EASY STRAWBERRY SPINACH SALAD RECIPE WITH POPPY SEED DRESSING

Steps:

• Combine the spinach, strawberries, goat cheese, and almonds in a large bowl.
• Whisk together all dressing ingredients until smooth (dressing can be made in advance). Thin out the dressing with water or additional oil if desired. Drizzle over the salad and toss to serve.

ZUCCHINI-BLACKBERRY SALAD

Steps:

• Shave 5 zucchini into ribbons with a vegetable peeler, discarding the core. Toss with 1/2 teaspoon kosher salt in a colander and let drain, 30 minutes. Smash 6 ounces blackberries in a large bowl. Stir in 1/4 cup olive oil, 4 teaspoons each honey and lemon juice and 1 red Fresno chile (1/2 finely chopped, 1/2 sliced); season with salt. Squeeze the liquid from the zucchini; add the zucchini to the berry mixture and toss. Season with salt and pepper. Transfer to a platter; top with chopped chives.

Steps:

• Preheat oven to 375 degrees F (190 degrees C). Prepare 12 muffin cups with liners.
• Mix 6 tablespoons flour and brown sugar together in a bowl for topping; cut butter into the flour mixture until you have pea-sized crumbs. Set aside.
• Beat margarine and white sugar with an electric mixer in a large bowl until light and fluffy. Beat egg and vanilla into the butter mixture.
• Mix 1 1/2 cups flour, baking powder, baking soda, and salt together in a separate bowl; gradually beat into the butter mixture. Fold zucchini, cranberries, and walnuts into the mixture; spoon into prepared muffin cups, filling nearly to the top. Sprinkle reserved topping mixture onto the batter.
• Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.

STRAWBERRY CRANBERRY SALAD

Steps:

• Open and drain all liquid from pineapple.
• In casserole dish fix Jell-o with hot water only, stir until dissolved.
• Add can of cranberry sauce (I use a whisk to help break it up and remove from can).
• Gently stir until thoroughly mixed.
• Add pineapple, stir.
• Cut whole strawberries into halves or quarters, gently stir berries into jell-o mixture.
• Cover and refrigerate until set, usually a few hours.
• As salad sets out some watering effect will occur, but not harmful.
• Cooking time is refrigeration time.
