Categories     appetizer

Time 25m

Yield 6 servings

Number Of Ingredients 9

6 dozen fresh clams (littlenecks or middlenecks, your choice)
3 tablespoons grapeseed oil
4 cloves garlic, chopped
1 large onion, chopped
1 cup white wine
2 cups clam juice or water
Chopped parsley leaves
Salt and pepper
1/2 cup melted butter (1 stick)

Steps:

  • Wash the clams thoroughly and remove any blemishes. They should have no odor. Heat oil in a large saucepan (with a cover) over medium heat and cook garlic and onion until translucent. Add the wine and let cook for a couple of minutes to combine the flavors. Add the clams and clam juice (or water) and cover the pan for about 10 minutes until the clams open. Discard any clams that do not open and remove clams to serving bowls. Season the juices in the pan with salt and pepper to make a sauce. Pour the sauce and melted butter over the clams.

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 11

1/4 cup olive oil
5 garlic cloves, minced
1 bay leaf
1 teaspoon dried crushed red pepper
1 cup dry white wine
1 (28-ounce) can diced tomatoes
24 small Littleneck clams (about 2 1/2 pounds total), scrubbed
24 mussels (about 1 1/2 pounds total), debearded
20 large shrimp (about 1 pound), peeled, deveined, butterflied
1/2 cup torn fresh basil leaves
Warm crusty bread

Steps:

  • Heat the oil in a heavy large pot over medium heat. Add the garlic, bay leaf, and crushed red pepper. Saute until the garlic is tender, about 1 minute. Add the wine and bring to a boil. Add the tomatoes. Bring to a simmer. Simmer until the tomatoes begin to break down and the flavors blend, about 5 minutes. Stir in the clams. Cover and cook for 5 minutes. Stir in the mussels. Cover and cook until the clams and mussels open, about 5 minutes longer.
  • Using a tongs, transfer the opened shellfish to serving bowls (discard any shellfish that do not open). Add the shrimp and basil to the simmering tomato broth. Simmer until the shrimp are just cooked through, about 1 1/2 minutes. Divide the shrimp and tomato broth among the bowls. Serve with the warm bread.

Categories     Stew

Time 50m

Yield 6 serving(s)

Number Of Ingredients 15

2 tablespoons extra virgin olive oil
1/2 lb kielbasa (sliced)
3 cups potatoes (chopped)
1 medium onion (chopped)
2 celery ribs (chopped)
1 bay leaf
3 garlic cloves (finely minced)
5 -6 sprigs fresh thyme
1/4 teaspoon black pepper
1 lb large shrimp, peeled and deveined
1 tablespoon seafood seasoning (I use old bay)
2 ears corn on the cob (cut in thirds)
2 diced tomatoes (roasted on a pan until skins are black before chopping)
4 cups chicken stock
2 dozen littleneck clams

Steps:

  • Heat a large soup pot with extra-virgin olive oil over medium-high heat. Add the kielbasa and brown for 2 minutes; add the potatoes, onions, celery, bay, thyme, and pepper and let the veggies soften up 10 minutes, stirring occasionally. Next add the garlic and the corn and stir to combine.
  • Add the tomatoes and stock to the pot. Cover and bring to a boil. Cook for 8 minutes.
  • Pat shrimp dry and toss with a rounded tablespoon of seafood seasoning. Add the shrimp and clams and replace the cover.
  • Cook until shrimp are pink and firm and the clams have opened up, 7 minutes. (During the cooking time I tend to leave the temperature on medium high so that the soup continues at a rapid boil.).

  • Stuffed Clams With Bacon. To make sophisticated "deviled" stuffed clams as an appetizer, remove clams from shells, mince the meat, and pan-saute with diced onion and green bell pepper.
  • Japanese Clam Soup. Short-neck clams (called asari in Japan) are packed with flavor and require little seasoning. Cook them simply in the Japanese style by boiling in hot water until shells open, allowing the clams' natural liquor to meld with the water and create a wonderfully aromatic, clear broth.
  • Deep-Fried Clams. Fried clams with a well-seasoned cracker crumb coating are delicious and easy to make at home, with no deep-fryer required. Use a high-sided Dutch oven to fry fresh shucked clams, or canned whole baby clams, allowing to drain on paper towels before serving hot, with lemon wedges alongside for squeezing.
