STIR-FRIED CHICKEN WITH RADISHES, CHIPOTLES, AND LIME

Steps:
- Combine chicken, 1 1/2 tablespoons lime juice, and crushed chipotles in large bowl. Sprinkle with salt and pepper; toss to blend. Let stand 10 minutes. Heat 4 teaspoons oil in large nonstick skillet over high heat. Add chicken mixture and sauté 3 minutes. Stir in green onions and broth; cover and cook 3 minutes. Uncover and stir until chicken is cooked through and most liquid evaporates, about 2 minutes longer. Stir in 1 1/2 tablespoons lime juice. Season to taste with salt and pepper. Transfer to bowl; cover to keep warm.
- Heat remaining 2 teaspoons oil in same skillet over high heat. Add radishes and sauté 1 minute. Stir in remaining 1 tablespoon lime juice. Season with salt and pepper. Add radishes and cilantro to bowl with chicken and toss to blend.
- Divide chicken mixture among 6 plates. Sprinkle with reserved sliced radish leaves. Garnish with lime wedges. Serve hot tortillas alongside.
- *Crushed chipotle chilies (dried smoked jalapeño chilies) are available in the spice section of some supermarkets.
FRESH LIME CHICKEN STIR-FRY

Steps:
- Cut chicken into 1/2-inch bite-size strips.
- Slice onion into thin wedges.
- Peel and cut carrots lengthwise, then slice on the diagonal,.
- Core and seed pepper, then cut thin julienne strips.
- Finely grate peel from half a lime. Squeeze out 3 tablespoons juice from the limes.
- Heat oil in wok or large frying pan set over high hear. Add chicken, garlic, ginger, and chili flakes. Stir-fry until chicken is golden, about 3-4 minutes.
- Add onion, carrots, and soy sauce. Stir-fry for 2 more minutes.
- Add peppers, lime juice and peel, then stir-fry until pepper is tender-crisp, about 2 minutes. Great over noodles.

CHIPOTLE LIME CHICKEN STIR FRY
I created this stir fry when my husband was on a chipotle kick. It is healthy with lean protien, fiber, and veggies. I've substituted baby corns for the canned corn with success as well. You could use fresh jalapenos instead of the canned chilis too! Make it as hot as you want with the chipotle pepper!

- Spray a short burst of non-stick olive oil in a large skillet.
- In a medium bowl, combine corn, beans, chilis, tomatoes, and seasonings.
- Cut lime and save 2 quarters for garnish. Squeeze the rest into the bowl and mix.
- Cook chicken until almost done. Add other ingredients and stir fry until it bubbles, then simmer until evenly hot.
- Serve over greens, chips, tortillas. Garnish with lime and cilantro, and cheese and sour cream if you wish.

- In a medium size bowl, mix together the olive oil, lime juice, soy sauce, cilantro, chipotle chili powder, minced garlic, honey, and salt until well combined.
- Set about 1/2 cup of the marinade aside.
- Place the chicken breasts in the marinade and let soak for about 2-6 hours in the refrigerator.
- Heat grill to medium-high heat, and place chicken on.
- Baste grilling chicken with the half cup of marinade that was set aside.
- Grill until the chicken is done all the way through, and the outsides are dark golden brown.

- Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas).
- While coals are lighting, stir together lime juice, oil, Tabasco, and salt in a liquid-measuring cup. Put chicken in a large sealable bag and add 1/3 cup marinade (reserve remainder in cup). Seal bag, forcing out excess air, and marinate chicken at room temperature, about 15 minutes. Stir honey into remaining marinade until dissolved to make sauce.
- Grill chicken (discarding marinade in bag) on lightly oiled grill rack, covered only if using a gas grill, turning chicken over occasionally and moving it to avoid flare-ups if necessary, until just cooked through, 8 to 10 minutes total.
- Brush both sides of chicken with some of reserved sauce, then continue to grill, turning over once, until lightly browned, about 1 minute more. Serve chicken drizzled with remaining sauce.
HACKED CHIPOTLE-CHICKEN-SALAD SANDWICHES

- Season chicken with salt; place in a saucepan just large enough to fit it snugly in a single layer. Add broth and enough water to cover chicken by 1 inch. Bring to a simmer over medium-high heat, then reduce heat to medium-low and cook at a bare simmer (tiny, sporadic bubbles slowly rising to the surface) until a thermometer inserted into thickest part of breast reads 160°F, 15 to 18 minutes. Transfer to a cutting board and let cool until slightly warm, about 30 minutes. Strain and reserve broth for another use.
- Meanwhile, in a medium bowl, stir together mayonnaise, chipotle, lime zest, onion, and cilantro. In a small bowl, combine radishes, lime juice, vinegar, sugar, and a generous pinch of salt. Let stand, stirring a few times, 5 minutes. Drain radishes, reserving vinegar mixture.
- Remove and discard skin and bones from chicken. Carve chicken against the grain into 1/2-inch slices. With a large, heavy knife (such as a cleaver or chef's knife), hack chicken into bite-size pieces with a brisk chopping motion. Transfer to bowl with mayonnaise mixture, along with 2 tablespoons reserved vinegar mixture; stir to combine and season with salt and pepper. Sandwich chicken salad in buns with lettuce, avocado, and pickled radishes; serve.
