Reduce mixer to low and beat in the flour mixture. The dough will be quite thick. Knead in the nuts.
  • Turn the dough out onto a lightly floured surface. Flour your fingers and divide the dough in half. Transfer one portion of the dough to one long side of the prepared baking sheet and mold it into a smooth log 14 inches long, 2 1/2 inches wide and 3/4 inch high. Repeat the process with the second piece of dough, and place it 2 inches away from the first log.
  • Bake for 30 minutes until light brown and slightly puffed. Remove pan from oven, but do not turn it off.
  • Using a serrated knife, carefully cut the logs in 3/4-inch slices on a slight diagonal. Take care not to tear the parchment or silicone pan liner. Arrange the slices, standing upright, on the baking sheet leaving 1 inch between cookies. Return to the oven and bake 10 minutes longer, until the cut surfaces of the cookie have browned slightly and the biscotti are dry to the touch. Transfer to wire rack and cool completely.
  • Melt 8 ounces of bittersweet chocolate with 6 tablespoons unsalted butter in the microwave. Scrape the chocolate onto a shallow plate and dip one long flat side of each cookie in the chocolate so it comes halfway up the sides. Place each dipped cookie on a wire rack, uncoated side down. Let the chocolate set.

Dough:
3 cups all purpose flour
1½ teaspoons baking powder
½ teaspoon salt
8 tablespoons (1 stick) unsalted butter, softened
¾ cup sugar
3 eggs, room temperature
2 teaspoons vanilla extract
1 cup shredded sweetened coconut
¾ cup miniature chocolate chips
Topping:
½ cup sugar
2 teaspoons ground cinnamon

Steps:

  • For the dough:
  • Preheat oven to 350°. Line 2 baking sheets with parchment paper and set aside.
  • Whisk flour, baking powder and salt together. Set aside.
  • Cream butter and sugar together in large mixing bowl, scraping bowl down periodically. Add eggs, one at a time. Blend in vanilla.
  • Mix in dry ingredients. Lastly, add coconut and chocolate chips.
  • Divide dough between two baking sheets. Shape into two logs that are 1" high and just under 3" wide, one per baking sheet. The length will depend on the amount of dough on each baking sheet.
  • Bake at 350° for 20 minutes. Remove from oven and cool on baking rack for 20 minutes.
  • For the topping:
  • Stir together sugar and cinnamon in a bowl.
  • After 20 minutes, use two spatulas to transfer each loaf to cutting board. Slice into ¾" slices. Return slices back to parchment covered baking sheet.
  • Roll each slice in cinnamon/sugar mixture and return back to baking sheets.
  • Bake at 350° for 15 minutes. Remove from oven and use a metal spatula to turn biscotti over. Return to oven, rotating the pans front to back and side to side. Bake at 350° for an additional 15 minutes, until biscotti are golden brown.
  • Remove from oven and eat hot, warm or cold.
